Steps:
- Place all ingredients along with 1 cup water in a large saucepan. Place over medium-high heat and bring to a boil, immediately reduce to a simmer. Cook until pears are tender, about 1 hour. Strain mixture through a fine mesh sieve and place solids into the bowl of a food processor; discard liquid. Process pear mixture until pureed. Let cool completely before using.
PEAR THYME COCKTAIL
This pear thyme cocktail is the perfect holiday cocktail recipe. The combination of pear and thyme is unique and fresh, and garnished with a thyme sprig, it looks great too!

- Heat the sugar and water in a small saucepan over medium high heat until dissolved. Remove from heat and let cool.
- Blend the pears, lemon juice and fresh thyme in a blender or food processor until pureed.
- Fill four high ball or rocks glasses with ice. Shake the bourbon, 2 ounces of pear puree and 1 ounce of simple syrup vigorously until chilled. Pour over ice and top with soda water. Garnish with a sprig of thyme to serve.

- In a saucepan, over medium heat, add chopped pear and 1 Tbsp. sugar. Cook down until pears are soft, stirring occasionally.
- Add water, remaining sugar, and cinnamon stick to saucepan. Bring to boil, then reduce heat and simmer until sugar is dissolved.
- Remove from heat and cool completely. Strain through fine mesh strainer to remove pear chunks and any seeds.

FRESH PEAR MARTINI
I love fresh fruit puree in my cocktails. This one is great if you like pear as much as I do! Make sure your pear is perfectly ripe for best results. I suspect you could use canned pears or even pear baby food too!

- Shake the drink in a martini shaker to get it cold and serve.
SPARKLING BOURBON PEAR COCKTAIL RECIPE
Steps:
- For the Roasted Pear Puree: Preheat oven to 375°F (190°C). Arrange the pear slices on a parchment-lined baking sheet and roast until the underside of each slice begins to caramelize, about 20 minutes. Let cool to room temperature. Add to blender with lemon juice and ground clove and purée until very smooth, or purée in a bowl with an immersion blender.
- For the Bourbon Pear Mixer: In a pitcher or quart jar, stir together pear puree, bourbon, and maple syrup. Refrigerate until ready to use, up to 4 hours. Stir before serving.
- For each cocktail: Fill each glass with ice, add the bourbon pear mixer, and top with sparkling wine. Stir once and sprinkle with ground clove to serve.
