PECAN-CRUSTED GOAT CHEESE LOG

1/4 cup bourbon
1/4 cup water
3 dried peach halves (about 2 ounces), coarsely chopped
1/2 cup toasted pecans
2 teaspoons Cajun seasoning
1 medium log fresh goat cheese (about 11 ounces)

Steps:

  • Warm the bourbon and water in a small saucepan, add the peaches, and set aside until plump, about 15 minutes.
  • Put the toasted pecans and Cajun seasoning in a mini chopper and pulse until the nuts are finely ground but not pasty. Spread the nut mixture on a large plate. Roll the goat cheese in the mixture, pressing firmly to coat the whole log generously.
  • Slice the cheese into rounds and arrange on a platter. Top with the chopped peaches and juices.

1 package (8 ounces) cream cheese, softened
2 cups shredded Colby cheese
2 cups shredded Monterey Jack cheese
1/4 cup mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon Worcestershire sauce
2 cups chopped pecans, toasted
Butter-flavored crackers

Steps:

  • In a large bowl, beat cream cheese until smooth. Stir in the shredded cheeses, mayonnaise, garlic powder, onion powder and Worcestershire sauce. Shape mixture into two logs, about 6 in. long. Roll in pecans, pressing down gently., Wrap each in plastic wrap; refrigerate for at least 2 hours or overnight. Serve with crackers.

  • Pour the pecans into the lined baking sheet and spread evenly. Pop it in the preheated oven for 5 minutes then flip them using a spatula before putting it back for another 5 minutes. Take it out of the oven and leave to cool. Once completely cooled, start chopping the pecans then set it aside.
  • Unpack the goat cheese and place in a shallow bowl. Pour honey on it and spread it all over the log with your fingers until it’s well coated with honey.
  • Transfer the chopped pecans to another plate. Now roll your honeyed goat cheese in it until the pecans for a crust. Use your fingers to gently press down the pecans and cover all surfaces of the log with it.
