ORANGE PECAN COOKIES

Delicate enough for afternoon tea with tea in china cups, but hearty enough to serve with a glass of milk after a tough day at school, Orange Pecan Cookies make the perfect treat anytime.

Provided by slightly adapted from The Betty Crocker Cooky Book

½ cup softened butter (I prefer to use unsalted butter if possible.)
1 cup packed brown sugar
1 egg
1 tablespoon grated orange rind
1 teaspoon vanilla
1¾ cups all purpose flour (All purpose flour is also known as plain flour)
¼ teaspoon salt (This can be omitted if you are on a low salt diet.)
½ teaspoon baking soda (Baking soda is also known as bicarbonate of soda or bicarb.)
¾ cup chopped pecans

Steps:

  • Cream the butter and sugar together in a large bowl..
  • Add the egg, and then the orange rind and vanilla. Set aside.
  • Sift the flour, salt and baking soda into a medium bowl. Stir through the chopped pecans.
  • Add the flour and pecan mixture to the creamed mixture and stir together very thoroughly.
  • To form the dough into 'logs', take a large piece of waxed or greaseproof paper or baking parchment and sprinkle a little flour on it. Flour your hands a bit as well.
  • Take half the cookie dough and put it in the centre of the paper.
  • Using the paper to help you, shape the dough into a log about 11 to 12 inches (28 to 30 centimetres) long.
  • Repeat with another piece of paper and the rest of the dough.
  • Wrap the paper or baking parchment tightly round each log of dough.
  • Place the cookie dough logs in a bag and put them the refrigerator for at least 6 hours or overnight.
  • The next day, either freeze the dough, or bake it from chilled.
  • When you want to bake the frozen or chilled dough, preheat the oven to 350℉ (about 160℃ for a fan oven).
  • Remove the dough logs from the fridge or freezer. You might want to give the logs a bit of a roll on the counter before you open up the paper just to round the edges. Sometimes the bottom goes a bit flat when they sit in the fridge.
  • If the logs are frozen leave them for five minutes or so before you attempt to slice them, unless you have very strong arms and a very sharp knife!
  • Slice the cookie logs about one quarter inch thick (about half a centimetre) and place on baking sheets.
  • These cookies don't spread all that much, but be sure to space them at least an inch apart. Each log will make about 24 to 28 cookies depending on how thickly you slice them.
  • Bake the cookies for 8 to 10 minutes from chilled (or 11 to 14 minutes from frozen) until they are lightly golden. It's worth keeping an eye on them because they can suddenly brown up very fast.
  • Remove the baking sheets from the oven and leave the cookies to cool on the baking sheets for at least five minutes.
  • Then carefully remove the cookies from the baking sheets and cool on wire racks.

2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter
¾ cup white sugar
¾ cup brown sugar, packed
1 teaspoon vanilla extract
2 eggs
1 cup chopped pecans
1 cup rolled oats
1 cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
1 ½ cups confectioners' sugar
½ cup freshly squeezed orange juice
1 orange, zested
1 tablespoon butter

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Sift the flour, baking soda, and salt together in a bowl.
  • In a large bowl, beat together the butter, white and brown sugars, and vanilla extract with an electric mixer until the mixture is creamy and well blended. Beat in eggs, one at a time, and then gradually beat in the flour just until the mixture makes a soft dough. Stir in the pecans, rolled oats, and cranberries, and drop by heaping spoonfuls onto ungreased baking sheets.
  • Bake in the preheated oven until the cookies are set and the edges are slightly brown, 10 to 12 minutes. Let the cookies cool for 1 minute on baking sheets before removing to wire racks to finish cooling. Glaze cookies while still a little warm.
  • Place the confectioners' sugar and orange juice in a microwave-safe bowl, and stir to dissolve the sugar. Stir in the orange zest and butter, and microwave on medium power until the butter melts and the mixture is warm, about 30 seconds. Stir the warm glaze until smooth, and drizzle over cookies.

This is one of my most treasured recipes. Flaky refrig biscuits are filled with cream cheese, dredged in butter, rolled sugar, pecans, orange zest. Baked in a bundt pan, the loaf is inverted and drizzled with a glaze. Pull off a danish and slip into bliss.

3/4 cup sugar
1/2 cup pecans, chopped
1 tablespoon orange zest
2 (11 ounce) cans ready-to-bake refrigerated buttermilk flaky biscuits
3 ounces cream cheese
1/2 cup butter, melted
1 cup powdered sugar
2 tablespoons orange juice

Steps:

  • Combine sugar, pecans, orange zest.
  • Separate each biscuit, (there shoud be 20 biscuts - so you will have 40 layers).
  • Cut cream cheese into 20 pieces.
  • Place one piece of cream cheese on each of 20 biscuit halves.
  • Top with remaining biscuits halves and pinch the edges to seal them.
  • Dip filled biscuits in melted butter.
  • Dredge in the sugar mixture. I do have to make extra mixture sometimes.
  • Stand each biscuit on it's edge in a lightly greased 12-cup bundt pan, spacing evenly, but together.
  • Drizzle with remaining butter and sugar mixture.
  • Bake at 350 degrees for 45 minutes, or until golden brown.
  • Immediately invert onto a wire rack.
  • Combine powdered sugar and orange juice, and drizzle over the danish.
  • Serve immediately.

3 tablespoons frozen orange juice concentrate, thawed
2 tablespoons honey
For biscuits
3 cups unbleached all purpose flour
3 1/2 teaspoons baking powder
2 teaspoons grated orange peel
3/4 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon ground ginger
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces
3/4 cup finely chopped pecans (about 3 ounces)
1 cup plain nonfat yogurt
3 tablespoons honey

Steps:

  • Make glaze:
  • Mix in orange juice and honey in heavy small saucepan; bring to boil. Reduce heat; simmer until slightly thickened, about 3 minutes. Set aside.
  • Make biscuits:
  • Position rack in center of oven and preheat to 425°F. Combine flour, baking powder, orange peel, baking soda, salt and ginger in large bowl. Add butter and rub in with fingertips until mixture resembles coarse meal. Mix in 1/2 cup chopped pecans. Whisk yogurt and 3 tablespoons honey in small bowl to blend. Add yogurt mixture to dry ingredients; stir with fork until mist dough forms. Turn out dough onto floured surface and knead gently just until smooth, about 10 turns (do not overmix).
  • Roll out dough to 10-inch-diameter round (about 3 /4 inch thick). Using 2 1/2-inch-diameter biscuit or cookie cutter, cut out biscuits. Gather scraps; roll out to 3/4-inch thickness and cut out additional biscuits. Transfer biscuits to large ungreased baking sheet. Brush tops of biscuits twice with glaze; sprinkle with 1/4 cup pecans. Bake until puffed and golden brown and tester inserted into center comes out clean, about 18 minutes. Serve warm. (Can be prepared 6 hours ahead. Let stand at room temperature. Rewarm in 350°F oven just until heated through, about 5 minutes.)
