1/2 cup chopped pecans, toasted
1/3 cup KRAFT Grated Parmesan Cheese
1/4 cup chopped fresh parsley
3 Tbsp. lemon juice, divided
1 Tbsp. olive oil
4 tilapia fillets (1 lb.)

Steps:

  • Heat oven to 375ºF.
  • Cook rice as directed on package, using broth and water and adding broccoli to the cooking liquid for the last 5 min. of the rice cooking time.
  • Meanwhile, combine nuts, cheese, parsley, 2 Tbsp. lemon juice and oil. Place fish in single layer in shallow baking dish; spread with nut mixture. Drizzle with remaining lemon juice. Bake 10 to 12 min. or until fish flakes easily with fork.
  • Serve fish with rice mixture.

Pecan-Crusted Fish Fillets cooked to flaky perfection is my new favorite seafood dish. With fresh grouper fillets coated in crunchy, buttery pecans and crispy panko, this easy recipe delivers maximum flavor with minimum effort.

4 fish fillets (six ounces each, skinless, approximately one inch thick)
1 cup panko breadcrumbs
1 cup pecan pieces
1/2 cup mayonnaise
1 tablespoon creole seasoning (I like Zatarain's)
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 cup vegetable oil

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the pecans in a food processor and pulse until they are finely chopped. Do not over-process or you will end up with pecan meal or pecan butter.
  • Add the finely chopped pecans and the panko crumbs to a shallow dish or pie plate and stir to combine. Set aside.
  • Add the mayonnaise and creole seasoning to a small bowl and stir to combine. Set aside.
  • Season both sides of the fillets with salt and pepper.
  • Evenly spread a thin layer of the mayonnaise mixture on all sides of the fillets.
  • Dredge each fillet in the nut mixture, making sure to coat all sides evenly.
  • Heat a large, 12-inch, non-stick oven-proof or cast-iron skillet over medium-low heat. Add the vegetable oil. When the oil is hot, add the fillets and cook for three minutes. Turn the fillets over and cook three minutes on the other side.
  • Transfer the skillet to the oven and let the fish finish cooking. This should take about five minutes, depending on the thickness of the fillets.
  • The fish is done when it is opaque and flakes easily when pierced with a fork.
  • Serve immediately.

3 tablespoons of mayonnaise
2 tablespoons of honey
1 cup of crushed pecans
Seasoning salt or salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees. Spray the bottom of a baking pan with nonstick cooking spray.
  • In a wide bowl, combine the mayonnaise and honey. Mix well.
  • Dip the fish fillets in the mayonnaise and honey mixture. Coat the fish with pecans. I like to spread the pecans over a large plate or wax paper and press the fish into the pecans.
  • Place the coated fish on the baking pan. Add salt and pepper to taste.

6 (6-8 ounces each) halibut fillets, skin removed
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1½ cups Panko ((Japanese breadcrumbs))
1 cup chopped pecans ((can substitute walnuts))
1/2 cup freshly grated Parmesan cheese
2 Tablespoons melted butter
1 Tablespoon creamy horseradish
1 Tablespoon Dijon mustard
1 Tablespoon chopped fresh flat-leaf parsley ((can substitute dried parsley))
1 Tablespoon chopped fresh dill ((can substitute dried dill weed))
1 teaspoon lemon zest
1 Tablespoon olive oil
1 teaspoon olive oil
2 Tablespoons finely chopped shallots
1 cup dry white wine
2 Tablespoons fresh lemon juice
2 Tablespoons butter
2 Tablespoons chopped fresh dill ((can substitute dried dill weed))
Salt and black pepper (, to taste)

Steps:

  • Preheat oven to 425 degrees. Cover a cookie sheet with aluminum foil; give it a good coating of non-stick spray. Pat the pieces of halibut dry with a paper towel, lightly season with salt and pepper, then place onto prepared baking sheet. Keep pieces about 1/2-1 inch apart.
  • In a separate bowl place Panko breadcrumbs, pecans, and Parmesan cheese. Stir to combine. Add melted butter, horseradish, Dijon mustard, chopped parsley, dill, and lemon zest. Mix with a fork until mixture is crumbly.
  • Using a spoon and/or your hands, divide crumb mixture evenly on top of each fillet. Cover the top completely, pressing crumbs onto fish to get them to "stick". Scoop crumbs up that fall off fish; gently press them back onto fish. When all halibut pieces are coated, drizzle olive oil on top. Bake (uncovered) at 425° F for 12-15 minutes, until cooked through and crust is golden brown.
  • While halibut bakes, make lemon wine sauce. Heat olive oil in saucepan on medium. When hot, add shallots. Stir and cook for 2-3 minutes, until shallots are slightly soft. Turn heat to High. Pour in wine and lemon juice. Bring to a boil; stir and continue to cook for 6-8 minutes (or 5-6 minutes if making half recipe), until the liquid has reduced slightly. Turn heat back to Low. Add butter. Stir until butter has melted and is incorporated into sauce. Remove pan from heat. Stir in fresh (or dried) dill. Taste sauce; season with salt and pepper.
  • When halibut is done, crust will be a gorgeous golden brown color, and fish should be cooked through. Use a spatula to place halibut onto individual serving plates. Drizzle with lemon wine sauce. Serve, and enjoy!
