MAPLE PECAN PIE
Our Vermont maple syrup can't be beat, and this is one of my favorite pies. It's also quick and easy to make. -Mildred Wescom, Belvidere, Vermont

Steps:
- Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a bowl, whisk eggs and sugar until smooth. Add maple syrup, butter, vanilla, salt and pecans. Pour into crust. , Bake until a knife inserted in the center comes out clean, 30-40 minutes. Cool on a wire rack for 1 hour. If desired, top with whipped cream to serve. Store in the refrigerator.

Steps:
- Bring syrup, sugar and butter to boil in medium saucepan on medium heat; simmer on medium-low heat 5 min., stirring occasionally. Cool slightly.
- Heat oven to 375°F. Place nuts in pie crust. Whisk eggs and vanilla in medium bowl until blended. Gradually stir in syrup mixture; pour over nuts in crust.
- Bake 35 to 40 min. or until knife inserted in center comes out clean. Cool.

- Heat water in a saucepan over medium-low heat; cook and stir white sugar into hot water until dissolved, about 5 minutes. Stir brown sugar and salt into the sugar mixture until dissolved; stir in butter.
- Whisk eggs and vanilla together in a bowl until smooth; stir 2 to 3 tablespoons hot sugar mixture into eggs, 1 tablespoon at a time, to slowly bring eggs up to temperature without cooking them. Slowly stir egg mixture into saucepan of sugar mixture. Fold in pecans.
- Increase temperature to medium heat; cook and stir mixture until thickened and bubbling, about 5 minutes. Reduce heat to low before serving.

BUTTER PECAN SYRUP
Steps:
- Gather the ingredients.
- In a small saucepan, boil the water and add the sugar. Stir the mixture until sugar until it dissolves.
- Add pecans and stir.
- Reduce the heat and simmer for 5 minutes without stirring.
- Next, add the butter pecan extract or maple flavoring and the butter and stir until well mixed.
- Let syrup cool a bit, and serve it warm or cooled with pancakes, waffles, French toast, ice cream or anything else that would benefit from its fabulous flavor.
- Store in the fridge for up to two weeks.

- Melt the butter and brown sugar together in a small saucepan over medium heat. When the sugar melts, add the pecans and reduce the heat to low. Cook 10 minutes to bring out the nutty flavor. Add the corn syrup, molasses, vanilla, and salt. Stir well and heat through. You may keep it warm over very low heat until ready to serve or remove from the heat and re-heat just before serving. This topping becomes stiff when it cools so it will definitely need to be heated to pour.
- In a small bowl mix the cake flour, baking powder and salt. Whisk to mix, then set aside. In another bowl add the milk, egg, and vanilla and whisk lightly. Pour the wet ingredients over the dry and whisk just to mix. Add the melted butter and whisk it in. The batter should still be lumpy. If it is too thick, add a little more milk to thin it down.
