1 cup butter, softened
1 1/3 cups sugar
1 teaspoon vanilla
1/2 teaspoon lemon juice
2 eggs
1 cup sour cream
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sugar
1 (19 ounce) can cherry pie filling
1/3 cup chopped pecans
1/2 teaspoon cinnamon
1/2 cup flour
1/2 cup butter, softened
1 teaspoon cinnamon
1 teaspoon vanilla

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking pan.
  • In a bowl, combine all streusel topping mixture; set aside.
  • In a bowl, combine the butter with 1-1/3 cups sugar, vanilla and lemon juice; beat in the 2 eggs, then stir in sour cream.
  • In another bowl, sift together flour, baking powder, baking soda and salt.
  • Add to the butter/sourcream mixture; mix well to combine.
  • Combine the pie filling with 1/3 cup sugar, pecans and cinnamon.
  • Spread 1/2 of the batter into a prepared baking dish, then spoon the cherry mixture over the batter.
  • Spread the remaining batter on top of the cherry mixture.
  • Sprinkle with the streusel topping.
  • Bake for 45 minutes.
  • Serve warm.

1/4 cup packed dark brown sugar
1/3 cup quick-cooking oats, uncooked
2 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
1 tablespoon butter, softened
2 teaspoons water
1/2 cup pecans, coarsely chopped
1 3/4 cups sugar
3/4 cup butter, softened
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1 teaspoon vanilla extract
3/4 teaspoon baking soda
1/8 teaspoon salt
3 large eggs
1 1/2 cups whole wheat flour
1 1/2 cups all-purpose flour
8 ounces reduced-fat sour cream

Steps:

  • Streusel:.
  • Mix brown sugar, oats, flour and cinnamon in small bowl. Add butter and water, rub between fingers until evenly moistened. Stir in pecans; press together to form small clumps.
  • Cake:.
  • Heat oven to 350°F Line a 9 x 13 baking pan with nonstick foil. Let ends of foil extend about 2 inches above pan on short sides.
  • Beat sugar, butter, spices, vanilla, baking soda, and salt in large bowl with mixer 3 minutes until blended. Beat in eggs, one at a time, beating well after each. Alternately beat in flours with sour cream on slow speed until just blended.
  • Spread batter evenly in pan, sprinkle with streusel and bake for 35 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on wire rack. Lift cake by foil ends onto cutting board and cut into 24 squares.

1 1/2 cups lightly packed light-brown sugar
1/2 cup granulated sugar
1 1/2 cups chopped pecans
1/2 cup all-purpose flour
1 tablespoon ground cinnamon
Pinch of ground cloves
8 tablespoons (1 stick) butter, softened

Steps:

  • Combine sugars, pecans, flour, cinnamon, and cloves in a medium bowl. Using your hands or a pastry cutter, cut in butter until well combined and crumbly; set aside in refrigerator until ready to use.

1/4 cup light brown sugar
1/4 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon ground mace
1/2 teaspoon ground ginger
1/8 teaspoon ground allspice
6 tablespoons butter, cut into small pieces
2 cups coarsely chopped pecans
4 tablespoons butter
1/2 cup light brown sugar
1/2 cup sugar
2 large eggs, lightly beaten
2 1/2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk

Steps:

  • Preheat oven to 350°F Grease bottoms and sides of 8-inch cake pan; dust with flour.
  • To make streusel topping: mix together brown sugar, sugar, flour, cinnamon, mace, ginger, and allspice.
  • Using pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Add pecans and work some of the mixture onto the nuts; set aside.
  • To make cake: cream together butter, brown sugar, and sugar until light and fluffy. Add eggs and vanilla, mixing until smooth.
  • Separately combine flour, baking powder, baking soda, and salt; mix well.
  • Mix together dry ingredients with creamed butter and buttermilk, alternating with each, blending well after each addition.
  • Pour half of batter into pan and smooth out; sprinkle half of streusel over batter.
  • Pour remaining batter into pan and cover with remaining streusel. Bake at 350°F for 30-45 minutes or until toothpick inserted comes out clean.
  • Remove cake from oven and cool in pan 15-20 minutes.
  • To remove from pan, invert plate over top and turn, remove pan, replace with plate and invert again. Replace dropped toppings to the top. Cut into wedges and serve.
