2 large eggs
1/2 cup unsweetened finely shredded coconut
1/2 cup finely chopped pecans
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
4 tilapia fillets (6 ounces each)
2 tablespoons canola oil

Steps:

  • In a shallow bowl, whisk eggs. In a separate shallow bowl, combine coconut, pecans, salt and pepper flakes. Dip fillets in eggs, then in coconut mixture, patting to help coating adhere., In a large skillet, heat oil over medium heat. In batches, add tilapia and cook until fish is lightly browned and just begins to flake easily with a fork, 2-3 minutes on each side.

This is my wife's favorite recipe for Tilapia. It is simple to prepare and the fish remains moist and riddled with flavor. A five star favorite when I entertain guests for dinner. I found the recipe somewhere on the internet, but not sure where.

4 tilapia fillets
1/2 cup mayonnaise (not low fat)
1/4 cup Dijon mustard
1 teaspoon butter (or Pam Spray)
1/4 cup finely chopped pecans

Steps:

  • Spread butter on metal baking pan (or spray with olive oil Pam).
  • Place filets on pan.
  • Combine mayo and Dijon and spread on filets.
  • Sprinkle with pecans.
  • Preheat oven to 375 and bake about 10 minutes unless filets are extra large, then add about 2 minutes.

1/3 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
3/4 cup pecans, finely chopped
1/4 teaspoon chili powder or 1/4 teaspoon cajun seasoning
10 ounces tilapia fillets
1/4 teaspoon chili powder or 1/4 teaspoon cajun seasoning
salt, pepper
2 tablespoons olive oil
5 ounces baby greens
1/4 small red onion, thinly sliced
6 -8 strawberries, thinly sliced
4 tablespoons balsamic dressing
2 tablespoons soft fresh goat cheese, crumbled
2 tablespoons candied pecans

Steps:

  • Prepare three shallow dishes as follows. In the first, place the flour, seasoned with some salt and pepper. In the second, beat the eggs. In the third, combine the panko, chile powder, and pecans.
  • Coat the fillets by dredging lightly in the flour, than the egg, then the panko mixture.
  • Heat the oil in a saute pan over medium heat and cook fish about 3 to 4 minutes each side until golden brown. Set aside and keep warm.
  • Toss salad ingredients and dressing together in a large bowl and divide onto two plates. Top with fish and garnish with cheese and candied pecans.

1 cup pecans
1 1/2 cups Italian seasoned breadcrumbs
2 tablespoons extra virgin olive oil
1 medium lemon

Steps:

  • Chop pecans really fine (easier to buy pecan dust if you can find it).
  • Mix pecans with bread crumbs, season further if you want (I keep it simple, just a little salt and pepper).
  • Rub olive oil on the tilapia and dip in breading mixture.
  • Bake at 400 degrees for about 15 minutes until flaky.
  • Slice lemon and serve with tilapia.
