SPICED APPLE-PEAR SAUCE
The natural sweetness of fresh apples and pears makes this homemade sauce a standout over the store-bought version. Lemon juice adds brightness and keeps the fruit from browning, and cinnamon and nutmeg lend warm spice notes.

Steps:
- Combine the apples, pears, lemon juice, cinnamon sticks, nutmeg, 1 tablespoon sugar and 1/4 cup water in a medium saucepan. Bring to a boil over medium-high heat. Cover, reduce the heat to medium-low and cook until the apples and pears are very soft but still a bit chunky, 15 to 20 minutes. Taste the mixture and add the remaining tablespoon of sugar if desired.
- Remove the sauce from the heat and stir a few times until the sauce is well combined with small chunks. Cool to room temperature. Remove the cinnamon sticks and serve. (For a smoother sauce, remove from heat, remove the cinnamon sticks and then whisk the mixture until smooth before cooling.)

Steps:
- Heat oven to 375°F.
- Combine flour, brown sugar, cinnamon and cardamom in medium bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs.
- Layer pear slices evenly into ungreased 8-inch square baking pan. Spoon crumb mixture over pears.
- Bake 30-40 minutes or until pears are tender and top is browned. Serve warm with half & half, if desired.

- In a large stockpot, stir the pears, sugar, water and lemon juice; to combine.
- Bring to a boil and cook, uncovered, for 1½ -2 hours until mixture thickens and has a spreadable consistency. Remove from heat.
- Using a ladle, pour the hot mixture into 7 x sterilized ½-pint jars, leaving ¼-inch space from the top of the jar. Remove air bubbles and add more mixture as necessary. Wipe around the jars to clean, center the lids and seal tightly.
- Place jars in a canner or water bath, ensuring they are covered completely with water. Bring to a boil and process for 10 minutes. Remove from water.
- Allow to cool before serving.

- Cook pears over medium-low heat, covered, for a few minutes until they start to release all their juices. Then uncover and continue to cook until pears are soft.
- Mash or puree to get your desired texture - I like to leave it kind of chunky.
- Stir in honey and vanilla, mix well.
- This will be a rather thin pear sauce, if thicker is desired, then continue to cook for up to an hour or so to evaporate more of the liquid.
- Store refrigerated, tightly covered, for up to 2 weeks.
- May also be frozen.
