HOMEMADE PECAN BUTTER



Homemade Pecan Butter image

Pecan butter is easy to make and tastes absolutely incredible! Feel free to to double or maybe even triple the amount of pecans in order to make a bigger batch (you may find it easier to toast the pecans in the oven at that point). Recipe yields 1 cup as written.

8 ounces (about 2 cups) high quality pecans, either whole or in pieces
Sea salt, to taste
Dash of ground cinnamon (optional)

Steps:

  • Pour the pecans into a large skillet and toast, stirring often, over medium heat until fragrant (don't let them burn!). This will take about 4 to 8 minutes.
  • Pour the toasted pecans into a food processor or high-speed blender and let them cool for several minutes. Then blend the pecans, pausing to scrape down the sides with a spatula often. The mixture will be crumbly at first, but will eventually blend into super-creamy goodness. Be careful not to let the mixture get too hot, which seems to cause oil separation. You might have to stop and let the mixture/machine cool down for a bit just to be safe. The amount of blending time required really depends on your machine-my old food processor took ten to fifteen minutes to turn the pecans into pecan butter, but my fancy Blendtec and Vitamix blenders can turn it into butter in a minute or two.
  • Add a pinch of sea salt and a dash of cinnamon (if using). Blend again, taste, and add more salt or cinnamon if needed.
  • Pour into a small jar, seal it with a lid, and store it in the refrigerator for good measure. This pecan butter will keep well, refrigerated, for up to 1 month or so-obviously, don't eat it if you see or smell any signs that it has gone bad.

8 ounces cream cheese at room temperature
1 teaspoon sweet onion (grated )
1 teaspoon garlic (minced )
1/4 cup butter
1/4 cup brown sugar (packed )
1 teaspoon Worcestershire sauce
1/2 teaspoon brown mustard (prepared )
1 cup pecans (finely chopped )

Steps:

  • In a small pan on medium-low heat, toast pecans until they're lightly browned and fragrant.
  • In a small bowl, combine cream cheese, onion, and garlic.
  • Spoon onto a serving platter into a 6 or 7 inch round disc
  • In a saucepan, combine butter, brown sugar, Worcestershire sauce, and mustard. (I used this mustard.)
  • Cook on medium-low heat for 4 to 5 minutes or until sugar is dissolved.
  • Remove from heat and stir in pecans.
  • Cool slightly before spooning over cream cheese mixture.
  • Serve warm or at room temperature with your favorite crackers

This makes a great condiment at holiday brunches. I made this for a Mother's Day get-together to serve with toast and french toast, and the mothers in my life enjoyed it enough to ask for it as a Christmas present. Serve with toast, rolls, biscuits, etc. Yummy on pancakes, waffles, and croissants!

½ cup chopped pecans
¼ cup light brown sugar
1 cup butter at room temperature
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F/165 degrees C.
  • Spread the pecans onto a baking sheet; toast in the preheated oven until they start to turn golden brown and become fragrant, about 15 minutes. Watch carefully as they bake, they burn quickly. Set aside to cool to room temperature.
  • Pulse the brown sugar, butter, and vanilla together in a food processor several times to thoroughly combine. Butter will be slightly fluffy. 1 egg
1/3 cup milk
2 tablespoons butter, melted
1/2 cup frozen whole corn kernels, thawed
1 (8-ounce) container strawberry cream cheese (recommended: Philadelphia)
1/4 cup mascarpone cheese
1/4 cup chopped dried cherries
1/4 cup chopped pecans, toasted
2 teaspoons lemon zest

Steps:

  • Preheat oven to 400 degrees F. Spray a 6-cup muffin pan with butter-flavored cooking spray; set aside.
  • In a medium bowl, combine corn muffin mix, egg, milk, butter, and corn kernels. Stir until just combined.

1/2 teaspoon baking soda

1 large egg
1 cup buttermilk
3 tablespoons butter (melted)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F / 180 C / Gas 4.
  • Grease and flour a 9 x 5 x 3-inch loaf pan.
  • In a mixing bowl, combine the flour, baking powder, soda, salt, and spices; mix with a spoon or whisk to blend thoroughly. Stir the brown sugar into the flour mixture.
  • In a small bowl, whisk the egg lightly. Whisk in the buttermilk and melted butter until well blended. Stir the egg and buttermilk mixture into the flour mixture until well blended.
  • Fold in the chopped pecans.
  • Spoon the batter into the prepared loaf pan.
  • Bake the quick bread in the preheated oven for 45 to 50 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

I do not remember where I got the recipe for the Snowcap Spread. Since this is Pecan Month, here is a spread for crackers from the Colorado Cachet cookbook. Though the recipe indicates putting the pecan pieces on top, I just mix them into the spread. I have also altered this to include 1/3 cup diced green olives 8 ounces deviled ham, and 1/4 cup diced red bell pepper. (This is really mixing another recipe (Snowcap Spread with the Pecan Spread)

4 bacon slices
3/4 cup pecan pieces
2 cups firmly packed grated cheddar
4 ounces cream cheese, room temperature
2 tablespoons mayonnaise
1/8 teaspoon hot pepper sauce (such as Tabasco)
1/8 teaspoon Worcestershire sauce
3 green onions, sliced
Crackers

Steps:

  • Fry bacon in heavy large skillet over medium heat until crisp. Transfer to paper towel to cool. Add pecans to drippings and cook until golden brown, stirring occasionally, about 5 minutes. Transfer to paper towel to cool. Season with salt.
  • Blend cheddar, cream cheese, mayonnaise, hot pepper sauce and Worcestershire sauce in processor until smooth. Transfer to bowl and stir in green onions. Crumble bacon and add to mixture. Line cookie sheet with plastic, forming 8-inch strip. Freeze 20 minutes to firm slightly. Using plastic as aid, form log shape. Remove plastic; roll log in pecans to coat. Wrap and refrigerate until firm. (Can be prepared 1 week ahead.) Serve with crackers.

1/2 cup Granulated sugar
1 cup Brown sugar
2 Eggs (Large)
1.5 tsp Vanilla extract
2.5 cups All-purpose flour
1 tsp Cinnamon powder
1 tsp Cornstarch
1 tsp Baking soda
1/2 tsp Baking powder
1.5 cups Pecans (Roughly chopped, Unsalted, Preferably toasted)
1/2 cup Toffee bits (Optional)

Steps:

  • In a large mixing bowl, cream together butter, granulated sugar and brown sugar until light and fluffy.
  • Add eggs, vanilla extract and mix until smooth.
  • Add flour, cinnamon powder, cornstarch, baking soda, baking powder and mix until just combined.
  • Mix in pecans and toffee bits until evenly distributed.
  • Chill dough for 30-45 minutes to make it easier to handle.
  • Scoop out small portions of the dough and roll into balls. The chilled dough will seem a bit crumbly but the warmth of your hands will help bring the dough together into small balls.
  • Optional: Roll each cookie dough ball in a bowl of granulated sugar, if you like. I don't usually do it but my Mom does it.
  • Place them on a cookie tray, lined with parchment paper.
  • Bake at 350 degrees F for about 11-14 minutes or until cookies are golden brown and firm along the edges. They will be "poofy" in the center and deflate as they cool. If they don't deflate fully to your liking, you can press down gently with the back of a spoon. Enjoy!
