2 cups butter, softened
1 cup confectioners' sugar
2 tablespoons water
4 teaspoons vanilla extract
4 cups all-purpose flour
2 cups chopped pecans
Additional confectioners' sugar

Steps:

  • Preheat oven to 300°. In a large bowl, cream butter and sugar. Add water and vanilla; mix well. Gradually add flour; fold in pecans. , Roll dough into 1-in. balls. Place on ungreased baking sheets and flatten with fingers. , Bake 20-25 minutes or until bottom edges are golden brown. Cool on a wire rack. When cool, dust with confectioners' sugar.

3/4 pound unsalted butter, room temperature
1 cup sugar
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
3 1/2 cups all-purpose flour
1/4 teaspoon salt
1 1/2 cups small diced pecans

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and sugar until they are just combined. Add the vanilla and almond extracts. In a medium bowl, sift together the flour and salt, then add them to the butter/sugar mixture. Add the pecans and mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough 1/2-inch thick and cut into 2 1/2-inch squares with a plain or fluted cutter (or cut into any shape you like). Place the cookies on an ungreased baking sheet.
  • Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature and serve.

1 cup white sugar
1 cup confectioners' sugar, sifted
2 eggs
1 teaspoon vanilla extract

2 cups chopped pecans
½ cup white sugar for decoration

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the margarine, vegetable oil, 1 cup white sugar and confectioners' sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. One 15.25 oz package Super Moist Butter Pecan Cake Mix with Pudding ((Betty Crocker makes the one I used))
2 large eggs
1/2 cup vegetable oil
3/4 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees. Grease the bottom of two cookie sheets.Place the oil and eggs in a large bowl. Beat until well incorporated. With the mixer still running, gradually add the cake mix to the bowl. Mix until well incorporated. Fold in pecans.Drop the dough in rounded tablespoons two inches apart on the greased baking sheets. Bake 10 - 12 minutes or until golden brown. Cool for 1 minute on the cookie sheet before removing to a wire rack to cool completely.

1 (18 1/4 ounce) box butter pecan cake mix
1 egg
vegetable oil
water
1/2 cup chopped fresh pecans

Steps:

  • Pour cake mix into a large bowl. Whisk dry mix to remove lumps or sift it into the bowl.
  • Add pecans to the dry cake mix and stir well.
  • In a liquid measuring cup, add the egg. Add enough oil to the egg to bring the mixture to 1/2 cup. Add enough water to bring the mixture to 2/3 cup. Beat mixture together with a fork.
  • Add egg mixture to cake mix in large bowl. Mix well.
  • Using a teaspoon or small ice cream scoop, gather balls of dough, rolling them into perfect circles. Place 12 on a cookie sheet and bake 8-12 minutes at 350 degrees F. If they get golden brown, they are too done. Pulling them out around 10 minutes should be perfect.
  • Let the cookies cool 5 minutes before transfering them to a plate or container.

1/2 c. packed light brown sugar
1/4 c. granulated sugar
1 1/2 tsp. vanilla extract
1/2 tsp. kosher salt

1 c. pecan halves, finely chopped
24 pecan halves

Steps:

  • Preheat the oven to 350° F.
  • In the mixing bowl of a stand-up mixer, add the butter and sugars. Beat on medium speed for 3 minutes or until light and fluffy, scraping the sides and bottom of the bowl as needed. Add the vanilla and salt and beat well to combine. Add the flour and mix on low speed until a dough forms. Add the chopped pecans and mix on low until pecan are incorporated into dough.
  • Shape the dough into 1 1/2-inch balls and place 2-inches apart on 2 parchment-lined baking sheets. Using the bottom of a glass, press down on each ball to a 1/2-inch thickness. Press one pecan half into the top of each cookie.
