1 medium firm ripe pear, finely chopped
1 scallion, white and green separated, finely chopped

⅓ cup finely chopped toasted pecans

Steps:

  • Stir cream cheese, Cheddar, pear, scallion white, salt, and pepper together in a medium bowl.
  • Coat a large piece of plastic wrap with cooking spray. Scoop the cheese mixture onto it. Using the plastic wrap to help you, form the cheese mixture into a ball, then completely wrap in plastic. Refrigerate for at least 1 hour and up to 2 days.
  • Just before serving, combine pecans and the reserved scallion greens in a shallow dish. Roll the cheese ball in the mixture, pressing to adhere.

1 8 oz. package of Cream Cheese
1/4 cup Sour Cream
1 cup Shredded Cheese of your choice
1/4 teaspoon Onion Powder
1/4 teaspoon Garlic Powder
Pepper (to taste)
1/2 cup Pecans (chopped)
1/4 cup Pecans (chopped) or 1/4 cup Dried Cranberries (chopped)

Steps:

  • Add cream cheese and sour cream in a mixing bowl and beat until smooth.
  • Add in grated cheese, garlic powder, onion powder, and pepper. Stir together until completely mixed.
  • Layout a large piece of plastic wrap on the counter. Spoon cheese mixture onto plastic wrap forming a ball (as best you can). Bring up sides of plastic wrap to form a ball shape. Make sure the cheese is completely covered. Use your hands to shape the mixture into a ball. Put in the refrigerator and chill cheese ball for at least two hours.
  • Take Cheese Ball out of the refrigerator and remove the plastic wrap. Place the cheese ball on a plate and cover it with chopped pecans or a combination pecans and dried cranberries. Use a spoon or your fingers to press the pecans onto the cheese ball. You can try rolling the cheese ball in the chopped pecans, but it is sometimes hard to roll it and you don't want the cheese ball to lose its shape.
  • Store in the refrigerator until it is time to serve.

Steps:

  • To a large stand mixer on low speed add the cream cheese, white cheddar cheese, cranberries, first 1/2 cup pecans, green onions and garlic powder until smooth, about 1-2 minutes.
  • Put mixture in the refrigerator for 1 hour to chill.
  • Lay a large plastic wrap square on your counter and put the mixture on it, then gather the sides and bunch them up to help shape the mixture into a ball.
  • Add the remaining 1/2 cup finely chopped pecans to a large bowl and roll the cheese ball into the chopped pecans then serve with crackers.

8 ounces sharp cheddar cheese (grated)
2 teaspoons onion (grated)
2 teaspoons Worcestershire sauce
2 teaspoons garlic (finely minced)
2 cups pecans (finely chopped; may also substitute walnuts)

Steps:

  • Gather the ingredients.
  • Combine cream cheese and cheddar cheese and beat with an electric mixer.
  • Add onion, Worcestershire sauce, and garlic. Mix well. Cover and chill thoroughly in refrigerator, until firm (this usually takes a few hours).
  • Shape cheese into a ball and cover completely and tightly with a generous amount of plastic wrap.
  • Cover once more with aluminum foil. Refrigerate ball for at least 24 hours (and up to three days) before serving.
  • Remove from refrigerator 2 hours before serving. Take off plastic wrap and foil. Roll ball in finely chopped pecans until entire outer surface is completely covered with nuts.
  • Place ball in center of a serving dish, and surround with assorted crackers and veggies.
