DAD'S CREAMED PEAS & PEARL ONIONS

Dad's Creamed Peas & Pearl Onions image

My dad was not a happy camper if he didn't see this dish on the table. It was his favorite! I made it for my own family while our kids were growing up, and now my daughter makes this dish for her family. -Nancy Heishman, Las Vegas, Nevada

PEARL ONIONS IN CREAM SAUCE

Pearl Onions in Cream Sauce image

A creamy and flavorful sauce with pearl onions - perfect for any special meal.

Provided by Martha

Time 30m

Number Of Ingredients 10

30 ounces raw unpeeled pearl onions
2 cups heavy cream
3 dried bay leaves
2 tablespoons chopped, fresh flat leaf parsley
2 garlic cloves smashed but not chopped (they will be removed from the sauce before serving)
½ teaspoon freshly grated nutmeg
1 teaspoon salt
1/8 teaspoon white pepper
1 cup chicken stock
1 tablespoon corn starch, as needed

Steps:

  • To peel the onions, bring 4 quarts of water to a boil and add onions (including skin).
  • Bring back to a boil and boil for three minutes. Drain and immediately plunge onions into an ice water bath. Drain and cut the root end off of each onion; then pinch the other end and the onion will pop right out of their skins. Discard skins.
  • Place onions in a 4 quart pan along with cream, bay leaves, parsley, garlic, nutmeg, salt and pepper. Over medium low heat, cook covered for ten minutes stirring a few times during the cooking process. Mixture should be somewhat thickened.
  • Remove cover and add in chicken stock and simmer for five minutes or more until the mixture has thickened and onions are tender. (Note: If the mixture is not thick enough for your taste, however the onions are fully cooked, mix a tablespoon of corn starch with 2 teaspoons of water and slowly add to hot onion mixture until desired consistency is achieved. This step is only necessary if you like a thick cream sauce.)
  • Discard the smashed garlic and bay leaves and season with salt and pepper to taste.
  • Serve immediately.

BROCCOLI AND PEARL ONION CASSEROLE

Broccoli and Pearl Onion Casserole image

This scrumptious Broccoli Casserole recipe uses broccoli florets and pearl onions in a creamy sauce of heavy whipping cream and cream cheese. Then you sprinkle the broccoli mixture with grated cheddar cheese and Italian bread crumbs. It's a terrific casserole for holidays like Thanksgiving or Christmas.

Provided by Teresa

Categories     Vegetable/Casserole

Time 16m

Number Of Ingredients 10

24 oz. broccoli florets (frozen)
16 oz. jar pearl onions (drained and rinsed several times, to get rid of some of the brine taste)
1 stick unsalted butter (1/2 cup)
1 cup flour
3 cups heavy whipping cream or half-and-half ((you can also use milk))
8 oz. pkg. cream cheese
1 tsp. sea salt
2/3 tsp. pepper
1 cup sharp cheddar cheese (shredded )
1/4 cup Italian bread crumbs

Steps:

  • Place broccoli and onions in a large, greased baking dish or roaster pan (a 10x15" size is good).
  • Meanwhile in saucepan, melt butter, then add flour and whisk until incorporated.
  • Using a whisk, slowly whisk in the cream until it is a nice sauce-like consistency.
  • I usually add about 1/8 cup at a time.
  • Work the cream into the sauce before adding more.
  • Cut cream cheese into cubes and add to sauce until melted.
  • Stir in salt and pepper.
  • Pour cream sauce over broccoli in baking dish.
  • Sprinkle with cheddar cheese. Then sprinkle bread crumbs over top.
  • Cover with foil and bake about 1 hour at 350° or until broccoli is done.
