1/2 cup chopped pecans
1-1/2 teaspoons butter
1 cup packed brown sugar
1 cup heavy whipping cream
1 prepared angel food cake (8 to 10 ounces), cut into 12 slices
6 cups vanilla ice cream
3 cans (15-1/4 ounces each) pear halves, drained

Steps:

  • In a small skillet, saute pecans in butter until toasted; set aside. In a small saucepan, combine brown sugar and cream. Bring to a boil; cook and stir for 3 minutes. , Place cake slices on individual dessert plates. Top with ice cream and pears. Drizzle with cream mixture; sprinkle with reserved pecans.

1 cup sweet late harvest Riesling, Muscat, Sauternes or Montbazillac
1/2 cup pear nectar
2 tablespoons sugar
1 pound firm-ripe Anjou pears, peeled, cored, and chopped
1 teaspoon fresh lemon juice
2 cups heavy cream
4 large egg yolks
4 ounces Danish Blue, or other creamy blue cheese, rind removed and crumbled
Pinch salt
Honey
Toasted chopped walnuts
Phyllo cookies, recipe follows
2 sheets phyllo dough
2 tablespoons melted unsalted butter
2 tablespoons chopped walnuts
2 tablespoons sugar

Steps:

  • In a saucepan, combine the pears, wine, nectar, 2 tablespoons of sugar, and lemon juice. Bring to a boil, then reduce the heat and simmer until the pears are tender and the liquid is reduced by 1/2. Puree in a food processor and transfer to a bowl to cool. Refrigerate until well chilled, at least 2 hours.
  • In a medium saucepan, heat the cream to a gentle boil over medium heat. Remove from the heat.
  • Beat the egg yolks in a medium bowl. Whisk 1/2 cup of the hot cream into the egg yolks. Whisking, gradually add the egg mixture to the hot cream. Return to medium-low heat and cook, whisking, until the mixture is thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and strain through a fine mesh strainer into a clean bowl. Add the blue cheese and salt, and whisk until fairly smooth. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Refrigerate until well chilled, at least 2 hours.
  • Whisk together the pear and cheese mixture and pour into the bowl of an ice cream machine. Freeze according to the manufacturer's instructions. Transfer to an airtight container and freeze until ready to serve.
  • To serve, scoop the ice cream into bowls, 2 scoops per person. Drizzle with honey and sprinkle with chopped nuts. Place 2 phyllo cookies in the ice cream and serve.
  • Preheat oven to 350 degrees F. Grease a baking sheet and set aside.
  • Place the phyllo on a work surface and cover with a damp kitchen towel. With a pastry brush, paint the top sheet with melted butter, and lightly sprinkle with nuts and sugar. Repeat with the remaining ingredients. Fold the phyllo stack in 1/2 over itself. Cut the phyllo twice lengthwise and twice across to make rectangles.
  • Bake until golden brown and just crisp, about 10 to 12 minutes. Remove from the oven and cool on the pan until ready to serve.

1 cup packed dark brown sugar
4 pears, halved and cored
½ cup sour cream
¼ cup coarsely chopped toasted pistachios (or your favorite nuts)

Steps:

  • Adjust oven rack to center position and heat oven to 400 degrees. Place butter in a baking pan large enough to hold the pears in a single layer: set in the heating oven until it melts.
  • Sprinkle sugar over melted butter, then place pears, cut side down, on top. Bake until tender, about 30 minutes.
  • Remove pan from oven, turn pears over and baste with pan sauce. Return to oven; bake until golden and glossy, about 10 minutes longer.

This homemade ice cream recipe uses fresh pears combined with sweet gooey caramel for a unique and delicious flavor. It is perfect in late summer, and it can use pears that are a bit overripe. You'll get the best results if you start a few days ahead, giving adequate time for chilling and freezing.

6 pears - peeled, cored, and chopped
2 tablespoons white sugar
1 teaspoon lemon juice
¼ teaspoon coarse salt
1 tablespoon vanilla extract
6 egg yolks
1 cup white sugar
2 ½ cups heavy whipping cream
1 ½ cups whole milk
1 cup light corn syrup
1 cup brown sugar
¼ cup unsalted butter
⅛ teaspoon sea salt, or to taste
½ cup heavy whipping cream
2 tablespoons heavy whipping cream

Steps:

  • Cook pears, 2 tablespoons white sugar, lemon juice, 1/4 teaspoon coarse salt, and vanilla extract in a saucepan over medium heat until pears are soft, 6 to 7 minutes. Remove from heat; cool pear mixture for 5 minutes. Transfer to a blender. Puree pear mixture and strain through a fine mesh strainer into a bowl.
  • Whisk egg yolks and 1 cup white sugar in a bowl. Heat 2 1/2 cups cream and milk in a large saucepan over medium-low heat just until bubbles appear at the edge; do not boil. Remove cream and milk from heat and whisk egg yolk mixture into cream and milk by small amounts until all egg yolk mixture is incorporated. Return to medium heat, whisking constantly, until custard is thickened, about 8 minutes. Remove from heat and chill in refrigerator for 10 minutes. Stir strained pear mixture into custard. Transfer to a bowl, cover, and chill in refrigerator overnight.
  • Combine corn syrup, brown sugar, unsalted butter, and 1/8 teaspoon sea salt in a heavy saucepan. Place over medium-low heat and stir until smooth; bring to a low boil. Stirring constantly, cook caramel until thickened and light golden brown, about 3 minutes; remove from heat, and let caramel cool for 5 minutes. Whisk 1/2 cup plus 2 tablespoons cream into caramel. Transfer caramel to a bowl, cover, and chill overnight.
  • Pour custard into an ice cream maker and freeze according to manufacturer's instructions. When ice cream is softly frozen, lightly mix about 1 cup caramel into ice cream to make caramel swirls. Transfer ice cream to a bowl, cover, and freeze overnight.

2/3 cup sugar
3 1/2 cups diced peeled cored ripe Bosc pears (about 1 1/2 pounds)
4 egg yolks
2 cups whipping cream
2 tablespoons poire Williams (clear pear brandy), optional
Pears
3 tablespoons unsalted butter
1/4 cup plus 2 tablespoons sugar
3 ripe Bosc pears, peeled, cored, each cut into 12 lengthwise slices

Steps:

  • For Ice Cream:
  • Melt butter in heavy 10-inch skillet over medium-low heat. Add sugar and cook until sugar melts (mixture will be grainy for first 10 to 12 minutes) and turns deep amber, stirring occasionally and pressing on sugar lumps to break up, about 20 minutes. Add pears (caramel will bubble and harden). Increase heat to medium-high and boil until liquid thickens and pears are very tender, breaking up large pieces of caramel and stirring occasionally, about 14 minutes. Transfer mixture to blender.
  • Beat yolks to blend in medium bowl. Bring cream to boil in heavy medium saucepan. Gradually whisk hot cream into yolks. Return cream mixture to same saucepan. Stir over low heat until custard thickens slightly and leaves path on back of spoon when finger is drawn across, about 2 minutes; do not boil. Immediately add to pear mixture in blender. Add brandy if desired. Blend until smooth. Cover custard and refrigerate until well chilled.
  • Process custard in ice cream maker according to manufacturer's instructions. Freeze ice cream until firm. (Can be prepared 1 week ahead. Keep frozen.)
  • For Pears:
  • Melt butter in heavy large skillet over medium-low heat. Add sugar and cook until sugar turns deep amber, stirring occasionally and breaking up sugar lumps, about 20 minutes. Add pears and sauté until tender but not mushy and caramel thickens slightly, about 9 minutes.
  • Arrange 6 pear slices decoratively on each of 6 plates or in shallow bowls. Scoop ice cream atop pears. Drizzle with caramel syrup from skillet and serve.

This recipe uses a pear to make a delicious fruit caramel to spoon over ice cream for a fruity sundae that's a perfect end to a meal.

1 large Asian pear, peeled, cored and diced

Steps:

  • Place the sugar in a small saucepan and cook over medium heat until it has melted and begins to bubble, 1 to 2 minutes. Continue cooking until it turns light amber in color, 1 to 2 minutes longer, making sure to watch very closely to prevent burning. Immediately add the butter and cream and whisk until combined (it will bubble and boil, but just keep whisking!).
  • Add the diced Asian pear to the caramel and cook until the pear is al dente, 2 to 3 minutes. Stir in the vanilla and salt and serve over your favorite ice cream with a dollop of whipped cream.

  • Peel and core pears. Chop into small pieces and combine with two tablespoons of sugar and pumpkin pie spice. Cook pears in a saucepan over medium heat for six to seven minutes, or until pears are soft. Puree pears and set aside.
  • In a separate mixing bowl, combine egg yolks and remaining cup of sugar and mix until smooth. Set aside.
  • In a saucepan, heat whipping cream and milk until very warm, but make sure that mixture does not come to a boil. Once heated, add cream mixture to egg mixture, a tablespoon at a time and whisk. Do not add too much of the cream mixture at once or else the eggs will cook. Once the cream mixture and egg mixture have been incorporated, return to heat and cook over medium heat for approximately 8 minutes, whisking constantly. The mixture will thicken slightly. Remove from heat and place saucepan in an ice bath for approximately 10 minutes to cool.
  • Combine pureed pears with cream mixture in a large bowl and place in freezer. Mix well after 45 minutes, and continue mixing every 30 minutes for two hours until mixture is smooth. Store in freezer in an airtight container.

  • Spread sugar evenly in a large, nonreactive, heavy-bottomed saucepan. Cook over medium heat, watching carefully. When the edges begin to liquefy and darken, use a spatula to carefully stir the sugar to distribute the heat and melting. Once the sugar becomes a deep amber color, stir in the pear pieces. Some of the caramel may harden, but continue to stir until melted again. Cook the pears for 10 minutes, until cooked through. Remove from the heat and stir in 1/2 cup of the heavy cream. Stir well, then mix in the rest of the heavy cream, salt and lemon juice. Let cool to room temperature.
