- Preheat the oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish or 9 inch square baking dish.
- In a medium bowl, stir together the oats, brown sugar, 1/2 cup flour, 1 teaspoon crystallized ginger, and cinnamon. Stir in the butter until the mixture is crumbly with pea sized lumps. Set aside.
- In a separate bowl, stir together the white sugar, 2 tablespoons flour and 2 teaspoons of crystallized ginger. Add the sliced pears, and toss to blend. Transfer to the prepared baking dish. Spread with the oat topping.
- Bake for 30 to 35 minutes in the preheated oven, until pears are soft and topping is golden brown. Cool slightly before serving with vanilla ice cream.

- Heat oven to 350°F. Spray 2 (10-oz) ovenproof ramekins with cooking spray.
- In medium bowl, mix all Topping ingredients except butter. With fork, mix in melted butter until crumbly; reserve.
- In another medium bowl, mix Filling ingredients. Divide filling evenly between ramekins. Top each with half of the topping, mounding the topping (it will settle during baking).
- Bake 25 to 30 minutes or until apples are tender and topping is brown. Serve warm.

- Preheat the air fryer to 360 degrees F (180 degrees C).
- Combine pears, lemon juice, and 1/4 teaspoon cinnamon in a medium bowl. Toss to coat, then divide the mixture between 2 ramekins.
- Combine oats, flour, brown sugar, and remaining 1/2 teaspoon cinnamon in a small bowl. Mix in softened butter using a fork until mixture is crumbly. Sprinkle over the pears.

- Substitute peaches or pears when they are in season. Microwave method: Place apples in a microwave baking pan and sprinkle with lemon juice, maple syrup, and cornstarch, and toss to combine. In a small bowl, melt butter at High for 30 to 45 sec. Stir in rolled oats, brown sugar, nuts and cinnamon. Combine well. Sprinkle evenly over apples. Microwave at High for 8 to 10 min. Allow 5 to 7 min after cooking time. Oven method: Preheat the oven to 350℉ (180℃) F. Butter a 9-by-9 or similar capacity baking dish . - In a processor (I used my mini processor), process the almonds until finely chopped. Now add in the oats and process just until chopped. If you don’t have a processor, you can probably do this by hand.
- In a small bowl, melt the coconut oil in the microwave. Now stir in the rest of the topping ingredients. Add 2 tablespoons of the topping mixture into fruit mixture and stir until combined. Divide the fruit mixture into ramekins. Sprinkle the rest of the topping on top of the fruit mixture.
