1 ⅛ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
¾ cup packed brown sugar
⅔ cup butter
1 tablespoon evaporated milk
½ teaspoon vanilla extract
1 large egg
1 cup chocolate chips
1 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, baking soda, baking powder, and salt in a medium bowl.
  • Beat brown sugar, butter, evaporated milk, and vanilla extract in a separate bowl until creamy. Beat in egg. Gradually mix in flour mixture. Stir in chocolate chips and pecans. Spoon into balls and place on cookie sheets about 1 1/2 to 2 inches apart.
  • Bake in the preheated oven until golden brown, about 10 minutes. Let cool for about 2 minutes before serving.

1 cup butter-flavored shortening
1 cup sugar
1/2 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped pecans
1 cup milk chocolate chips
3/4 cup peanut butter chips
3/4 cup English toffee bits or almond brickle chips
3/4 cup sweetened shredded coconut
2/3 cup white baking chips

Steps:

  • In a large bowl, cream shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in the remaining ingredients. , Drop by 1/4 cupfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until golden brown. Remove to wire racks.

1 box Duncan Hines Devils Food chocolate cake mix
½ cup unsalted butter, melted ((½ cup = 1 stick))
1 egg
1 tbsp vanilla extract
2 tbsp instant coffee or espresso (*ground unbrewed coffee will also work for this!)
1 cup chocolate chips
1 cup pecans, chopped
1 cup walnuts, chopped

Steps:

  • Preheat oven to 350°F and line baking sheet.
  • In a large bowl, or stand mixer stir cake/brownie mix, melted butter, egg, vanilla and coffee until well combined.
  • From there, stir in walnuts pecans and chocolate chips.
  • Scoop cookie dough in dome shapes on a lined or greased baking sheet spaced about 2 inches apart.
  • Small 1oz scoop bakes about 8 minutes when convection is on.Large 2oz scoop bakes 10-12 minutes when convection is on.
  • Leave to cool on baking sheet and store in air tight container.

Steps:

  • Preheat oven to 325 degrees. In a large bowl, whisk together sugar, cocoa, and salt. Stir in chocolate and pecans. Add egg whites and stir just until incorporated (do not overmix).
  • Drop dough by 1/4 cupfuls, 3 inches apart, onto 2 parchment-lined rimmed baking sheets. Bake until cookie tops are dry and crackled, about 25 minutes, rotating sheets halfway through. Transfer sheets to wire racks and let cookies cool completely. (To store, keep in an airtight container, up to 3 days.)

Absolutely the best cookies ever! I made enough to fill two gallon-size plastic bags and they were gone within a day. This recipe was a runner-up in a contest that was in the Paula Deen magazine. (Her recipe says this makes three dozen, but I came out with about eight dozen) I used chocolate covered toffee bits instead of the plain toffee bits and it was fantastic so don't worry if you can't find the plain ones. The cooking time is cumulative for all batches (and is approximate).

3 cups all-purpose flour
1 cup chopped pecans
2 teaspoons baking soda
2 teaspoons cream of tartar
1/2 teaspoon table salt
1/2 cup unsalted butter, softened
1/2 cup all-vegetable shortening
1 cup granulated sugar
1 cup firmly packed dark brown sugar
1/4 cup molasses
2 large eggs
2 teaspoons vanilla extract
2 cups semisweet chocolate morsels
1 (8 ounce) bag toffee pieces
1 cup turbinado sugar

Steps:

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  • In the work bowl of a food processor, add flour, pecans, baking soda, cream of tartar, and salt: process until nuts are finely ground into flour.
  • In a large bowl, beat butter, shortening, white and dark brown sugars at medium-high speed with an electric mixer until fluffy, about 3 minutes.
  • Add molasses, eggs, and vanilla; beat on low speed just until blended.
  • Gradually add flour mixture, beathing just until dough forms.
  • Stir in chocolate morsels and toffee bits.
  • Roll dough into 1-inch balls; then roll balls in turbinado sugar. Do not flatten. NOTE: You may need more turbinado sugar - just use more if you need more. I ended up with probably closer to 2 cups.
  • Place 2 inches apart on prepared baking sheets. Bake 10-12 minutes, or until lightly browned and slightly flattened.
  • Let cool on pans for 15 minutes. Remove from pans, and cool completely on wire racks.
  • NOTE: you may find it useful to rinse and dry hands every so often, as that helps the dough roll into a ball more easily.
