Healthy Penne alla Vodka is a low fat spin on traditional vodka sauce. It is creamy, flavorful, and takes less than an hour to make. A hot batch of penne with creamy tomato sauce is the perfect meal for a weeknight or date night at home. Top each bowl with fresh basil ribbons and grated cheese and pair with a glass of wine for an impressive home cooked meal.

1 lb penne pasta
1 medium onion (finely chopped)
3 cloves garlic (minced)
2 tbsp olive oil
1 tbsp butter
½ tsp dried oregano
½ tsp dried basil
½ tsp crushed red pepper flakes
½ cup vodka
1 tsp Kosher salt
½ tsp Fresh ground pepper
1 28 oz can of tomatoes
½ cup Greek yogurt
Handful of fresh basil cut into ribbons
¼ cup of Parmigiano-Reggiano (plus more for serving)

Steps:

  • In a medium pot or dutch oven, heat olive oil and butter on medium heat. Add onions and garlic and cook uncovered for 5 minutes until the onions are translucent. Stir in dried oregano, dried basil, and red chili flakes and cook for 1-2 minutes.
  • Stir in vodka and simmer for about 7 minutes until the alcohol cooks off. While the vodka cooks, add tomatoes to a blender with salt and pepper, then puree for 1-2 minutes. Add pureed tomatoes to the pot and stir. Cook covered on low heat for 30 minutes.
  • While the sauce is cooking, bring 5 quarts of salted water to a boil. Add the penne to the water and stir occasionally. Cook until al dente, about 10 minutes. Drain the pasta and set aside.
  • Once the sauce is cooked, stir in 1/4 cup of Parmigiano-Reggiano and Greek yogurt until it becomes creamy and pink. Add salt and pepper to taste and half of the basil. Add the pasta to the sauce and gently stir to combine.
  • Serve in bowls and sprinkle additional basil and Parmigiano-Reggiano or parmesan cheese on each serving.

1 1/2 tablespoons olive oil
1 onion, diced
1 (14 ounce) can crushed tomatoes (or other canned tomatoes, pureed in a food processor)
1/4 teaspoon dried oregano
1/4 cup fresh basil leaves, sliced or 1/4 teaspoon dried basil leaves
1/4 teaspoon salt
1/4 teaspoon black pepper
8 ounces fresh white mushrooms, sliced, about 3 cups
1/8 teaspoon crushed red pepper flakes
2 tablespoons tomato paste
1/4 cup vodka
1 cup nonfat milk or 1 cup fat-free half-and-half
3/4 lb whole wheat penne or 3/4 lb whole wheat rigatoni
1/8 cup dry parmesan cheese
fresh basil, sliced, to garnish

Steps:

  • Heat 2 teaspoons of oil over medium to medium high heat in a large saucepan. Saute onion until starting to brown, about 5-6 minutes.
  • Add crushed tomatoes, oregano, basil, salt, and pepper. Simmer on low to medium low heat for 10 minutes.
  • During this time, heat 1 teaspoon of oil in a large saucepan over medium high heat. Saute the mushrooms and hot pepper flakes about 5 minutes. Reserve pan.
  • Add tomato paste to tomato sauce and mix well. Stir in vodka and mushrooms and simmer for 10 more minutes.
  • Start water to boil for pasta.
  • Add milk to sauce and incorporate well. Cook another 20-30 minutes, stirring occasionally. Keep sauce at a low simmer while cooking pasta.
  • Cook whole wheat pasta until al dente, about 15 minutes. Drain pasta.
  • Heat 1/2 tablespoon of oil in a large skillet (you can use the same pan you cooked the mushrooms in). Add pasta and stir to glaze. Add parmesan cheese and mix thoroughly. Stir in sauce. Garnish with basil, and serve.

1 (28 oz) can San Marzano tomatoes, (crushed finely with hands*)
2 Tbsp extra virgin olive oil
1/2 cup minced yellow onion
3 oz. proscuitto (or pancetta, diced (optional))
1 Tbsp minced garlic ((3 cloves))
Salt and freshly ground black pepper
1/2 cup vodka
1/4 tsp red pepper flakes, (more or less to taste)
2/3 cup heavy cream
1/4 cup finely shredded parmesan cheese, (plus more for serving)
1 Tbsp chopped fresh oregano
1/4 cup chopped fresh basil
14 oz. penne pasta, (plus reserved pasta water for thinning sauce as needed)

Steps:

  • Bring a pot of water to a boil to cook pasta. Season water with salt.
  • Heat oil in a large pot over medium heat. Add onion and prosciutto saute 4 - 5 minutes, add garlic and red pepper flakes and saute 1 minute longer.
  • Remove pan from heat and add tomatoes, vodka, season with salt and pepper to taste. Return to medium-high heat, bring to a simmer then reduce heat to medium-low and let simmer until strong alcohol scent has cooked off, about 15 minutes**, stirring occasionally.
  • Meanwhile cook pasta according to package directions. Reserve 1/2 cup pasta water and drain pasta.
  • Stir cream into sauce and let just heat through, about 1 minute. Stir in parmesan, basil and oregano.
  • Add drained pasta to pot with sauce, toss to coat, while thinning sauce with a little pasta water as needed. Serve warm with more parmesan and garnish with more basil if desired.

This restaurant quality pasta dish is absolutely delicious. The luscious, creamy, tomatoey vodka sauce is rich, slightly spicy, with just a zing of vodka. Penne Alla Vodka became quite popular in the late 80's and is still popular today... Normally it includes real cream for richness but I'm using reduced-fat milk. Great news though, it still retains the decadent flavor of a regular recipe but with a fraction of the fat and calories. In addition, I've placed it over fiber rich whole wheat penne instead of white pasta. The key to this sauce is using a premium vodka... It adds a clean, fresh taste. A less expensive brand will give a harsh taste. This skinny pasta dish has only 347 calories, and 7 grams of fat compared to Sbarro's Penne Alla Vodka at 640 calories and 28 grams of fat. 1 (28 ounce) can whole tomatoes
1 tablespoon extra virgin olive oil
1/2 cup onion, minced
1 tablespoon tomato paste

1 cup reduced-fat milk
12 ounces whole wheat penne
6 tablespoons fresh grated parmesan cheese

Steps:

  • In a blender or food processor, puree half the canned tomatoes until smooth. Chop the remaining tomatoes into ½ inch pieces, discarding the cores.
  • In a large saucepan over medium heat, heat the olive oil. Add the onions and tomato paste and cook until the onions are light golden, about 2 minutes. Stir occasionally. Add the garlic and pepper flakes and cook for about 30 seconds.
  • Stir in the pureed and chopped tomatoes and add the salt. Remove pan from heat and mix in the vodka. Return the pan to medium heat and simmer, stirring often, until the alcohol flavor is cooked off, about 8 minutes. Lower the heat if the simmering becomes too vigorous. Stir in the milk and cook about 1 minute more until hot.
  • In the meantime, in a large pot, cook pasta according to the directions on the package. Make sure to cook al dente, not over cooked. Drain.
  • Return the drained pasta to the pot, add the cooked sauce, and mix until combined. Cook over medium heat until the pasta absorbs some of the sauce.
  • Plate each serving and top with 1 tablespoon of cheese and a little basil.

Steps:

  • Cook the pasta in salted boiling water according to package directions.

1/4 cup heavy cream
1 tablespoon olive oil
1 small shallot, minced

1/3 cup vodka
1/2 cup grated Parmesan
1/2 cup loosely packed Italian flat-leaf parsley leaves, chopped

  • Whisk the yogurt with the cream in a measuring cup and set aside.

  • In a large pan over low-medium heat add 1 tbsp olive oil and your diced onion. Gently fry to sweat down the onion until it begins to soften (important to go fairly low and slow to sweeten the onions). Add in garlic and fry for another couple of minutes, then add chilli flakes and fry for a further minute.

  • Meanwhile pour cream in to the pan and stir until the paste has completely incorporated. Allow to gently simmer for 5-10mins until the sauce begins thickening. Sprinkle in parmesan and stir until it melts. The sauce should be fairly thick at this point.
