- Mix butter, thyme, lemon juice, sage, garlic, salt, and pepper together in a small saucepan over medium heat. Stir frequently until butter melts, about 3 minutes. Transfer herb butter to a container and refrigerate until solid, about 1 1/2 hours.
- Preheat the oven to 475 degrees F (245 degrees C). Lightly oil a rimmed baking sheet.
- Heat oil in a skillet over medium heat and add onion. Cook, stirring frequently, until onions are translucent, about 5 minutes. Remove from heat.
- Heat another skillet over medium-high heat. Add walnuts and stir frequently until browned, about 1 minute.
- Press pizza dough onto the prepared baking sheet. Spread herb butter over dough and top generously with cooked onions. Sprinkle walnuts on top of onions and distribute pear slices evenly on top. Sprinkle bacon on top of pears and top with blue cheese.
- Bake in the preheated oven until crust has risen and browned, 10 to 15 minutes.
- Allow pizza to cool slightly before serving.

- Preheat an oven to 425 degrees F (220 degrees C).
- Place the pizza crust on a pizza pan. Bake in the preheated oven until just crisp, about 5 minutes.
- Meanwhile, combine the garlic, Dijon mustard, rosemary, and vinegar in a food processor or blender. Turn on, and drizzle in the olive oil slowly until the dressing has thickened. Quickly pulse in 1/4 cup of blue cheese; season to taste with salt and pepper.
- Spread the vinaigrette over the pizza crust. Sprinkle 1/4 cup of blue cheese evenly over the crust, followed by the mozzarella cheese. Arrange the sliced pears over the cheese, and sprinkle with the toasted walnuts.
- Bake in the preheated oven until the cheese has melted and is bubbly, 7 to 10 minutes. Let cool slightly before cutting into slices.

- Preheat oven to 450°F.
- Heat oil in non-stick skillet, add onions and saute until softened (7-8 minutes). Add pears and saute for 2 more minutes.
- Add vinegar and pepper and keep stirring until all liquid is evaporated and onions are covered with a glaze.
- Divide the mixture between the wraps. Add the cheese and walnuts.
- Bake for 8-10 minutes or until cheese is melted.

ROASTED PEARS WITH BLUE CHEESE AND WALNUTS
Steps:
- Preheat the oven to 375 degrees F.
- Arrange the pears, cut sides up, on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Strip the leaves from the thyme branches and sprinkle over the pears. Put the baking sheet in the oven and bake 20 minutes. Remove the baking sheet from the oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half, return the pears to the oven and roast until they are tender and the cheese is soft, about 10 more minutes.
- Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes. Chop. When the pears are cooked, transfer them to a serving plate and sprinkle the toasted walnuts over the top. Serve hot.
ROASTED PEARS WITH BLUE CHEESE
Steps:
- Preheat the oven to 375 degrees F.
- Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon baller, remove the core and seeds from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly.
- Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
- In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
- Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.

- Make the white sauce first, by melting the butter and oil together in a pan over a low heat. Once melted, add in the finely diced onion and garlic. Cook for a couple of minutes until the onions start to soften. A tablespoon at a time, whisk in the plain flour to make a thick paste. Heat through for 3-4 minutes so that the flour cooks in. Slowly add the milk while whisking to form a thick sauce. Whisk in a generous pinch of black pepper, the Italian herbs and parmesan. Keep on the heat and whisk until the cheese has melted and leave to one side to cool.
- In a large bowl, prepare the pizza dough. Mix together the flour, sugar and baking powder. - The pizza dough should have just been baked for 10 minutes in a 425 degree oven. Keep the oven on 425.
- Heat up a nonstick skillet over medium heat and add 1/2 tbsp of butter. Add the pears to the pan and caramelize for a couple minutes, until they soften up a little. Be careful not to cook them to mush. Remove from the pan.
