PEGGI'S FRIED GREEN BEANS

PEGGI'S FRIED GREEN BEANS image

Hey.....I'm from the South; what more can I say? We fry everything! And...we use bacon in everything! You can use fresh, or canned green beans for this recipe & you will notice the difference over just green beans. The main picture is from fresh green beans (no mushrooms that day)& the other one is from canned green beans. They...

Provided by Peggi Anne Tebben

Categories     Vegetables

Time 35m

Number Of Ingredients 5

6-8 slices thick bacon, cut in 3/4" pieces
1/2 onion, slivered
1 can mushroom pieces, drained or a handfull of fresh ones, sliced
1 quart canned green beans or a mess of fresh ones
salt & pepper

Steps:

  • 1. Cook bacon & onions in skillet until about 1/2 of the way browned.
  • 2. Add the mushrooms & continue cooking until all is about 2/3 of the way brown. Salt & pepper this.
  • 3. Next, add the green beans & turn heat to low & cover skillet. Leave it alone for about 5 minutes & then you can stir & continue cooking until all is slightly browned.
  • 4. Remove lid & kick up the heat to medium & continue cooking until the beans are done & have a crisper brown , but not burned look. About 30 minutes total. Note: Fresh beans will take a little longer. Also, if you use canned green beans, no need to salt the green beans, but if you use fresh, you can salt them the last few minutes.

PEGGI'S LAYERED VENISON CASSEROLE

Peggi's Layered Venison Casserole image

This hearty venison casserole has a consistency similar to a venison goulash. It may not win a contest for being the prettiest dish, but it's definitely a Blue Ribbon venison recipe. If you have a supply of venison, it's a delicious way to use it. The layers of potatoes and venison have just the right amount of seasoning and...

Provided by Peggi Anne Tebben

Categories     Casseroles

Time 1h20m

Number Of Ingredients 12

1 lb ground deer burger
1 medium onion, cut into slivers
3 ribs of celery, chopped
1 Tbsp garlic powder
1 tsp celery salt
3 - 4 medium red potatoes (not white)
2 can(s) green beans, drained, 14.5 each
1 can(s) cream of mushroom soup, 10.5 oz.
1 can(s) cream of chicken soup, 10.5 oz.
1 can(s) French fried onions (optional)
6 fresh mushrooms, sliced thick
salt and pepper

Steps:

  • 1. Brown ground burger, onions & celery together.
  • 2. Add garlic powder & celery salt. Drain.
  • 3. Grease or spray a deep casserole dish. Next, slice the potatoes about 1/4' thick. Add a layer of potatoes to the bottom of the dish. Salt & pepper them.
  • 4. Next, spread 1/2 of the burger mixture on top of potatoes.
  • 5. Now, add another layer of potatoes on top of that. Salt & pepper.
  • 6. Put the remaining burger mixture on top of that.
  • 7. Drain green beans really good. Place on top of the last layer.
  • 8. Spread on sliced mushrooms next.
  • 9. Mix soups together.
  • 10. Spread on top of the last layer. Do not add any water to this, as it makes its own juice.
  • 11. Run a fork down through casserole in about 4 different places, just so soups can seep down through it.
  • 12. Cover with lid or aluminum foil. Bake at 350 degrees for about 45 minutes or until you can stick a sharp knife down through casserole and the potatoes are done.
  • 13. Then add on the French fried onions and leave uncovered.
  • 14. Bake another 15 minutes or until onions start to brown. Remove from oven and let stand, uncovered, for about 15 minutes before serving. **I serve this with homemade rye bread & it is a meal in itself.

  • Wash green beans. In a bowl, toss flour and seasonings except seasoning salt. In a second bowl, whisk eggs, milk, 2 tablespoons flour and ½ cup water.
  • Place the green beans in a large ziploc bag. Add about ¾ cup of the flour mixture and shake well to coat. Using a fork, gently lift out about 6 beans and put them into the egg mixture. Using a fork, remove them from the egg mixture and into the flour mixture in the bowl. Toss to coat. (So it's Flour. Egg. Flour.)
  • Place on a rack while coating the remaining beans. Gently tap the rack to remove excess flour before frying.
  • Heat deep fryer or a couple of inches of oil in a pan to 360-375°F. Place the beans into the deep fryer or oil in small batches for about 3-4 minutes or until browned and crispy. Be sure not to overcrowd them. Remove from oil, drain on paper towels and sprinkle with seasoning salt.
