This is a wonderfully rich, Southern pie recipe that is the best I've tried!

1 ¾ cups white sugar
¼ cup dark corn syrup
¼ cup butter
1 tablespoon cold water
2 teaspoons cornstarch
3 eggs
¼ teaspoon salt
1 teaspoon vanilla extract
1 ¼ cups chopped pecans
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, combine the sugar, corn syrup, butter, water, and cornstarch. Bring to a full boil, and remove from heat.
  • In a large bowl, beat eggs until frothy. Gradually beat in cooked syrup mixture. Stir in salt, vanilla, and pecans. Pour into pie shell.
  • Bake in preheated oven for 45 to 50 minutes, or until filling is set.

1 cup packed brown sugar
1/3 cup butter, melted
3/4 cup light corn syrup
1/2 teaspoon salt
3 eggs
1 1/2 cups pecan halves or pieces
1 crust from 1 package (12 oz) frozen Pillsbury™ Deep Dish Pie Crusts (2 Count)

Steps:

  • Heat oven to 375°F; place cookie sheet in oven to preheat.
  • In medium bowl, beat brown sugar, butter, corn syrup, salt and eggs with whisk until well blended; stir in pecans. Pour into frozen crust.
  • Bake on preheated cookie sheet 35 to 45 minutes or until center is set. After 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Cool 30 minutes; refrigerate at least 2 hours until chilled before serving. Cover and refrigerate any remaining pie.

8 ounces cream cheese, softened
1/3 cup sugar
1 teaspoon salt
1 teaspoon vanilla
1 egg
1 1/4 cups chopped pecans
3 eggs
1/4 cup sugar
1 cup corn syrup, light or dark
1 teaspoon vanilla

Steps:

  • Heat oven to 375 degrees F.
  • In small bowl, combine cream cheese, 1/3 cup sugar, salt, 1 teaspoon vanilla, and 1 egg; beat at medium speed until well blended.
  • Spread in bottom of prepared pie crust.
  • Sprinkle with pecans.
  • In small bowl, combine all topping ingredients; beat on medium speed just until blended.
  • Gently pour topping over pecans.
  • Bake 35 to 40 minutes or until center is firm to touch.
  • Refrigerate leftovers.

3 egg whites
½ teaspoon cream of tartar
1 cup white sugar
20 buttery round crackers, crushed
¾ cup chopped pecans
1 teaspoon vanilla extract
1 cup whipping cream
¼ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease an 8 inch pie pan.
  • In a large glass or metal mixing bowl, beat egg whites and cream of tartar until foamy. Gradually add sugar, continuing to beat until whites form stiff peaks. Fold in crackers, 3/4 cup pecans, and vanilla extract. Pour mixture into pie pan.
  • Bake in preheated oven for 25 to 30 minutes, until firm and lightly browned. Remove and cool.
  • In a medium bowl, combine whipping cream and brown sugar. Beat until soft peaks form. Spread over cooled pie. Sprinkle with 1/4 cup pecans and refrigerate until ready to serve.

I have no idea where I got this recipe so I guess it's a mystery for real. But, I think it's called mystery because of the way it all conjells together when baking. It's delicious and RICH. A little piece goes a long way.

topping:
3 eggs
1 c light corn syrup
1 tsp vanilla extract
pie:
8 oz cream cheese room temp
1/3 c sugar
1/4 tsp salt
1 tsp vanilla extract
1 egg
1 1/2 c chopped pecans
1 9 in. unbaked pie shell

Steps:

  • 1. Combine all topping ingredients and mix with handmixer to blend. In bowl, mix all pie ingredients except nuts. Beat until blended. In Pie shell: Pour pie ingredients in pie shell. Then set the pecans on that layer. Cover nuts with topping mixture. Bake in pre-heated 350 oven for 45 minutes. Check doneness before removing from oven as each oven is different. Serve warm or room temp.

1/4 teaspoon salt
1/3 cup plus 1/4 cup sugar for topping sugar
1 (8 oz) package cream cheese
4 1 for pie, 3 for topping eggs
1 deep dish pie shell
1 1/4 cups chopped pecans
1 cup light corn syrup

Steps:

  • Blend together 1 teaspoon vanilla, 1/4 teaspoon salt, 1/3 cup sugar, 1 (8 oz) package cream cheese, 1 egg and pour in bottom of unbaked pie shell, top with chopped pecans.
  • Topping:
  • Mix 3 eggs, 1/4 cup sugar, 1 cup light corn syrup, 1 teaspoon vanilla and pour on top of pecans. Bake in 350 °F oven for 45 minutes.
