WINTER FRUIT SALAD

Steps:
- For the dressing: In a small bowl, whisk together the honey, zest of the lemon and lime, and ¼ cup lime juice. (If honey is too cold for the mixture to come together you can microwave it quickly.) Whisk in the poppy seeds and set aside.
- For the fruit salad: In a large bowl toss together all of the prepared fruit, setting aside about ½ cup of the pomegranate arils. Pour prepared Honey-Lime dressing over the fruit and gently toss to coat. Top with remaining ½ cup of pomegranate aril seeds and mint leaves if using.
- Serve and enjoy!
PEAR OR PINEAPPLE SALAD
I grew up eating this simple fruit dish as a side to many meals. It is quick and easy to prepare and adds a light touch to any meal. The toppings are easily adjusted to your own personal tastes. I use mayo and have tried Miracle Whip, but did not care for the Miracle Whip (my personal preference). Servings depend on the pieces of fruit in the can. Hope you enjoy!

- Drain the fruit.
- If using pear halves, place the fruit inside up on a fruit plate.
- If using pineapple rings, place the ring on a fruit plate.

- Drain pineapple, reserving juice in a 1-cup measuring cup. In a large bowl, combine the pineapple, pears, peaches and grapes. Cover and refrigerate. , Add enough water to pineapple juice to measure 1 cup. Pour into a small saucepan. Whisk in pudding mix. Bring to a boil over medium heat, stirring constantly. Remove from heat; set aside to cool to room temperature., Slice bananas into a small bowl. Drizzle with lemon juice; gently toss to coast. Let stand for 5 minutes; drain. Add bananas and cherries to chilled fruit. Add cooled pudding; toss gently to combine. Refrigerate until serving. Refrigerate leftovers.

A "must" at our family reunions is this easy make-ahead gelatin salad. Try decorating the top with maraschino cherries. The red and lime-green color is especially pretty for the holidays.

- Drain pears, reserving juice; set pears aside. In a small saucepan, bring juice to a boil. Stir in gelatin until dissolved. Remove from the heat; cool slightly. , In a food processor, combine pears and cream cheese; cover and process until smooth. Transfer to a large bowl; stir in gelatin mixture until blended. Stir in the pineapple and 3/4 cup pecans. Fold in whipped topping. , Pour into an ungreased 11x7-in. dish. Refrigerate until set. Sprinkle with remaining pecans. Cut into squares.
