"My sister is raising two little girls but always makes time to bake homemade bread," writes Sandy Vias, San Leandro, California. "They like this loaf best. It's studded with fruit and nuts, and terrific toasted and spread with butter.

Yield 1 loaf (12 slices).

Number Of Ingredients 11

1 cup plus 2 tablespoons water (70° to 80°)
1 egg
3 tablespoons butter, softened
1/4 cup packed brown sugar
1-1/2 teaspoons salt
1/4 teaspoon ground nutmeg
Dash allspice
3-3/4 cups plus 1 tablespoon bread flour
2 teaspoons active dry yeast
1 cup dried fruit (dried cherries, cranberries and/or raisins)
1/3 cup chopped pecans

Steps:

  • In bread machine pan, place the first nine ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons water or flour if needed). Just before final kneading (your machine may audibly signal this), add fruit and pecans.

Number Of Ingredients 12

1 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 cup butter
6 tablespoons sugar
1/2 cup pecans, roughly chopped
3 eggs
1 tablespoon milk
1 lemon, zest of
5 tablespoons maple syrup
6 tablespoons icing sugar (optional)
1 tablespoon lemon juice (optional)
2 tablespoons of roughly chopped pecans (optional)

Steps:

  • Preheat oven, grease& line the base of a 9x5 loaf pan with baking/parchment paper.
  • Sift flour and baking powder into a bowl.
  • Cut butter into the flour and mix until the mixture looks like fine breadcrumbs.
  • Add in the sugar and pecans.
  • Beat eggs together with milk and lemon zest in a seperate bowl.
  • Stir in maple syrup.
  • Add this to the flour mixture and gently mix together.
  • Do not overmix, only until all dry ingredients have become moist.
  • The batter should be lumpy.
  • Pour batter into pan and smooth out the surface of the batter.
  • Bake in the oven for about 50-60 minutes or until cake is lightly browned.
  • To make sure, insert a toothpick into the center of the cake and if it comes out clean then the cake is ready.
  • Cool cake in pan for at least 10 minutes then turn out and let it cool on the rack.
  • (For Icing) Sift the icing sugar into a small bowl and stir in the lemon juice to create a smooth icing.
  • Drizzle over the loaf and then sprinkle the chopped pecans over the icing.
  • Wait until the icing is set then slice.

Number Of Ingredients 18

3-1/3 cups all-purpose flour
3 cups sugar
2 teaspoons baking soda
1-1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 can (15 ounces) pumpkin
1 cup vegetable oil
4 large eggs, room temperature, lightly beaten
2/3 cup water
1/2 cup chopped pecans
CARAMEL GLAZE:
1/4 cup butter
1/4 cup sugar
1/4 cup packed brown sugar
1/4 cup heavy whipping cream
2/3 cup confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a bowl, combine the first 6 ingredients. In a separate bowl, combine the pumpkin, oil, eggs and water; mix well. Stir into dry ingredients just until combined; fold in the pecans. , Spoon into 2 greased 9x5-in. loaf pans. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. , For glaze, combine the butter, sugar, brown sugar and cream in a saucepan. Cook until sugar is dissolved. Cool for 20 minutes. Stir in the confectioners' sugar and vanilla until smooth. Drizzle over cooled loaves.

1 c butter, softened
2 c sugar
4 eggs
3 c ap flour
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp ground ginger
1/2 tsp ground cloves
1 1/2 c semi - sweet chocolate chips
1 1/2 c chopped pecans - divided
1 1/2 c canned pumpkin, not mix
SPICED GLAZE
1 c confectioners' sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
3 Tbsp milk or heavy cream

Steps:

  • 1. Preheat oven to 350 degree F. Spray 2 - 9 x 5 loaf pans with non stick cooking spray and then flour.
  • 2. In a medium bowl, beat butter until smooth. Add sugar; beat until fluffy. Beat in eggs, one at a time, beating well after each addition.
  • 3. Sift together dry ingredients; add to butter mixture alternately with pumpkin, ending with flour mixture.
  • 4. Stir in chocolate chips and one cup pecans.
  • 5. Spoon into pans evenly. Sprinkle with remaining pecans.
  • 6. Bake for 65 - 70 minutes, or until pick comes out clean. Cool for 10 minutes in pans; remove to wire racks.
  • 7. Spice glaze: Mix ingredients together until desired consistency is reached.
  • 8. Glaze with spice glaze while still warm.

I clipped this recipe out of the paper. It's a little different from the usual pumpkin bread; a nice combination of autumn spices and chocolate chips.

1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon clove
1/2 cup butter, softened
1 cup sugar
2 eggs
3/4 cup canned pumpkin
3/4 cup chocolate chips
3/4 cup chopped walnuts, divided

Steps:

  • Combine flour, baking soda, salt and spices and set aside.
  • In a large bowl, cream butter and sugar, mixing well. Blend in eggs.
  • To the butter and sugar mixture add flour mixture and pumpkin alternately, beginning and ending with flour mixture.
  • Stir in chocolate chips and 1/2 cup chopped walnuts.
  • Spoon into greased 9 x 5 inch loaf pan. Sprinkle with remaining 1/4 cup walnuts.
  • Bake at 350 degrees for 40 to 60 minutes. Test periodically with a toothpick or cake tester until it comes out clean.
  • Cool in pan for about 10 minutes, then remove and cool completely on wire rack.

5 ounces butter

1 tablespoon plus 1 teaspoon strong brewed coffee
1/2 teaspoon pure vanilla extract

Steps:

  • Grease an 8 x 4-inch loaf pan and preheat the oven to 350°F. Sift the flour with the baking powder and salt. Add the ground pecans and mix well. Cream the butter and sugars and add the egg yolks, milk, coffee, and vanilla. Beat the egg whites until stiff but not dry. Add the flour and pecans to the wet ingredients. When just combined, fold in the egg whites.
  • Pour the batter into the prepared pan and bake for 45 to 50 minutes, until done. (Insert a straw or cake tester into the center of the loaf. If it comes out clean, it's done, or if loaf has a springy feel when you press on it.) Allow to cool slightly, then glaze with Lemon Glaze.
