4 cups uncooked whole wheat penne pasta
1 medium onion, chopped
2 teaspoons olive oil
4 garlic cloves, minced
1 can (15 ounces) crushed tomatoes
1 can (8 ounces) tomato sauce
3 tablespoons minced fresh parsley or 1 tablespoon dried parsley flakes
1 teaspoon dried oregano
1 teaspoon dried rosemary, crushed
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1-1/2 cups 2% cottage cheese
1-1/4 cups shredded part-skim mozzarella cheese, divided
1 cup part-skim ricotta cheese
1/4 cup grated Parmesan cheese

Steps:

  • Cook penne according to package directions., Meanwhile, in a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, tomato sauce, parsley, oregano, rosemary, pepper flakes and pepper. Bring to a boil. Remove from the heat; cool for 15 minutes., Preheat oven to 400°. Drain penne; add to sauce. Stir in cottage cheese, 1/2 cup mozzarella and all of the ricotta. Transfer to a 13x9-in. baking dish coated with cooking spray. Top with Parmesan cheese and remaining mozzarella., Bake, uncovered, 20-25 minutes or until bubbly.

1 medium onion, chopped
2 1/2 cups (8 oz) penne pasta, cooked and drained
3/4 teaspoon salt
1/4 teaspoon pepper
1 jar (24 oz) chunky vegetable pasta sauce
1 cup ricotta cheese
1 egg
2 cups shredded mozzarella or Italian cheese blend (8 oz)

Steps:

  • Heat oven to 350°F. In 5-quart Dutch oven, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in cooked pasta, salt, pepper and pasta sauce.
  • In medium bowl, mix ricotta cheese, egg and 3/4 cup of the mozzarella cheese. Spray 13x9-inch baking dish with cooking spray.
  • Spoon half of pasta mixture (about 3 1/2 cups) into bottom of baking dish. Spoon ricotta mixture evenly over pasta mixture in baking dish. Top with remaining pasta mixture; sprinkle with remaining 1 1/4 cups cheese.
  • Spray piece of foil large enough to cover baking dish with cooking spray. Cover baking dish with foil, sprayed side down. Bake 35 to 40 minutes or until heated through and cheese is melted.
  • To Make Ahead: Wrap foil-covered casserole in double layer of plastic wrap; label and freeze up to 3 months. To thaw and bake: Thaw overnight or until completely thawed in refrigerator. Remove plastic. Bake 50 to 60 minutes or until center is hot (165°F) and cheese is melted. To bake from freezer (no thawing): Heat oven to 350°F. Remove plastic. Bake 1 hour 20 minutes to 1 hour 30 minutes or until center is hot (165°F) and cheese is melted.

1 tablespoon olive oil
1 pound lean ground beef ((may use 1/2 sausage))
salt and pepper
1/2 teaspoon red pepper flakes
1 yellow onion, diced
2 medium carrots, peeled and thinly sliced
1 red bell pepper, chopped
6-8 garlic cloves, minced
1 28 oz. can crushed tomatoes in puree
1 15 oz. can fire roasted tomatoes with seasonings, drained
1 tablespoon tomato paste
1 1/2 tsp EACH chicken bouillon, sugar, dried basil
1/2 tsp EACH dried oregano, dried parsley
3 cups water
12 ounces uncooked penne ((about 3 1/2 cups))
1/2 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1/2 cup freshly grated sharp cheddar cheese
1 cup freshly grated mozzarella cheese

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick, oven proof skillet or Dutch oven over medium high heat. Add meat and season with 1/2 teaspoon salt, 1/2 teaspoon pepper and 1/2 teaspoon red pepper flakes. Add onions and carrots and cook until meat is browned.
  • Add bell pepper and garlic and cook for 1 minute. Stir in crushed tomatoes, fire roasted tomatoes, tomato paste, chicken bouillon, sugar, and all seasonings and bring to a simmer. Simmer gently uncovered for 10 minutes, stirring occasionally.
  • After 10 minutes, stir in the water and pasta. Cover, increase heat to medium-high and cook at a vigorous simmer (you may need to decrease heat), stirring occasionally and replacing lid, just until the pasta is al dente, 12-16 minutes. Taste pasta often as reaches the end of cooking to ensure you don't overcook your pasta.
  • Stir in the cream, Parmesan, and cheddar until well combined. Top the pasta evenly with mozzarella. Transfer the skillet to the oven (on the middle rack) and broil until the cheese is melted and golden, 2-3 minutes. Let sit at least 5 minutes before serving.
  • This makes wonderful leftovers - I think the flavors are even better the next day!

This is my version of the classic macaroni and cheese Xea's grandmother makes. Older kids can easily make this by themselves. Add a big green salad and they can have dinner ready before you get home from work!

1 pound penne rigate pasta
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon freshly ground black pepper
1/2 pound shredded whole-milk mozzarella cheese
1/2 pound shredded Cheddar cheese
1/2 cup shredded Parmigiano-Reggiano cheese
1/2 cup dried breadcrumbs (preferably panko)

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare the penne rigate according to the package directions, minus 1 or 2 minutes of cooking time (see Cook's Note). Drain, then pour the pasta into a 9-by-13-inch glass baking pan.
  • In a 4-quart saucepan, melt the butter on medium-low heat. Whisk in the flour until it's dissolved. Add the cream to the saucepan. Add the nutmeg, seasoned salt, and black pepper and whisk the mixture until it's warmed through.
  • Reduce the heat to low, and add the mozzarella, Cheddar, and Parmigiano-Reggiano. Stir until you have a smooth cheese sauce.
  • Pour the sauce over the pasta and top with the breadcrumbs.
  • Bake for about 40 minutes, until the top turns a golden brown.

1 (16 ounce) box penne pasta
6 slices bacon
1 cup panko bread crumbs
¼ cup butter, melted
2 tablespoons chopped fresh parsley
3 tablespoons olive oil
6 cloves garlic, finely chopped
3 shallots, finely chopped
2 tablespoons all-purpose flour
4 cups heavy cream
1 teaspoon chopped fresh thyme
1 cup shredded Monterey Jack cheese
2 cups shredded sharp Cheddar cheese
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, and reserve the remaining bacon drippings in a small bowl. Crumble the bacon into a bowl, then mix in the panko bread crumbs, butter, and chopped parsley. Set aside.
  • Heat the olive oil in a skillet over medium heat. Stir in the garlic and shallots; cook and stir until the shallots have softened and turned translucent, about 5 minutes. Stir in the bacon drippings and flour. Cook and stir for 1 minute, then whisk in the heavy cream and thyme. Continue to cook and stir until reduced by 1/3. Add Monterey Jack cheese and Cheddar cheese, stirring until cheeses have melted. Season with salt and pepper. Stir in the penne pasta. Transfer the pasta mixture to a 9x13-inch baking dish. Sprinkle with the bread crumb mixture.
  • Bake in the preheated oven until bread crumbs have browned and the sauce is bubbly, about 25 minutes.

1 (24-oz) jar marinara sauce
½ cup sour cream
6 oz sliced Provolone
4 oz shredded or sliced Mozzarella
¼ cup grated Parmesan
chopped parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain.
  • Meanwhile, in a large skillet, brown the ground beef. Add the onion and cook until softened. Add the spaghetti sauce and allow to simmer for 15 minutes. Stir in the sour cream. Add the drained pasta and stir to coat.
  • Preheat the oven to 350F. Spray a 2 quart baking dish with nonstick cooking spray. Pour half of the pasta into the baking dish. Top with half of the Provolone and half of the Mozzarella. A very cheesy and easy to make family dish, with in-your-cupboard ingredients.

Number Of Ingredients 9

Olive oil
500g penne (or macaroni)
1 tbsp butter
1/4 cup plain flour
1/2 tsp hot English mustard
1/4 tsp hot paprika
Approx. 400 ml milk
Plenty of cheese
Salt and pepper

Steps:

  • Cook the pasta in some water with a touch of oil.
  • Whilst the pasta is cooking, make the cheese sauce. First melt the butter in a small saucepan. Then take off the heat and add flour, mustard, paprika and salt and pepper. Stir with a metal spoon and put back on the heat.
  • Turn the heat up and stirring constantly, gradually add the milk to the flour mixture and take off the heat once boiling.
  • Add a few handfuls of cheese. Keep tasting the sauce to know how much to add. Put back on a gentle heat.
  • Strain the pasta and add the cheese. Mix well and put into a casserole dish. Put the remaining cheese on top. Grill til brown and serve with more seasoning if required.
