1 ¾ cups white sugar
¼ cup dark corn syrup
¼ cup butter
1 tablespoon cold water
2 teaspoons cornstarch
3 eggs
¼ teaspoon salt
1 teaspoon vanilla extract
1 ¼ cups chopped pecans
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, combine the sugar, corn syrup, butter, water, and cornstarch. Bring to a full boil, and remove from heat.
  • In a large bowl, beat eggs until frothy. Gradually beat in cooked syrup mixture. Stir in salt, vanilla, and pecans. Pour into pie shell.
  • Bake in preheated oven for 45 to 50 minutes, or until filling is set.

1/3 cup butter, melted
3/4 cup light corn syrup

1 crust from 1 package (12 oz) frozen Pillsbury™ Deep Dish Pie Crusts (2 Count)

Steps:

  • Heat oven to 375°F; place cookie sheet in oven to preheat.
  • In medium bowl, beat brown sugar, butter, corn syrup, salt and eggs with whisk until well blended; stir in pecans. Pour into frozen crust.
  • Bake on preheated cookie sheet 35 to 45 minutes or until center is set. After 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Cool 30 minutes; refrigerate at least 2 hours until chilled before serving. Cover and refrigerate any remaining pie.

1 1/2 cups chopped pecans
1 Gala apple, peeled, chopped (1 1/2 cups)
1/2 cup chopped dried Calimyrna figs
1/3 cup packed brown sugar
1/3 cup brandy
2 teaspoons grated lemon peel
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box

Steps:

  • In medium bowl, stir together mincemeat, pecans, apple, figs, brown sugar, brandy and lemon peel. Cover; refrigerate at least 8 hours.
  • Let pie filling stand at room temperature 30 minutes. Meanwhile, heat oven to 425°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch pie plate. Stir filling well; pour into crust-lined plate. Top with second crust and flute; cut slits in several places.
  • Bake on lowest oven rack 40 to 45 minutes or until pastry is golden brown. Cool completely on cooling rack, about 5 hours.

Take this beautiful mincemeat, nut-topped tart along to a festive buffet or serve with an indulgent brandy cream as an alternative to the traditional Christmas pud

250g plain flour , plus extra for dusting
140g cold butter , diced
2 tbsp golden caster sugar
1 tbsp milk
zest 1 orange , finely grated
300g pecans
2 eggs
100g golden syrup
50g butter , melted
400g homemade mincemeat (see goes well with for recipe), or a 411g shop-bought jar
300ml double cream
2 tbsp icing sugar
4 tbsp brandy
splash of vanilla extract
large pinch of cinnamon

Steps:

  • To make the pastry, put all the ingredients in a food processor and pulse until it comes together, then tip onto a surface and knead into a ball. Wrap in cling film and chill in the fridge for 30 mins.
  • Roll out the pastry on a lightly floured surface and use to line a 23cm tart tin, leaving any excess pastry overhanging. Chill for a further 30 mins.
  • Heat oven to 190C/170C fan/gas 5 with a baking sheet on the middle shelf. Prick the pastry base with a fork and line the tin with baking parchment and baking beans or some dry rice. Place on the baking sheet and bake for 20 mins until golden around the edges. Remove the parchment and beans, and return to the oven for 10 mins more until the base is biscuit-brown.
  • While the pie case is baking, make the filling. Finely chop half the pecans by hand or by pulsing in a food processor, then tip into a bowl. Mix in the eggs, golden syrup and melted butter until completely combined, then stir in the mincemeat.
  • When the pie case is cooked, spoon over the mincemeat pecan filling and top with the reserved whole pecans. Bake for 20-25 mins until the top is just set, then remove from the oven to cool slightly.
  • To make the brandy cream, whisk together the cream and the icing sugar until holding soft peaks, then gently whisk in the brandy, vanilla and cinnamon. Serve the pie warm in slices with a dollop of the cream.

These Mini Pecan Pies are easy to make and can also be made ahead of time. These are the perfect mini treat for Thanksgiving too!

1 pie crust (store-bought or homemade)
1/3 cup light corn syrup
1/4 cup brown sugar
1 and 1/2 tablespoons unsalted butter (melted)
1 egg (lightly beaten)
1/2 teaspoon vanilla extract
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°F.
  • On a lightly floured surface, roll the pie dough out into a 12-inch circle. Using a 3-inch cookie cutter (or glass), cut out 12 circles from the dough. Place each piece of dough in each muffin cavity of a 12-count muffin pan, making sure each piece comes up the sides just a little bit (you may need to stretch the dough just a bit). Transfer the muffin pan to the refrigerator while you making the filling.
  • In a mixing bowl, mix together the corn syrup, brown sugar, melted butter, egg, and vanilla extract until fully combined; then mix in the chopped pecans. Remove the muffin pan from the refrigerator. Evenly distribute the filling (about 1 full tablespoon) between all 12 muffin cavities, making sure the pecan pie filling does not come up over the edges of the dough.
  • Bake at 350°F for about 25 minutes or until the filling is set. Remove from the oven and cool in the pan for about 10 minutes. Carefully remove the mini pecan pies from the muffin pan and transfer to a wire rack to cool completely.

  • For this recipe, you can use whichever mincemeat you like - try our recipe for maple-pecan mincemeat. For the shortbread cases, put the flour, salt and butter into a mixing bowl and work the ingredients together until the mixture looks like coarse breadcrumbs (or use a stand mixer with the dough hook attachment if you have one). Add the sugar and the egg yolk mixture and work together briefly until the mixture starts to stick together in small clumps. Turn out onto a lightly floured surface and knead lightly and briefly into a ball. Divide in half, flatten into 2 discs and chill for 10 minutes.
  • Roll out the pastry on a lightly floured surface to the thickness of a pound coin. Cut out 24 x 7cm discs and 24 x 6cm discs using a fluted round biscuit cutter, re-kneading and rolling the pastry briefly when necessary. Line 2 x 12-hole nonstick bun tins with the larger discs. Spoon 1 level tablespoon of mincemeat into the bottom of each case – don’t overfill them. Brush the edges of the smaller discs with water and press them onto the tarts to seal. You can make a steam hole if you like, but it’s not really necessary with the shortbread pastry.
  • Open-freeze the mince pies in the tins for at least 4 hours or overnight. Carefully remove them from the tins by easing them out with a round-bladed knife and layer them up in a rigid plastic box, separating each layer with a sheet of baking paper. Cover and return to the freezer until needed.
  • To cook, simply drop the frozen mince pies back into the bun tins and bake at 190°C, fan 170°C, gas 5 for 20-25 minutes until golden, from frozen. Leave to cool and firm up in the tins for 5 minutes then transfer to a wire rack. Serve warm or cold, lightly dusted with icing sugar if you wish.
