Posted for Zaar World Tour 2005. A vegetarian Salade Nicoise with pasta. In France, this salad is only served in spring and summer, so use the freshest vegetables you can find. Pasta cooks with potatoes and beans, which makes it easy and fast. From Vegetarian Times Cooks Mediterranean. Have not made this yet.

Number Of Ingredients 11

1 lb green beans, cut into 1 inch lengths (about 4 cups)
1 lb red potatoes, cut into 1 inch pieces (about 3 cups)
1 lb penne pasta
2 tablespoons olive oil
1 medium yellow onion, thinly sliced
2 garlic cloves, minced
1 lb plum tomato, ripe, chopped (about 3 cups)
1 cup kalamata olive, pitted and chopped
2 tablespoons balsamic vinegar
1/2 teaspoon fresh ground black pepper
salt, to taste

Steps:

  • Bring large pot of salted water to boil and add green beans and potatoes. Return to boil and add pasta. Cook, stirring occasionally, until the pasta is al dente, about 11 minutes or according to package directions.
  • Meanwhile, in small skillet heat the olive oil over medium heat. Add onion and garlic and cook, stirring often, until onion is soft, about 5 minutes.
  • Remove from heat and stir in tomatoes and olives and set aside.
  • Drain the pasta, beans and potatoes, reserving 1/2 cup of pasta water. Transfer to serving bowl. Add the tomato mixture, vinegar, pepper and salt and toss to mix.
  • If pasta seems too dry add reserved pasta water as needed, a little at a time.

This quick and easy pasta and tuna dish brings summer flavours to your tastebuds all year round

300g green beans
350g penne
3 tbsp olive oil
2 fat garlic cloves , chopped
70g can anchovies , drained and chopped
400g cherry tomatoes , halved
handful black olives , stoned
160g can tuna , drained
juice 1 lemon
handful basil leaves

Steps:

  • Trim the beans and cut in half. Bring a large pan of water to the boil and add 1 tsp salt. Add the penne, bring to the boil and cook following pack instructions. Throw in the beans 5 mins before the end of the cooking time.
  • Meanwhile, heat the oil in a frying pan, add the garlic and anchovies, and fry gently for a couple of mins, stirring to dissolve the anchovies in the oil. Add the tomatoes and cook for a few mins until softened but not pulpy.
  • Drain the pasta and return to the pan, then add the tomato sauce and olives. Flake in the tuna and add the lemon juice and basil. Heat through and serve.

A great, flavorful pasta dish for the summertime when you don't want something heavy.

1 tablespoon olive oil
1 clove garlic, crushed
2 cups broccoli florets
1 medium carrot, julienned
2 cups vegetable broth
1 (8 ounce) package penne pasta
½ cup frozen peas
½ cup freshly grated Parmesan cheese

Steps:

  • Heat the olive oil and garlic in a large skillet over medium heat. When garlic is tender, remove from skillet and set aside. Place the broccoli and carrot in the skillet, and cook 2 minutes, just until heated through.
  • In a pot, bring the vegetable broth to a boil. Stir in the penne pasta and heated crushed garlic clove. Cook for 5 minutes, or until pasta is almost al dente. Remove and discard garlic clove.
  • Transfer the partially cooked pasta and broth to the skillet. Mix in the peas. Cover skillet, and continue cooking 10 minutes over medium heat, or until pasta is al dente and vegetables are tender. Toss with the Parmesan cheese to serve.

1 (16 ounce) package penne pasta
2 tablespoons olive oil
¼ cup chopped red onion
1 tablespoon chopped garlic
¼ cup white wine
2 (14.5 ounce) cans diced tomatoes
1 pound shrimp, peeled and deveined
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat the oil in a skillet over medium heat. Stir in onion and garlic, and cook until onion is tender. Mix in wine and tomatoes, and continue cooking 10 minutes, stirring occasionally.
  • Mix shrimp into the skillet, and cook 5 minutes, or until opaque. Toss with pasta and top with Parmesan cheese to serve.

Remember doing this salad as a beginner in the kitchen and this is the idea for a salad that is a whole meal. It's curried alright, but I think it is a good one.

200 g potatoes (boiled and cubed)
100 g green beans (blanched)
100 g red peppers (roasted)
200 g tuna fish (fresh)
100 g black olives (pitted)
100 g yellow peppers (roasted)
100 g green peppers (roasted)
200 g green beans (blanched)
6 eggs (boiled, sliced)
1 teaspoon sesame oil
1/4 teaspoon sesame seeds
1/2 tablespoon honey
1 tablespoon balsamic vinegar
1 teaspoon sugar
2 tablespoons extra virgin olive oil
2 bunches cilantro
60 g walnuts (toasted)
20 g parmesan cheese (grated)
2 red chilies (finely chopped)
10 ml tamarind paste
1/4 teaspoon turmeric
1/4 teaspoon chili powder
1/4 teaspoon cracked peppercorn
1/4 teaspoon coriander powder
1/4 teaspoon cumin powder
2 lemons, juice of
1/2 cup fresh basil (washed and soaked in cold water)
salt

Steps:

  • Marinate fillet of tuna in lemon juice, salt, turmeric, chili powder, coriander powder, cracked pepper corns and cumin powder.
  • Grind together in a mixer cilantro, walnuts, chilies and olive oil to make a pesto.
  • Mix potatoes with pesto and set aside.
  • Mix blanched green beans with honey, sesame oil and sesame seeds; set aside.
  • Peel roasted peppers and cut into strips; marinade with balsamic vinegar, salt and sugar.
  • In a hot pan heat 1 tbsp of oil and sear season tuna on all sides leaving the center cold and rare.
  • On a plate place the potato salad in the center; arrange green beans and peppers on top.
  • Slice the tuna thinly and arrange on top of the vegetables.
  • Allow 4 slices per person.
  • Top with sliced boiled eggs and throw olives around the salad.
  • It is good looking and makes a good impression on the guests.
