Steps:
- Heat oil in a skillet over medium heat. Cook onion until soft and translucent, 10 to 15 minutes. Stir in honey, thyme, salt, and pepper; continue to cook until golden brown, about 10 minutes more. Add pears and cook until just softened, 2 to 3 minutes. Remove from heat and set aside.
- Heat a nonstick skillet over medium heat and grease with nonstick cooking spray. Place 1 tortilla in the skillet and top with 1/4 of the Brie. Add 1/4 of the onion-pear mixture and cover with a second tortilla. Weigh down quesadilla with a smaller skillet or plate and cook until lightly browned on the bottom, 2 to 3 minutes. Flip and continue cooking until browned on the other side, 2 to 3 minutes more. Transfer to a plate.
- Repeat with remaining tortillas, Brie cheese, and onion-pear mixture. Slice quesadillas into wedges, or wrap in foil to take along for a picnic.

Steps:
- Preheat oven to 325 degrees. Place walnuts on a baking sheet, and toast in the oven 10 minutes. Remove from oven, and let cool.
- In a food processor, process 1/2 cup of the walnuts 10 seconds, until finely chopped. Remove to a bowl, and set aside. Place the remaining walnuts, basil leaves, Parmesan cheese and 2 tablespoons olive oil in the food processor. Process 15 seconds. Scrape down sides of bowl, and process 15 seconds more. Add 4 tablespoons olive oil, red wine vinegar and 1 tablespoon raspberry vinegar, and process 15 seconds. Transfer to a bowl, season to taste with salt and pepper, and set aside.
- In a 5-quart saucepan, bring to a boil 2 quarts water seasoned with 2 teaspoons salt. Add wheat berries and simmer 1 hour, until they are cooked but still quite crunchy. Drain, and transfer to a large bowl. Add the currants, 2 tablespoons olive oil and 2 tablespoons raspberry vinegar; stir to combine. Season to taste with salt and pepper. Let cool 30 minutes, then stir in the reserved chopped walnuts. Set aside.
- In a large nonstick saute pan, heat 2 tablespoons olive oil over medium heat. Add onions, and season lightly with salt and pepper. Cook 30 to 40 minutes, until golden and caramelized, stirring occasionally to prevent onions from sticking to the pan. Add 1/2 cup water to the caramelized onions, bring to a boil and then transfer onions and liquid to a large bowl.
- While the onions are cooking, combine lemon juice with 4 cups cold water in a medium bowl. Core and quarter the pears. Slice each quarter lengthwise into 1/4-inch-thick slices, and place in the lemon water. Set aside until onions are done.
- Drain pears in a colander, rinse under cold water and shake dry. Add pears to the onions, and stir gently to combine. Season to taste with salt. Cover with plastic wrap, and set aside for 10 minutes.
- To assemble, place equal amounts of the wheat berry mixture in a ring shape on the outer edges of 4 plates. Place equal amounts of arugula inside each ring of wheat berries. Dress arugula and wheat berries with 2 tablespoons dressing. Place equal amounts of the pear-onion mixture on the arugula, then sprinkle pears and onions with 1 more tablespoon of dressing. Serve immediately.

- Start with the caramelized onions. Heat olive oil in a non-stick skillet (preferably with a thick bottom) over medium heat. When hot, add onions and stir to coat them with oil.
- After one minute, add a pinch of salt and 2 tsp honey and stir well. Reduce to low heat and cook onions for 30 to 40 minutes, stirring often to make sure they don't stick to the skillet and burn. You have to be patient! Do not turn the heat up to speed up the process, you'd only end up with burned onions. Instead, you want sweet, super tender onions that will melt in your mouth.

- Melt butter with olive oil in a large saute pan over medium heat. Add onions and pears to the pan along with honey, vinegar and salt. Toss to coat. Add in sprigs of fresh thyme. Reduce the heat to medium-low and stir occasionally to prevent burning and for even cooking. This will take 45-50 minutes to get soft and caramelized.
- Meanwhile, make your steak seasoning by combining 1-1/2 tsp salt, cracked pepper, garlic powder, cumin, mustard and brown sugar in a small bowl. Liberally season both sides of the flank steak.
- In a small saucepan, melt the butter over medium-low heat. Once it's nice a hot, add the minced garlic and immediately remove it from the heat.
- Dip the inside surface of your slider rolls into the garlic butter and toast them buttered-side up in a 350 degree oven for 5-6 minutes or buttered-side down in a nonstick skillet over medium heat. The idea is to get a little crunch on the surface but have a warm, soft interior.

From crumbkisses.com
Estimated Reading Time 3 mins
- Caramelize your onions - melt your butter in a skillet over medium-low heat. Add all the onions to the pan and stir them gently to coat with butter. Check the onions every 5 to 10 minutes. Stir the onions and scrape up any fond that forms on the bottom of the skillet. Cook for about 40 minutes until onions are very brown and caramelized. When your onions have finished cooking, pour in your balsamic vinegar. As the liquid bubbles, scrape up the bits on the bottom of pan and stir it into the onions. Use additional liquid as necessary to scrape up all the bits. Salt the onions to taste.
- For the brie, cut off top rind of brie with a sharp knife (it’s okay if you can’t get the rind off in one piece; brie will smooth out as it bakes).
- Line a baking sheet with parchment paper and place the wheel of Brie in the center. Layer on the pear slices, then add caramelized onions, sprinkle with walnuts, and drizzle generously with honey.
- Bake until cheese is melted, 15 minutes or so. Remove from oven and let rest to firm up slightly, about 5 minutes.

- In a large, heavy-bottomed pot, melt butter and oil over medium-high heat until foaming subsides. Add onions and salt and cook until onions begin to soften and release their liquid, about 5 minutes. Lower heat and cook, stirring often, until onions are soft and just beginning to brown, about 15 minutes. Add diced pears and continue cooking, stirring often, until mixture is golden, about 40 minutes.
- Stir in brown sugar, mustard, vinegar, water, thyme, and pepper. Bring to a bubble, lower heat, and simmer until pears are soft and jam is thick and glossy, about 15-20 minutes. If desired, use a potato masher to break up fruit to reach your preferred consistency (I like to leave my jam chunky). Jam is best served slightly warm or at room temperature.
