LESS SWEET PECAN PIE
Sour cream and less sugar make for a not-too-sweet pecan pie. This recipe works best in a shallow pie dish such as a 9 inch aluminum kind or shallow metal.

Steps:
- Pulse the flour, sugar and salt together in a food processor to mix. Add chunks of butter and pulse until coarse. Add sour cream and pulse until mixed. It will still look crumbly, but it will be moist.
- Turn mixture out onto a pastry mat and knead it all together with your hands. It should go from a powdery looking mixture to a firm mass. Using a bench scraper, scoop it up and wrap it in plastic. Chill for about an hour (this helps relax the gluten).
- Remove dough from the refrigerator and let it stand for about 10 minutes so that it's not so stiff. On a floured surface, roll the dough into a circle big enough to cover a 9 inch pie pan. Line the pan with the dough and put the lined pan in the freezer until ready to use.
- Preheat the oven to 400 degrees. Lay the pecan halves on a rimmed baking sheet and toast for about 7 minutes or just until they are aromatic.
- Whisk the eggs, sugar and corn syrup together in a bowl, then whisk in the sour cream, melted butter, vanilla and salt. Add toasted pecan halves.
- Pour mixture into the pie shell and set on a baking sheet.
- Bake at 400 for 10 minutes, then reduce heat to 350 and bake for 35 minutes or until filling appears set. Cover the pie loosely with a sheet of foil during the last 15 minutes of baking to prevent the crust from getting too brown.
- Let the pie cool completely, then chill for a few hours. Bring back to room temperature and serve. Alternatively, you can skip chilling, but the pie will be softer. You can also freeze the pie, then bring it back to room temperature before serving.

- Preheat oven to 375 degrees F (190 degrees C).
- In a medium mixing bowl, blend together cream cheese, 1/3 cup sugar, and 1 teaspoon vanilla. When mixture is smooth, spread into bottom of pastry shell. Sprinkle cream cheese layer with chopped pecans.
- In another medium mixing bowl, combine eggs, 1/4 cup sugar, corn syrup, evaporated milk, and 1 teaspoon vanilla extract. Whisk until mixture is smooth. Pour mixture over pecan layer.
- Bake in preheated oven for 35 to 40 minutes, until set in center.

CLASSIC PECAN PIE BARS
Steps:
- Heat oven to 350°F.
- Combine 1 3/4 cups flour, butter and sugar in bowl. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs. Stir in 1/3 cup pecans.
- Press crust mixture evenly onto bottom of ungreased 13x9-inch baking pan. Bake 18-22 minutes or until edges are very light golden brown.
- Combine brown sugar, 6 tablespoons flour, and salt in large bowl; whisk until mixed. Add corn syrup, eggs and vanilla; mix well. Stir in 1 1/2 cups chopped pecans. Spread evenly over hot, partially baked crust. Bake 30-35 minutes or until filling is set and knife inserted 1-inch from edge comes out clean.
- Cool completely. Refrigerate 30 minutes. Cut into bars.

- Unroll pie crust onto waxed paper on the counter; sprinkle lightly with flour and smooth out with your hand. Place another piece of waxed paper on the top of the crust; carefully flip over and sprinkle other side with flour and smooth it out. Fit crust in pie plate and crimp edges as desired. Set aside. Melt butter then set aside to cool slightly. Preheat oven to 340 degrees F. In a mixing bowl, lightly whisk the eggs; whisk in the corn syrup and maple syrup or vanilla. Whisk in the sugar, melted butter, and salt. Gently fold in the cereal. Pour into pie crust. Bake for 55-60 minutes, or until center is set when pie pan is lightly shaken. (After the first 30 minutes of bake time, cover the edges of crust with strips of aluminum foil if over-browning). Cool completely on a wire cooling rack. Serve with whipped cream or whipped topping. Cover and refrigerate leftovers, just let set out for 10 minutes before serving time.

Pecan Pie is a southern favorite. But every pecan pie I tasted was way too sweet. I found this recipe years ago in a magazine. My husband won't eat any other pecan pie, anywhere. - I like to use white light corn syrup.
- Pecans should be broken.
- Melt margarine.
- Mix all ingredients EXCEPT eggs. Beat eggs and add to mixture. Pour into unbaked pie crust.
- Bake at 300 degrees for 40 minutes; then turn oven up to 350 degrees and bake an additional15-20 minutes.

- Prepare your pie dough *frozen, fresh, or premade crust. Line a 9.5" pie dish with dough, and crimp. Place dough covered pie dish in the refrigerator.
- Preheat oven to 350 degrees Fahrenheit.
- In a medium saucepan, melt butter. Add in the brown sugar and whisk until smooth.
- Remove saucepan from heat and add in vanilla extract, corn syrup, and salt; allow to cool for 3-5 mins
- Whisk in eggs into the semi-cooled sugar mixture. Mixture will be fluffy and ready to be poured into the chilled crust.
- Remove pie crust from refrigerator and pour 1 cup of pecans into the shell. Add brown sugar mixture in and then use remaining one cup of pecans to decorate the top.
- Place filled pie dish into preheated oven and bake for 30 minutes. After 30 minutes, add a pie crust shield (to prevent over browning for the crust). for the remaining 20 minutes of baking time to prevent the crust from over browning. Pie will bake for 50 minutes total.
- Allow pie to cool for at least one hour before slicing.

- Preheat oven to 400 degrees F. Beat the eggs until well combined and light in color, about 5 minutes. Mix the sugar and flour together and gradually add to the eggs using low speed. Add the corn syrup, vanilla and salt and blend well, again using low speed. Fold the nuts in by hand and pour the mixture into the prepared pie crusts. Bake at 400 degrees F for 10 minutes and then reduce the heat to 350 degrees F. and bake for 1 hour longer. The pie will rise up and form cracks on the top, and the filling will be set when baking is complete. Remove pie and let it cool before cutting.
- Combine the butter, shortening, 2 cups of the cake flour, and 1 cup of the all-purpose flour. Blend together. Stop mixer, scrape the sides and add remaining 2 cups of cake flour and remaining 1 cup of all-purpose flour. Blend to combine completely. Mix sugar and salt into 1/4 cup of the water and add it to the flour mixture. Blend briefly and add the remaining water if needed. The dough should not be overworked and should make a solid piece when held in your hand. Turn the dough out onto a lightly floured smooth surface and knead it several times. Divide the dough into portions and flatten it. Wrap unused dough in plastic. Roll out the dough to fit a 9-inch pie pan. Re-roll any scraps for a second pie crust.
- Preheat oven to 475 degrees F. Prick bottom and sides of pastry with fork. Bake 12 minutes or until light brown. Cool on wire rack.
