PECAN CRUSTED TUNA WITH LEMON BUTTER

Steps:
- Melt butter in a small saucepan until slightly browned. Add parsley and lemon juice.
- Sprinkle fish with salt and pepper. In cast iron skillet, heat 1 tbsp butter until hot. Sear fish 3 minutes on each side--you can cook longer if you like your fish well done. Spoon 1/4 cup of pecan mixture over the top of the fish. Place in oven set on broil 5 1/2" from the heat. Leave oven door partially open. Broil until slightly browned. Transfer to a plate and drizzle with the lemon butter.
- If you don't have cast iron skillets, use your regular nonstick pan to cook the fish. Use a baking sheet and either coat it with nonstick spray or pour the drippings from the pan on it and then place the fish on that to broil.

- Lightly beat egg on a plate. On another plate, combine pecans, ginger and cayenne pepper. Salt and pepper to taste. Dip tuna steaks in egg, then in pecan mixture. Heat oil in a skillet over medium heat. Cook tuna for 4 to 5 minutes per side or until fish flakes easily with a fork. Drizzle with lemon juice to taste. Serve with garlic rapini and roasted potatoes.

- In a small sauce pan, heat sesame oil.
- Stir in the green onion and garlic and cook, stirring, for about 1 minute.
- Add remaining ingredients and heat on medium until reduced by half.
- Sprinkle the tuna with the pepper, salt, and sesame seeds.
- Rub into meat to create crust.
- Heat cooking oil in a large skillet set over medium high.
- Add the tuna and cook until almost the desired degree of doneness.
- The tuna will continue to cook slightly after it is removed from the pan.
- Two or 3 minutes on each side should result in a pink center.
- Drizzle sauce over the tuna and serve immediately.
