Not only does this make-ahead dessert go over big with company, but it calls for only four ingredients. If you can't find coffee-flavored ice cream, dissolve instant coffee granules in warm water and stir into vanilla ice cream.

1 cup chocolate-covered English toffee bits or 4 Heath candy bars (1.4 ounces each), crushed, divided
1/2 gallon coffee ice cream, softened
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • Place ladyfingers around the edge of a 9-in. springform pan. Line the bottom of the pan with remaining ladyfingers. Stir 1/2 cup toffee bits into the ice cream; spoon into prepared pan. Cover with plastic wrap; freeze overnight or until firm. May be frozen for up to 2 months., Just before serving, remove sides of pan. Garnish with the whipped topping and remaining toffee bits.

This is a dangerous, and show-stopping, confection--with a taste like no other:) It is very tedious and consumes a full day of preparation; I have never made this myself. Instead, it was presented to my husband and me on the eve of our wedding by my baker father-in-law--a gift in itself. I actually think this got more attention than we did!! And after eating just a few bites, I knew that my wedding dress would probably pop at the seams (but thankfully it didn't)!! Good luck with this--it would be great as a special celebration or holiday dessert.

2 1/2 cups pecan pieces
1/2 cup sugar
1/4 teaspoon salt
1/2 cup butter, melted
8 ounces semisweet chocolate, chopped
1 cup heavy cream
1/4 cup butter, softened
2 tablespoons light corn syrup
2 ounces unsweetened chocolate, chopped
2 teaspoons instant coffee powder
4 large eggs, at room temperature
1 1/2 cups packed light brown sugar
1 cup butter, softened
3 cups heavy cream, divided
2 tablespoons instant coffee powder
3/4 cup powdered sugar
grated semisweet chocolate, for garnish

Steps:

  • MAKE THE PECAN LAYER: Preheat oven to 350*F.
  • Lightly grease the bottom and sides of a 10" springform pan; line the bottom with a circle of waxed paper and grease the paper.
  • In a food processor, process the pecans, sugar, and salt until finely chopped.
  • In a medium bowl, combine the pecan mixture and melted butter; press firmly and evenly into the prepared pan.
  • Freeze for 10 minutes, or until very cold.
  • Bake for 15 minutes, or until the edges begin to brown.
  • Cool completely on a wire rack.
  • Cover pan tightly with plastic wrap and chill for 1 hour, or until cold and firm.
  • MAKE THE FUDGE LAYER: Melt the chocolate with the heavy cream in a saucepan over low heat, stirring often, until smooth; remove pan from heat.
  • Stir in the butter until melted and well combined; stir in the corn syrup.
  • Transfer the mixture to a medium bowl; set over another bowl of ice water.
  • Stir the fudge until it has cooled and begins to thicken.
  • Remove plastic wrap from the pecan layer; spread the fudge evenly over the pecans.
  • Cover loosely with plastic wrap and chill for 1 hour, or until cold and firm.
  • MAKE THE TOFFEE LAYER: Melt the chocolate with the instant coffee over low heat, stirring often, until smooth; remove pan from heat.
  • Using an electric mixer on medium-high speed, beat in the eggs, one at a time, beating well after each addition.
  • Gradually beat in the brown sugar; mix for 1 minute, or until light and fluffy.
  • While continuing to beat, gradually add the butter and mix until smooth.
  • Remove plastic wrap from the fudge layer; evenly spread the toffee mixture over the fudge.
  • Cover the surface with plastic wrap and freeze 1-2 hours, or until very firm.
  • MAKE THE FROSTING: In a small saucepan over low heat, warm 1/3 cup of the heavy cream with the instant coffee, stirring until the coffee has dissloved.
  • Transfer the cream to a small bowl; set in a larger bowl filled with ice water and stir until it is very cold.
  • In a chilled bowl, beat the remaining cream with the coffee-cream mixture and powdered sugar until stiff and holds its shape when cut into with a knife.
  • ASSEMBLE THE TORTE: Remove the torte from the freezer; uncover it.
  • Loosen edges from sides of pan; remove sides.
  • Rest the frozen torte on its side; using a sharp knife, separate torte from the bottom of the pan; peel off the waxed paper.
  • Place the torte, pecan-layer down, on an inverted 10" round cake pan.
  • Reserve 3/4 cup of the whipped cream mixture for garnish.
  • Spread about 2/3 of the remaining cream in a thick, even layer on top of the torte.
  • Frost the sides with the remaining 1/3 cup of the cream; lightly sprinkle with grated chocolate.
  • Decoratively pipe reserved cream on individual servings.
  • Serve chilled.

1 1/4 cups pecans (6 1/4 oz)
3 1/2 tablespoons matzo cake meal
1 cup plus 3 tablespoons sugar
7 large eggs, separated, at room temperature
2 teaspoons finely grated fresh lemon zest
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1 1/2 cups chilled heavy cream (optional)
3/4 pint strawberries, sliced lengthwise (2 cups)
Special equipment: a 10- by 4-inch (12-cup) angel food cake pan with removable bottom

Steps:

  • Preheat oven to 350°F.
  • Pulse pecans, cake meal, and 3 tablespoons sugar in a food processor until nuts are very finely chopped.
  • Beat yolks and 1/2 cup plus 2 tablespoons sugar in a large bowl with an electric mixer on high speed until pale and very thick. Stir in lemon zest and juice.
  • Beat whites with salt in another bowl with cleaned beaters on high speed until soft peaks form. Gradually beat in 5 tablespoons sugar and beat until whites just hold stiff, glossy peaks.
  • In 3 batches, alternately fold nut mixture and whites into yolk mixture. Spoon batter into ungreased pan and smooth top.
  • Bake cake in middle of oven until golden and a tester comes out clean, about 1 hour. Cool in pan, upside-down, 2 hours. (If pan has "legs," stand it on those. Otherwise, invert pan over neck of a bottle.)
  • Turn pan right side up, then run a long thin knife around outer edge of cake with a smooth (not sawing) motion. Loosen center in same manner. Remove outer rim of pan and run knife under bottom of cake to release. Invert cake onto a cake plate.
  • Beat cream with remaining tablespoon sugar until it just holds stiff peaks. Spread evenly over top and sides of cake and arrange strawberries on top. Serve chilled.

Steps:

  • Preheat oven to 350 degrees. Put egg yolks, granulated sugar, zest, vanilla, and salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium-high speed until pale and thickened, about 4 minutes. Fold in pecans.
  • Beat whites in a clean mixing bowl until stiff peaks form; fold into yolk mixture. Pour into a 10-inch springform pan.
  • Bake until golden brown, about 1 hour (if top browns too quickly, tent with foil). Let cool on a wire rack 30 minutes. Remove sides of pan. Let cool completely. Dust with confectioners' sugar. Serve with curd and berries; garnish with zest.

This is an old family recipe that uses our Texas pecans. I've made it often for birthdays and family gatherings. My brother-in-law said it was the only cake he's ever eaten in which the cake tastes as good as the frosting!

12 large eggs, separated
2 cups sugar
2-1/2 cups ground pecans
1/2 cup dry bread crumbs
1/2 teaspoon vanilla extract
BUTTERCREAM FROSTING:
1 cup milk
1/4 cup cornstarch
2 cups semisweet chocolate chips
1 cup butter, softened
2 cups confectioners' sugar
2 teaspoons vanilla extract
Whole pecans, optional

Steps:

  • In a bowl, beat egg yolks and sugar until thick and lemon-colored, about 5-6 minutes. Combine pecans and bread crumbs; stir into yolk mixture with vanilla. In another bowl, beat the egg whites until stiff peaks form; fold into batter. Divide evenly among three greased and waxed paper-lined 9-in. round baking pans. Bake at 350° for 25-30 minutes or until cakes test done. Cool for 10 minutes before removing from pan; cool completely on a wire rack. For frosting, combine milk and cornstarch in a saucepan until well blended. Add chocolate chips. Cook and stir over medium heat until thickened. Cool to room temperature. In a bowl, cream butter and confectioners' sugar. Add vanilla and beat until smooth. Stir in chocolate mixture; beat until fluffy. Spread between cooled cake layers. Frost top and sides. Garnish with pecans if desired.

1 ¾ cups raw pecans
4 large eggs @ room temp, separated
½ cup granulated sugar
Coffee Cream
1 cup heavy whipping cream, chilled
3 Tbsp confectioners' sugar
1 tsp instant coffee crystals dissolved in 2 tsp heavy whipping cream
½ tsp vanilla extract
fresh raspberries for top (optional, but great)

Steps:

  • To make the torte: Heat the oven to 350F. Butter the bottom of a 9" springform pan (use a parchment paper circle in bottom if possible). You can toast the nuts for a deeper roasted taste, but I skip this. Place the pecans in the bowl of a food processor fitted with a steel blade and process until finely ground (may be a bit paste-y). In the bowl of the Kitchenaid mixer, beat the egg yolks at medium speed until light and fluffy, about 4 minutes. Gradually add the granulated sugar, beating until well blended. Mix the ground pecans into the yolk mixture. In another large bowl, using the electric hand mixer with clean, dry beaters, beat the egg whites until stiff but not dry. Fold the egg whites gently into the nut mixture in two additions. Pour the batter into the prepared pan. Bake the cake until a tester inserted into the center comes out clean, about 40 minutes. Cool for 5 minutes in the pan, then run a knife between the cake and the pan sides to loosen, and remove the pan sides. Cool the cake completely on a wire rack (the cake will fall in the center). To make the coffee cream: When you are ready to serve the cake, in a large bowl an electric mixer, beat the cream, confectioners' sugar, coffee mixture, and vanilla on medium-high speed until stiff peaks form. Spread the coffee cream on top of the cake just before serving. Sprinkle fresh red raspberries on top. The cake may be made 1 day in advance and stored, tightly wrapped, in the fridge.
