CHARD & POTAOES | BLITVA | CROATIAN RECIPES
A hearty and traditional peasant dish from the Dalmatian peoples of the Croatian coast. Blitva is a combination of potatoes, chard, garlic, and olive oil that is a perfect autumn and winter accompaniment to any meal but also a great unique side dish for your holiday Thanksgiving and Christmas dinners. My recipe here makes enough for 8 people or for leftovers!

Steps:
- Peel and wash the potatoes.
- Set them to boil in a large pot of salted water and allow to boil.
- As the potatoes boil, seperate the chard stem and leaf. Chop the stems and leaves roughly.
- After the potatoes have boiled for 20 minutes, add the chard stems to the water.
- Allow the potatoes and stems to boil for another 10 minutes.
- Add the chard greens and allow to boil until wilted (60 seconds).
- Pour out the potatoes and chard into a colander and allow to drain very well.
- As the potatoes and chard drain, heat the butter and olive oil up up on the stovetop over medium heat. Use either the same pot that you used to boil the vegetables, or a different heavy-bottomed one, like the French oven pictured, which will then double as a serving dish too.
- Add the garlic to the oil and butter mixture, allow to become fragrent (60 seconds).
- Immediately add the potatoes and chard into the oil and butter. Add a big pinch of salt and lots of freshly cracked black pepper. Stir and roughly mash the potatoes. You can mash them into a finer puree if you would like, but I prefer to keep the potatoes more rustic. It suits the dish better.
- Allow to come to room temeprature, check if salt and pepper is to taste, and serve.
PEASANTS POTATOES - FRIED POTATOES & ONIONS.
Classic breakfast/brunch home fried potatoes. Liberal amounts of paprika & crispy crust make this dish. I serve with grits & an omelette. I use the cheapest potatoes available, $1 for a 5lb bag of Idaho's. Most people use red or Yukon gold. I've tried all, the baking potatoes make great fried potatoes. I don't boil to precook before frying - I use the microwave, simpler & faster.

Steps:
- Potatoes, skin & cube 1/2 inch bits. 1 potato to 16 cubes.
- put in bowl, place in 1200 watt microwave for 8 minutes at 1/2 power.
- take bowl out of microwave. Add 1/4 cup oil, salt, pepper, & paprika to potatoes & toss.
- Return to microwave, cook 3 additional minutes at 1/2 power.
- put 12" fry pan on stove at near high. Add 1/4 cup oil.
- put potatoes into hot oil.
- Once potatoes are cooked on one side add garlic & onions.
- toss ingredients.
- cook till done.

PEASANT POTATOES
This comes from my crock-pot cookbook. I serve it with garlic bread and extra parmesan cheese. Sometimes even a salad.

Steps:
- Slice sausage into 3/4 inch thick slices.
- Cut potatoes into cubes 1 1/2 to 2 inch pieces.
- Dice or slice red pepper.
- Melt butter over medium heat.
- Add onion and garlic, cook and stir 5 minutes or until onion is translucent.
- Stir in sausage and oregano.
- Cook 5 minutes.
- Stir in potatoes, and add salt and pepper to taste, mix well.
- Transfer to crock-pot or slow cooker.
- Cover and cook on low 6 to 8 hours or on high 3 to 4 hours stirring every hour.
- Add cabbage and bell pepper last 30 minutes of cooking.
- Top with parmesan cheese before serving.

- Wash the potatoes and leeks. Peel the potatoes, cut in quarters lengthwise and slice into manageable pieces. Peel and chop the onions and leeks. Slice the bacon crosswise into small strips (lardons).
- In a large soup pot, heat the olive oil over medium heat. Add the bacon, onions, and leeks. Cook, stirring for about 5/10 minutes until the vegetables and bacon are a little brown.
- Add 1L of water, bring to a boil and add the potatoes, Provence herbs, French mustard, and cube bouillon chicken. Mix well, turn down the heat and let the soup simmer until the vegetables are tender for about half an hour.
- Taste the soup before adding salt as the soup is already salty with the mustard and bacon. Season with pepper. Ladle the soup into shallow soup plates or bowls and top with grated cheese (Emmental/gruyère or comté). Accompany this soup with a piece of bread with French cheese.
