PENNE ALLA VODKA (BEST VODKA SAUCE!)

Perfectly hearty and tender penne pasta is tossed with a creamy and vibrant, San Marzano tomato based and vodka infused sauce that's seasoned with fresh herbs and parmesan. Talk about delicious dinner recipe!

1 (28 oz) can San Marzano tomatoes, (crushed finely with hands*)
2 Tbsp extra virgin olive oil
1/2 cup minced yellow onion
3 oz. proscuitto (or pancetta, diced (optional))
1 Tbsp minced garlic ((3 cloves))
Salt and freshly ground black pepper
1/2 cup vodka
1/4 tsp red pepper flakes, (more or less to taste)
2/3 cup heavy cream
1/4 cup finely shredded parmesan cheese, (plus more for serving)
1 Tbsp chopped fresh oregano
1/4 cup chopped fresh basil
14 oz. penne pasta, (plus reserved pasta water for thinning sauce as needed)

Steps:

  • Bring a pot of water to a boil to cook pasta. Season water with salt.
  • Heat oil in a large pot over medium heat. Add onion and prosciutto saute 4 - 5 minutes, add garlic and red pepper flakes and saute 1 minute longer.
  • Remove pan from heat and add tomatoes, vodka, season with salt and pepper to taste. Return to medium-high heat, bring to a simmer then reduce heat to medium-low and let simmer until strong alcohol scent has cooked off, about 15 minutes**, stirring occasionally.
  • Meanwhile cook pasta according to package directions. Reserve 1/2 cup pasta water and drain pasta.
  • Stir cream into sauce and let just heat through, about 1 minute. Stir in parmesan, basil and oregano.
  • Add drained pasta to pot with sauce, toss to coat, while thinning sauce with a little pasta water as needed. Serve warm with more parmesan and garnish with more basil if desired.

Steps:

  • In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in tomatoes and vodka. Bring to a boil. Reduce heat; simmer, uncovered, for 30-35 minutes or until slightly thickened, stirring occasionally., Meanwhile, cook penne according to package directions., Stir the pesto, salt and pepper flakes into tomato mixture. In a small bowl, combine flour and cream until smooth; stir into pan. Add milk. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. Drain penne; serve with sauce. 1 bag fresh red or white pearl onions
1 tablespoon EVOO Extra Virgin Olive Oil
2 tablespoons butter
2 to 3 cloves garlic
finely chopped
Salt and pepper
1/2 cup vodka
1 28-ounce can crushed tomatoes
drained
1 cup cream
1 box penne rigate
1/2 cup baby peas
a small handful
1/4 cup tarragon
chopped
1/2 cup basil leaves
thinly sliced or torn
Parmigiano-Reggiano cheese
grated

Steps:

  • Bring a medium-size pot of water to a boil
  • Add pearl onions and boil 3 minutes
  • Drain, cool and trim root ends
  • Pop onions out of the skins
  • Place a large pot of water over high heat for the pasta
  • Heat a deep saucepan or skillet over medium heat with EVOO and butter
  • Add onions and garlic to skillet, season with salt and pepper
  • Add vodka and reduce a minute or 2
  • Add tomatoes and stir
  • Heat through then add cream and let reduce at a low, bubbling simmer while pasta cooks
  • Cook pasta in boiling, salted water to al dente and drain
  • Add peas and herbs to pasta sauce and stir to heat through, 1-2 minutes
  • Add pasta to sauce and toss 1 minute to combine
  • Serve pasta with grated Parmigiano-Reggiano cheese at the table

I found this delicious recipe on a bag of pearled onions. It is fabulously rich and easy and a total crowd pleaser! I added about 3/4 of a cup of chopped cooked ham to the recipe (along with the cream) with fantastic results. I plan on trying it with left over grilled chicken as well.

10 ounces white pearl onions, peeled and chopped
2 tablespoons olive oil
3 garlic cloves, minced (more or less, to taste)
1/2 teaspoon crushed hot red pepper flakes or 4 drops Tabasco sauce, to taste
1/2 cup vodka
16 ounces chopped tomatoes (preferably organic)
1 cup cream (or half and half)

Steps:

  • Cook dry penne in a large pot until al dente.
  • Halve onions and sauté in olive oil with garlic and red pepper flakes over medium heat. When onions are translucent, add vodka and cook over moderately-high heat for 4 minutes.
  • Add tomatoes and cook to reduce liquid about 15 minutes. Season with salt and pepper and add cream. Let simmer for about 5 minutes, then mix in cooked penne.
  • Sprinkle Parmesan over top and serve immediately.

1 pound uncooked penne pasta
¼ cup extra virgin olive oil
4 cloves garlic, minced
½ teaspoon crushed red pepper flakes
1 (28 ounce) can crushed tomatoes

½ cup heavy whipping cream
¼ cup chopped fresh parsley
2 (3.5 ounce) links sweet Italian sausage

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In large skillet, heat oil over moderate heat. Remove casing from sausage and add to skillet. Cook, breaking up the meat, until brown. Add garlic and red pepper and cook, stirring until garlic is golden brown.

One of the best and easiest recipes I have tried. You can find pancetta at any good Italian deli, try not to substitute as it makes the dish. This is also very good with shrimp added in the last few minutes of simmering. If you like spice, add a dash or 2 of red pepper flakes.

2 tablespoons butter
¼ pound thinly sliced pancetta bacon, chopped
⅓ cup vodka
½ cup heavy whipping cream
1 ½ cups tomato sauce
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Meanwhile, melt butter or margarine in a large skillet over medium heat. Add pancetta, and saute until lightly browned. Add vodka and stir until it is reduced by half, about 4 to 5 minutes. Stir in tomato sauce and cream. Simmer uncovered for 10 to 12 minutes. Stir every few minutes.

1/2 cup Vodka
1 16oz can Chopped Tomatoes
1 tbsp Olive Oil
1 1/2lb. Penne
Salt and Pepper to taste

Steps:

  • Saute the onions in oil over low heat. When onions are translucent, add tomatoes and cook to reduce liquid for about 15 minutes. Season with Salt and Pepper. Add Vodka and stir, then add cream. Let simmer for about 5 minutes, then mixed in cooked Penne noodles and serve.

Found this recipe today on the back of a package of pearl onions. I haven't had the opportunity to try this yet but I don't think you can go wrong with delicious onions in a cream sauce. I would be interested when I do have the time to test this recipe in substituting whipping cream for part of the milk.

10 ounces white pearl onions (gold, red or white)
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk, heated until very hot, but NOT boiling (or 1 1/2 cups part milk and whipping cream)
2 tablespoons dry white wine or 2 tablespoons fresh stock
1/8 teaspoon Tabasco sauce
1 dash freshly ground nutmeg
salt
white pepper
chopped fresh parsley (to garnish)
3/4 cup fresh green peas (optional) or 3/4 cup frozen green pea (optional)

Steps:

  • In large heat proof bowl, pour boiling water over onions to loosed papery skin. Let stand 10 minutes then drain. Carefully cut off very end of each *pearl onion and slip off the skin.
  • *Cut the pearl onions in half if you wish.
  • Cream Sauce::.
  • Melt butter over medium heat then add flour stirring with wire whisk constantly until all butter is absorded.
  • Turn heat down to low and add milk slowly (or milk/whipping cream), continuing to stir constantly with wire whisk to break up lumps. Add sherry, (or substitute), Tabasco sauce, nutmeg, white pepper and salt. Fold in cooked onions and mix well.
  • Just prior to serving, garnish with fresh parsley.
  • Variation: When folding in cooked pearl onion add 3/4 cup fresh or frozen (defrosted) green peas.

1 onion, finely chopped

Penne alla vodka makes an impressive dinner that's ideal for company, yet easy enough for an affordable weeknight meal!

1 (28 ounce) can whole peeled tomatoes (preferably San Marzano)
2 tablespoons olive oil
3 ounces pancetta, diced
0.5 cup finely chopped onion
2 cloves garlic, finely minced
0.25 teaspoon crushed red pepper, or more to taste
1 teaspoon kosher salt, plus more to taste
3 tablespoons tomato paste
0.66 cup vodka
1 pound rigatoni or penne pasta
1 cup heavy cream
0.25 teaspoon pepper, plus more to taste
0.66 cup freshly grated Parmesan cheese
2 tablespoons finely chopped parsley
3 tablespoons chopped fresh basil

Steps:

  • Place a large pot of salted water over high heat to bring to a boil. Pour tomatoes in a medium bowl and crush well with hands or chop in a food processor. Set aside.
  • While water heats, prepare the sauce. In a large saucepan or deep skillet, heat oil and pancetta over medium-high heat. Cook, stirring frequently until pancetta is crisp, about 5 minutes. Add onion and cook, stirring constantly, until translucent, about 3 minutes. Add garlic and crushed red pepper and cook for 1 minute. Add tomato paste and cook, stirring often, until the tomato paste has taken on a slight brownish color, 2 to 3 minutes. Add vodka and cook until reduced by at least half. Stir in reserved tomatoes and juices and bring mixture to a simmer. Reduce heat and simmer until thickened, about 10 minutes.
  • While sauce reduces, add pasta to boiling water and cook, according to package directions until al dente, 11 to 12 minutes.
  • Once sauce is reduced, stir in heavy cream and pepper and cook for 3 minutes, stirring often. Stir in 1/3 cup cheese, parsley, basil and pasta until well combined. Season with additional salt and pepper if desired.
  • Serve, sprinkled with remaining cheese and more herbs if desired.

Steps:

  • Heat 1 tablespoon of olive oil in a large skillet.
  • Add onion and 1 clove of garlic, and cook until onions are translucent.

  • Add vodka, dried basil, red pepper flakes, and salt. Let this to simmer for 2 minutes to allow most of the alcohol to burn off.
  • Add heavy cream and stir until fully combined. The sauce will turn into a beautiful light orange creamy mixture.
  • Add cooked pasta to vodka sauce and mix until noodles are fully coated in sauce.
  • Cover with a lid and let simmer for 5 minutes or until the sauce has reduced by half.
  • Garnish with basil.
