12 ounces fresh cranberries
1 large firm pear, peeled, cored and diced
1 cup sugar
3/4 cup water
3 inches cinnamon sticks
1 tablespoon minced fresh ginger
1 tablespoon lemon juice

Steps:

  • Combine all the ingredients in a 3-quart saucepan.
  • Cover and bring to a boil over high heat.
  • Lower the heat and simmer for 10 minutes.
  • Let cool completely and refrigerate 8-12 hours to thicken.

If you're planning your Thanksgiving menu already, this pear cranberry compote would complement the turkey quite nicely. Just skip the canning process and store jars in the refrigerator for up to ten days.

Number Of Ingredients 6

3 pounds pears (thin-skinned)
1 pint cranberries (approximately 8 ounces)
1/4 cup orange juice
1 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg (freshly grated)

Steps:

  • Chop pears into small pieces. Place in a heavy-bottomed, non-reactive pot. Add cranberries and orange juice.
  • Put a lid on the pot and place it over low heat. Cook until the pears are very, very soft and the cranberries have popped, about 1 hour.
  • When the pears are soft, use a potato masher to break the fruit. Add the sugar, cinnamon and nutmeg and stir to combine.
  • Raise temperature to medium-high heat and simmer, stirring constantly for 5-7 minutes, to help evaporate the liquid in the compote. When it has darkened in color and no longer looks watery, it is done.
  • Funnel compote into prepared pint jars and process in a boiling water for 20 minutes. Be sure to read our post on Canning Basics if you have any questions.
  • When time is up, place jars on a folded kitchen towel to cool. Once jars are cool, check seals and store in a cool, dark place.

1 package (12 ounces) fresh or frozen cranberries
1-1/4 cups sugar
1 cup golden raisins
1/4 cup orange juice

3 medium Fuji apples, peeled and finely chopped
1 (12 ounce) package fresh cranberries

1 lemon, zest and juice
2/3 cup fresh cranberries
1/2 cup water
2 sprigs fresh rosemary, each 4" long
+/- 3 tbsp sugar
2 bosc pears, peeled and cut into 1/2" pieces

Steps:

  • In a small saucepan bring water, rosemary sprigs and cranberries to a boil. Simmer over low heat until the cranberries have burst. Add sugar and stir to dissolve. Stir in pear chunks, lemon juice and zest, then cover and simmer over low heat just until pears are tender. (If baking further in a crumble/cobbler simmering is unnecessary.) Remove and discard rosemary sprigs (a few loose needles are okay) and adjust sugar to your taste and to suit your desired purpose.

GINGER-SPICED ASIA PEAR AND CRANBERRY COMPOTE

10 Cloves
1 Fresh ginger, peeled, 2 inch
1 Cinnamon stick, 2-inch piece
15 All Spice berries
1 cup sugar
2 cups Water
2 Large Asian Pears, peeled, cored, and chopped into 1 inch chuncks
1 12 oz bag fresh cranberries, washed and picked over
1 tablespoon balsamic vinegar
2 teaspoons finely chopped fresh ginger

Steps:

  • Make a bouquet garni by enclosing the clovers, ginger, cinnamon stocks and allspice berries in a piece of cheesecloth tied together with a piece of string. Tie the string to the handle of a large saucepan.
  • Combine the boueguet garni, sugar and water in the saucepan and bring the syrup to a boil. When the sugar is dissolved, lower the heat and add the Asian pear pices. Coer the pan and simmer the pears for about 40-45 minutes. They will still offer slight resistance when pierced with a knife.
  • Stir in the cranberries and turn up the heat so that the cranberries will cook and begin to pop, stirring frequently; this should take about 8 - 10 minutes. When the cranberries have cooked, remove the pan from the heat and cool. Remove the bouquet garni from the compote. Add the vinegar and ginger and taste for seasoning. The suace will firm up as it cools. Refrigerate until serving time. Taste for seasoning just before serving.
  • Can be made 5 days a head, covered and refrigerated. Taste before serving. You may need to add a bit more vinegar.
