GRILLED PORK WITH PEAR SALSA



Grilled Pork with Pear Salsa image

My husband, Dave, and I have been in a dinner group with three other couples for a few years. We often share our recipes. This grilled pork was served by one of the couples, and I decided to "pear" it with this fabulous salsa. -Suzan Ward, Coeur d'Alene, Idaho

Number Of Ingredients 16

1/4 cup lime juice
2 tablespoons olive oil
2 garlic cloves, minced
1-1/2 teaspoons ground cumin
1-1/2 teaspoons dried oregano
1/2 teaspoon pepper
2 pounds pork tenderloin, cut into 3/4-inch slices
PEAR SALSA:
4 cups chopped peeled pears (about 4 medium)
1/3 cup chopped red onion
2 tablespoons chopped fresh mint or 2 teaspoons dried mint
2 tablespoons lime juice
1 tablespoon grated lime zest
1 jalapeno pepper, seeded and chopped
1 teaspoon sugar
1/2 teaspoon pepper

Steps:

  • In a large bowl, combine the lime juice, oil, garlic, cumin, oregano and pepper; add pork. Turn to coat; cover and refrigerate overnight. Drain and discard marinade., Grill pork, uncovered, over medium heat for 4-6 minutes on each side or until juices run clear., In a bowl, combine the salsa ingredients. Serve with the pork.

ROASTED TOMATO PEACH SALSA (CANNING RECIPE)



Roasted Tomato Peach Salsa (Canning Recipe) image

A zesty peach salsa with a little heat to balance the sweet! You'll roast the peaches, tomatoes, and red onion together for extra delicious flavor.

Number Of Ingredients 10

2 pounds peaches
2 pounds ripe tomatoes, (stem removed and halved)
1 red onion, (peeled and halved)
1 red or yellow pepper, (halved and seeded)
3 tablespoons minced habanero, (serrano, or jalapeno pepper (if you use jalapeno, increase to 1/4 cup))
4 cloves garlic, (minced)
3/4 cup bottled lime juice
4 teaspoons fine sea salt
2 tablespoons brown sugar
3/4 cup roughly chopped cilantro

Steps:

  • Pre-heat broiler in your oven to high.
  • Place peaches, tomatoes, red pepper and onion halves skin side down on a sheet pan and place in oven until slightly charred, about 7-10 minutes. Remove from heat and let cool.
  • Prepare boiling water canner. Heat jars in simmering water until ready to use, do not boil. Wash lids in warm soapy water and set aside with bands.
  • Dice peaches and tomatoes, leaving charred skin on. Dice red onion halves and red pepper. Combine everything up to the cilantro in a 4 quart saucepan. Bring to a simmer over medium heat, stirring frequently. Simmer until peaches have softened slightly and flavors have combined, about 10 minutes. Stir in cilantro.
  • Ladle hot salsa into a hot jar leaving a ½ inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process jars 20 minutes, (adjusting for altitude if above 1,000 feet). Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal, they should not flex when center is pressed.

My fiance and I came up with this recipe one day when we were making enchiladas for dinner and wanted some homemade salsa to go with it. It's very light and refreshing! Serve it with your favorite Mexican dish or eat it with tortilla chips. It's a forgiving recipe that can be adjusted according to your personal tastes.

6 roma (plum) tomatoes, halved
1 large mango, peeled and pitted
1 onion, quartered
½ Asian pear, cored and cubed
1 banana pepper, seeded
2 jalapeno pepper, seeded
⅓ cup fresh cilantro leaves, or more to taste
1 lime, juiced
½ teaspoon garlic powder
½ teaspoon salt

Steps:

  • Place tomatoes, mango, onion, Asian pear, banana pepper, jalapeno pepper, cilantro, lime juice, garlic powder, and salt in a food processor; pulse until desired texture is achieved. Cover and refrigerate until ready to serve.

CRUNCHY PEAR SALSA



Crunchy Pear Salsa image

Number Of Ingredients 7

3 8-ounce firm but ripe Bosc pears, peeled, cored, finely chopped
1/2 cup finely chopped white onion
1/2 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup fresh lime juice
1 large serrano or jalapeño chili with seeds, minced
1 teaspoon sugar

Steps:

  • Combine all ingredients in medium bowl. Season with salt and pepper. (Can be made 3 hours ahead. Cover; chill.)
  • Market Tip:
  • Mexican limes, sold at Latin American markets and some supermarkets, are especially good in this recipe because they are sweeter and more fragrant than Persian limes (the more familiar variety). Mexican limes are also referred to as Key limes, which are available at Melissa's (melissas.com; 800-588-0151).

This dish goes fast at holiday parties to pool parties. Good pear variety choices are Asian pear, Bartlett, Comice and Anjou, being all juicy and mellow. May be serve as a side dish with roast or smoked turkey or baked ham or chicken. VARIATION: Substitute 2 or 3 tablespoons finely chopped fresh ginger for the cilantro, parsley or mint.

1 -2 tablespoon mild-flavored oil (such as almond or grapeseed oil)
1/4 cup Italian parsley or 1/4 cup of fresh mint
1 -2 chili pepper, such as jalapeno, cored and finely chopped
1 -2 garlic clove, crushed
2 -3 tablespoons tequila (or juice of 1 lime)
1 pinch salt
1 pinch fresh ground black pepper
2 cups peeled and finely diced pears
1/2 medium red onion, finely diced
1 red bell peppers or 1 yellow bell pepper, cored and diced

Steps:

  • Whisk together in a medium-sized glass or porcelain bowl the oil, cilantro or parsley or mint, chile peppers, garlic, tequila, salt and the black pepper.
  • Stir in the diced pear, onion and bell pepper and mix gently to combine well. Cover the bowl and marinate the salsa at least 3 hours, preferably at room temperature, and then cover and chill slightly, if desired.
  • Variation: Substitute 2 or 3 tablespoons finely chopped fresh ginger for the cilantro, parsley or mint.
