I love turnips, raw, or cooked any way. I just found this recipe last week surfing the internet and immediately made it. I love it, if you like turnips, you will too. I used low fat mayo and sour cream. cook time is chill time.

1/2 cup mayonnaise
3 tablespoons sour cream
2 teaspoons tarragon vinegar, I used white wine vinegar and a dash of dried tarragon
1 teaspoon prepared Dijon mustard
1 teaspoon sugar
1 dash salt
1/4 teaspoon celery seed, I did not use
1/4 teaspoon ground black pepper
1 teaspoon chopped fresh dill or 1/2 teaspoon dried dill
1 lb turnip, peeled and shredded (about 4 cups)

Steps:

  • In a large bowl, stir mayo, sour cream, vinegar, mustard, sugar, salt and pepper.
  • Add turnips and mix well.
  • Refrigerate 6 hours.

Peasant Turnip Slaw With Sweet Hot Mustard Dressing image

I grow turnips for their delicious greens. But I get the roots as a by-product and need to find something to use them for. Not being too fond of cooked, mashed turnips, I'm playing with salad variations. This one is tangy and sweet with just a bit of bite from the sweet hot mustard. "Cooking" time is chilling time.

1/4 head cabbage
6 -8 turnips (small to medium)
1 carrot
1/4 cup finely-sliced celery
2 tablespoons sugar
1/4 cup white vinegar
1/4 cup canola oil
1/2 tablespoon sweet-hot mustard
1 pinch celery seed (optional)
salt and pepper

Steps:

  • Peel turnips and carrot. Shred or julienne cut all the vegetables.
  • Toss veggies with sugar.
  • Mix dressing ingredients, whipping with a fork or a whisk until the mustard is dissolved.
  • Toss dressing with veggies.
  • Chill at least one hour to blend flavors.
  • Note: Can substitute Splenda or preferred artificial sweetener to make this diabetic-friendly.

SWEET, HOT MUSTARD SLAW

I enjoy a wide variety of coleslaws, but this mustard slaw may be my fave. The combo of hot and sweet has a proven track record for pleasing palates. Salting and massaging your cabbage first (aka 'cassage') will help draw out water, which sweetens up the flavor, as well as produce a flexible, yet still crunchy texture, which I think is lacking in many other 'chop and mix' recipes. Garnished here with chives and chive blossoms.

1 tablespoon kosher salt
1 pound cabbage
¼ cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon coarse-grain mustard
1 tablespoon honey, or more to taste
½ teaspoon cayenne pepper, or to taste
1 tablespoon apple cider vinegar

Steps:

  • Halve and quarter the head of cabbage and cut out the core. Slice across into 1/2-inch ribbons. Place cabbage in a bowl and sprinkle in salt. Massage cabbage until it begins to soften, about 1 minute. Let rest for 10 minutes, tossing occasionally. Transfer cabbage to a colander and rinse well under cold water. Let drain thoroughly.
  • Mix mayonnaise, Dijon mustard, grain mustard, honey, cayenne pepper, and vinegar together in a large bowl.
  • Squeeze cabbage as dry as possible and add to the dressing. Mix until thoroughly combined. Cover top in plastic wrap and refrigerate at least 1 hour. Toss and taste before serving.

MOM'S "HOT" COLESLAW

A sweet yet tangy slaw - so good at a cookout, or any time! Don't let the cooking method scare you off - it's easy and never fails!

1 head of cabbage, shredded or 1 bag pre-shredded cabbage
1 carrot, grated
2 green onions, chopped
1/2 c vinegar
1/2 c vegetable oil
1/3 c sugar plus
3 Tbsp sugar
1 tsp salt
1 Tbsp yellow mustard

Steps:

  • 1. Combine cabbage, carrot and onion in large bowl (preferably one with a cover).
  • 2. Place vinegar, oil, all the sugar, salt, and mustard into saucepan. Bring to a full boil.
  • 3. Pour hot vinegar mixture over cabbage. Toss well (I use a bowl with a lid, and "shake" as my version of tossing).
  • 4. Chill, covered in the fridge. If you give it a toss every day, it will keep for a couple of weeks.

I was on a hunt for a recipe that was similar to one that we love from a restaurant called Oregano's in Arizona...I found this one on allrecipes ...it's real close...I added an option (in step 5) this makes them more like the "Italian Gold Wings" that the restaurant serves...I posted another photo they are the ones on the purple plate...

2 lbs chicken wings (separated and tips removed)
salt
2 tablespoons Dijon mustard
2 teaspoons prepared yellow mustard
3 tablespoons honey
2 teaspoons cider vinegar
salt and pepper
1 teaspoon hot pepper sauce

Steps:

  • Preheat oven to 450°F.
  • Line a baking sheet with aluminum foil; coat the foil with cooking spray.
  • Arrange the wings on the prepared baking sheet so they do not touch; season with salt.
  • Bake in preheated oven until browned and crispy on top, about 20 minutes.
  • Flip the wings with tongs and cook until no longer pink in the center and the juices run clear, about 20 minutes more. (option: toss the wings after cooking all the way though in hot oil -- 350° for 2-3 minutes to crisp them up -- do a quick drain before continuing with the recipe).
  • Stir together the Dijon mustard, yellow mustard, honey, cider vinegar, salt, pepper and hot sauce in large mixing bowl.
  • Add the wings to the bowl and toss with a spatula to coat evenly.
  • Allow to sit for abut five minutes and toss again to re-coat.
  • Transfer to a plate to serve.

My family's way of "fixin'"greens. You can use any kind of green or a mix. So simple but so good. Serve with cornbread for soppin' up the pot liquor! Measurements are approximates.

4 bunches greens
1/3 cup cold bacon grease (3 big spoonfuls)
1/2 cup ham stock or 1/2 cup chicken broth
salt and pepper
2 pinches sugar

Steps:

  • Fill sink with cold water.
  • Put in greens, making sure they have room to float.
  • The greens will rise to the top, while the dirt will sink.
  • Let greens sit in water for about 20 minutes.
  • Scoop out greens being careful not to stir up the dirt on bottom.
  • If they still look dirty, change water and repeat process.
  • Finish the cleaning by rinsing under running water.
  • Tear greens into pieces, throwing away thick veins and stems.
  • In a large pot, heat the bacon grease over med-high.
  • Add the greens and toss well with bacon grease for a couple of minutes.
  • Add ham stock, salt and pepper and sugar and stir.
  • Cover and simmer gently until very tender (DO NOT BOIL).
  • As the greens cook, they will produce a lot of liquid that will cook down. Add water as needed to prevent burning, but only use what is necessary so your pot liquor won't be watered down.
  • Cook time will vary but usually about 3 hours The flavor of collards is much better if you can cook for about 6 hours.

I found this recipe in a local newspaper when we moved to Arkansas almost 20 years ago. The recipe was said to be so good that even people "burned out" on turnips would like it. I'd never heard of slaw made from turnips, but I tried it and now my husband likes it better than cabbage slaw.
