MADE-OVER FRENCH TOAST WITH SPICED PEARS



Made-Over French Toast with Spiced Pears image

Awesome new twist to breakfast.

3 tablespoons honey
1 tablespoon lemon juice
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
2 large ripe pears, cored and sliced
2 large eggs
⅓ cup milk
1 tablespoon honey
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
4 slices bread
¼ cup toasted sliced almonds, for garnish

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Stir 3 tablespoons honey, the lemon juice, 1/4 teaspoon cinnamon, and 1/4 teaspoon ginger together in a small bowl; spread evenly into the bottom of the prepared baking dish. Arrange the sliced pears in 2 rows.
  • Beat the eggs, milk, 1 tablespoon honey, 1/4 teaspoon cinnamon, and 1/4 teaspoon ginger together in a shallow dish; soak each piece of bread in the egg mixture and arrange atop the pears.
  • Bake in the preheated oven until the bread is set and golden brown, about 20 minutes.
  • To serve, cut into squares and use a thin, flat spatula to lift each portion out of the pan and turn pear side up. Sprinkle with toasted almonds and drizzle with any syrup left in the baking dish.

¼ cup butter, cut into 1/4-inch cubes
½ cup brown sugar
1 (29 ounce) can pear halves, cut lengthwise into 4 slices
1 (1 pound) loaf sourdough bread, cut into 1-inch cubes
2 ½ cups eggs
1 ½ cups milk
2 tablespoons white sugar
1 teaspoon vanilla extract
½ teaspoon almond extract
¼ cup sliced almonds

Steps:

  • Evenly distribute the butter cubes into the bottom of a 10x14-inch baking dish. Sprinkle the brown sugar over the butter. Arrange the pear slices into the bottom of the dish. Arrange the bread cubes into a single layer over the pears.
  • Mix the eggs, milk, sugar, vanilla extract, and almond extract together in a bowl until fully blended; pour evenly over the bread cubes, assuring all pieces are evenly covered. Cover the dish with aluminum foil and chill overnight in refrigerator.
  • Preheat an oven to 350 degrees F (175 degrees C). Remove the casserole from the refrigerator and allow to warm while the oven preheats.
  • Bake in the preheated oven until the top of the bread is golden brown and the eggs have solidified, 45 to 60 minutes. Top with the sliced almonds to serve.

6 tablespoons butter, divided

3 eggs, lightly beaten
3/4 cup milk
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
6 slices French bread (1 inch thick)
Ice cream

Steps:

  • In a skillet, combine 1/4 cup brown sugar, 2 tablespoons butter and 1/4 teaspoon cinnamon; cook and stir until sugar dissolved. Add pears; cook until tender. , In a bowl, combine the eggs, milk, vanilla, nutmeg, and remaining brown sugar and cinnamon. Dip bread in egg mixture to coat each side. Melt remaining butter in a skillet. Fry bread over medium heat for 2 minutes on each side or until golden brown. Top with ice cream and pear mixture.

7 tablespoons unsalted butter, softened, plus more for serving
2 pears, peeled, cored, and finely chopped
12 large eggs
2 cups heavy cream, half-and-half, or milk
2 teaspoons pure vanilla extract
1 loaf challah or other soft, thick bread, cut into 1-inch slices
Pure maple syrup, warmed, for serving

Steps:

  • Mash together 5 tablespoons of the butter with the chopped pears and chill.
  • In a large flat dish, whisk together the eggs, cream, and vanilla.
  • In the side of each bread slice, make a deep slice into the center to form a pocket. Stuff a spoonful of pear butter into each piece. Place the stuffed bread into the egg mixture and let soak for a few minutes. Turn each piece and continue soaking until the bread has absorbed enough of the egg mixture to be completely moistened but not falling apart.
  • Heat a large skillet and swirl in 1 tablespoon of the butter. Working in batches, cook the soaked bread until golden brown and cooked through, 2 to 3 minutes per side. Add the remaining tablespoon of butter to the skillet as needed. Serve warm with more butter and the maple syrup.

Asian pears, sometimes known as apple-pears, are incredibly juicy, sweet and crunchy. They're one of my favorite fruits to eat and to cook with, whether in a savory dish or a dessert. This recipe uses a pear to make a delicious fruit caramel to spoon over ice cream for a fruity sundae that's a perfect end to a meal.

1/4 cup granulated sugar
2 tablespoons unsalted butter
2 tablespoons heavy cream
1 large Asian pear, peeled, cored and diced
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
Ice cream, any flavor, for serving
Whipped cream, for serving

Steps:

  • Place the sugar in a small saucepan and cook over medium heat until it has melted and begins to bubble, 1 to 2 minutes. Continue cooking until it turns light amber in color, 1 to 2 minutes longer, making sure to watch very closely to prevent burning. Immediately add the butter and cream and whisk until combined (it will bubble and boil, but just keep whisking!).
  • Add the diced Asian pear to the caramel and cook until the pear is al dente, 2 to 3 minutes. Stir in the vanilla and salt and serve over your favorite ice cream with a dollop of whipped cream.
