SALMON BALL (SPREAD)
Quick & easy appetizer (the cook time is actually the time to allow the mixture to firm in the frig, longer is better).

Steps:
- Mix salmon with cream cheese, lemon juice, horseradish, and onion.
- Refrigerate until firm.
- Mix parsley and pecans together.
- Form salmon mixture into a ball.
- Roll in pecan-parsley mixture.
- Serve on a plate with your favorite crackers around it.
- If you are not fond of horseradish, I would cut it down to 1 teaspoons.
- (I love the taste of horseradish so I usually add more).

I got this recipe from my mother and have taken it to a number of potlucks. It always receives raves. Even non-salmon lovers like this appetizer.

Steps:
- In a medium bowl, mix salmon, cream cheese, lemon juice, green onions, horseradish, salt, hot pepper sauce and Worcestershire sauce. Form the mixture into a ball and wrap in plastic. Chill in the refrigerator 3 hours, or until firm.
- On a large piece of wax paper, mix walnuts and fresh parsley. Roll the ball in the walnuts and parsley until thoroughly coated. Chill in the refrigerator until serving.

- In a medium-sized mixing bowl, mix the first six ingredients together. Scrape the mixture into a mound in the middle of the bowl and chill for 3 hours.
- In a separate mixing bowl (preferably metal), mix the parsley and chopped nuts together. Place the bowl in the freezer to chill.
- After 3 hours have passed, remove the salmon mixture from the refrigerator and the nut mixture from the freezer. Using a spatula, carefully scrape the mound of salmon into the nut mixture.
- Using your hand, gently reach under the salmon mound and turn it over, covering it with the nut mixture. Continue to rotate and turn the salmon mixture in the nut mixture until it has formed a ball and is completely covered.
