- Toss 1 pound leftover cooked or raw green beans with 1 teaspoon salt, 1/4 teaspoon cayenne pepper and 1 cup buttermilk; soak for 15 minutes. Season 1 cup cornmeal with salt and cayenne. Dredge the green beans in the cornmeal, then deep-fry in 2 inches of 375 vegetable oil until golden brown, 2 to 3 minutes.

- Bring a pot of water to a boil; cook beans in boiling water until bright green, about 2 minutes. Immediately transfer green beans to a bowl of ice water to stop the cooking process. Drain and dry beans with paper towels.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Pour flour into a bowl. Whisk egg in a separate bowl. Pour bread crumbs into a third bowl.
- Coat green beans with flour; transfer to beaten egg and coat evenly. Press coated green beans into bread crumbs.
- Fry breaded green beans, working in batches, in the hot oil until golden brown, 3 to 5 minutes. Transfer fried beans to a paper towel-lined plate to drain.

- Place beans in the broth. Bring to a boil and cook 15 minutes, then drain and place in cold water to stop cooking process.
- Mix beaten egg with milk in a shallow bowl. Measure 1 cup of flour into another shallow bowl. Combine bread crumbs, 3/4 teaspoons salt, black pepper, onion powder and garlic powder into a third bowl.
- Take a handful of beans out of the water and shake off excess liquid. Coat the beans with the flour, shaking to remove excess flour. Dip the beans, one at a time, into egg/milk mixture, then dip in breadcrumb mixture. Place the beans on a plate until all are coated.
- Heat the shortening or oil to 350 degrees F in a heavy skillet (or use deep fryer). Use enough to cover the beans, about 1 1/2 inches. Fry until golden brown, about 1 1/2 minutes. Drain on paper towels.

- Heat a few cups of vegetable oil in a deep pot or fryer over medium-high heat.
- Pour chicken broth into a saucepan and bring to a boil over medium-high heat.
- Add the green beans and let boil for 5 minutes.
- Remove beans from broth with a slotted spoon and set in a bowl of cold water.
- After beans are cooled down, pat dry with a paper towel.
- Whisk the egg and milk together in a shallow bowl.
- In another shallow bowl, combine flour, breadcrumbs, onion powder, garlic powder, salt and pepper.
- Dip the beans into the egg mixture, followed by the flour mixture and place in hot oil, a few beans at a time. Cook for 2-3 minutes or until golden brown.

- 1. Cook bacon & onions in skillet until about 1/2 of the way browned.
- 2. Add the mushrooms & continue cooking until all is about 2/3 of the way brown. Salt & pepper this.
- 3. Next, add the green beans & turn heat to low & cover skillet. Leave it alone for about 5 minutes & then you can stir & continue cooking until all is slightly browned.
- 4. Remove lid & kick up the heat to medium & continue cooking until the beans are done & have a crisper brown , but not burned look. About 30 minutes total. Note: Fresh beans will take a little longer. Also, if you use canned green beans, no need to salt the green beans, but if you use fresh, you can salt them the last few minutes.

- 1. Brown ground burger, onions & celery together.
- 2. Add garlic powder & celery salt. Drain.
- 3. Grease or spray a deep casserole dish. Next, slice the potatoes about 1/4' thick. Add a layer of potatoes to the bottom of the dish. Salt & pepper them.
- 4. Next, spread 1/2 of the burger mixture on top of potatoes.
- 5. Now, add another layer of potatoes on top of that. Salt & pepper.
- 6. Put the remaining burger mixture on top of that.
- 7. Drain green beans really good. Place on top of the last layer.
- 8. Spread on sliced mushrooms next.
- 9. Mix soups together.
- 10. Spread on top of the last layer. Do not add any water to this, as it makes its own juice.
- 11. Run a fork down through casserole in about 4 different places, just so soups can seep down through it.
- 12. Cover with lid or aluminum foil. Bake at 350 degrees for about 45 minutes or until you can stick a sharp knife down through casserole and the potatoes are done.
- 13. Then add on the French fried onions and leave uncovered.
- 14. Bake another 15 minutes or until onions start to brown. Remove from oven and let stand, uncovered, for about 15 minutes before serving. **I serve this with homemade rye bread & it is a meal in itself.
