This crumble is perfect for warming you in winter. The crumble topping is made from the Jordans Honey Country Crisp and honey, it is best served with silky soft cinnamon cream.

125g butter
4 eating apples, thinly sliced
2 pears, thinly sliced
100g honey
80g light brown soft sugar
½ tsp vanilla extract
150g plain flour
100g Jordans Honey Country Crisp
1tsp ground cinnamon
200ml double cream
Honey, to serve

Steps:

  • Preheat the oven to 180 C/ fan 170 F/ Mk 4. Butter a 1 litre ovenproof baking dish with 25g of the butter.
  • Toss the apples and pears in the honey, 30g of the sugar, and the vanilla extract. Spoon into the baking dish and bake for 10 minutes.
  • Meanwhile, rub together the remaining butter with the flour. Stir in the remaining sugar, and the Jordans Honey Country Crisp. Spoon this over the apples and pears in the dish, and bake for a further 30 minutes.
  • To serve, whip the cream until thick, and stir in the cinnamon. Sweeten with extra honey if desired. Serve the crumble warm with the cream on the side.

For the crumble
225 g plain flour
90 g caster sugar
1 pinch salt
1 teaspoon powdered ginger
115 g unsalted butter
For the filling
100 g sugar
100 ml water
4 nice ripe pears, peeled, cored and cut into chunks
5 pieces stem ginger in syrup, finely chopped
1 lime, juice and zest of, plus extra for serving

Steps:

  • You can't go wrong with an old-fashioned crumble. Everyone loves it, and it's lovely and easy!
  • Preheat your oven to 200ºC/400ºF/gas 6.
  • Sift the flour into a bowl and add the sugar, salt and ginger.
  • Cut the cold butter into chunks and rub it into the flour mix with your hands until you get a mixture that looks a bit like fine breadcrumbs. This is the crumble topping.
  • To make the filling, boil the water and sugar together, then carefully drop in the pear chunks and simmer gently for a couple of minutes.
  • Add the chopped ginger and the lime zest and juice to the pan and stir. Spoon the mixture into one large ovenproof dish or four small ones.
  • Sprinkle the crumble topping over the top of the fruit, piling it high in the middle of the dish and leaving space at the edge for the caramel to bubble up.
  • Bake in the preheated oven for 25 to 30 minutes until the pears are cooked and bubbling and the crumble is golden on top. Serve with custard or a dollop of crème fraîche with lime zest grated over, if you like.
  • Tip: This crumble will work well with apples instead, if you prefer.

This great dessert is from The New Vegetarian Epicure. I've used it with several combinations of fruit - basically whatever I have on hand - and it's always been good. While the apple and pear combination is excellent, I've also had great results with mixed berries (strawberry, raspberry, blueberry, cherries). An easy dessert with ingredients you probably have on hand.

4 -5 tart apples
4 -5 pears (if using other mixed fruits instead, just be sure to have about 4 lbs total)
3 tablespoons lemon juice
1/2 cup sugar
1/2 cup raisins
1 dash nutmeg
1 dash cinnamon (or any other spice you love!)
2/3 cup flour
3/4 cup brown sugar
1 pinch salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
5 tablespoons butter
2 tablespoons ice water
1 cup rolled oats

Steps:

  • Prepare fruit (peel, pit, whatever it takes). If large, cut into 1/4 thick slices.
  • Toss in a bowl with lemon juice, sugar and raisins and a bit of nutmeg and cinnamon (I usually add allspice because I love it).
  • Combine the flour, sugar, salt and spices.
  • Cut in the butter and mix till mixture resembles coarse cornmeal. There should be no big chunks of butter left. (I usually do this with my hands - don't have a food processor).
  • Sprinkle in the ice water, mix till the crumble mixture holds together and forms little clumps.
  • Add the rolled oats and mix. If the mixture seems sticky, add more oats.
  • Spread fruit evenly in a large glass or ceramic baking dish.
  • Scatter topping evenly over the fruit, leaving some of it in larger chunks and some in fine crumbles.
  • Bake the Crumble at 375 for about 40-45 minutes or until the top is crisp and brown and the juice is bubbling up around the edges.
  • Serve it hot or warm, with ice cream, whipped cream, or all by itself.

1 cup quick-cooking oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
20 caramels
1 tablespoon milk
3 medium pears, peeled and sliced
Whipped topping and additional cinnamon, optional

Steps:

  • In a small bowl, combine the flour, oats, brown sugar and cinnamon. Stir in butter (mixture will be crumbly); set aside 1 cup. Press the remaining mixture into an ungreased 8-in. square baking dish., In a small saucepan over low heat, cook and stir caramels and milk until caramels are melted and mixture is smooth. Remove from the heat. Arrange pears over crust; spoon caramel mixture over pears. Sprinkle with the reserved crumb mixture., Bake at 350° for 30-35 minutes or until the pears are tender and top is golden brown. Serve warm. Garnish with whipped topping and cinnamon if desired.

225g (½lb) apples, peeled, cored and cut into 1cm (½in) slices
450g (1lb) plums, washed, stoned and halved
30ml (2 tbsp) caster sugar
175g (8oz) plain flour, sieved
120g (4oz) golden caster sugar
120g (4oz) butter
15ml (1 tbsp) oats

Steps:

  • Heat the oven to 190°C/170°C/gas mark 5.
  • Toss the apples and plums with caster sugar and place them in a 23cm (10in) round baking dish. Flatten the mixture.
  • Place the flour and golden caster sugar in a bowl and slice in the butter.
  • Rub mixture with your fingertips until a breadcrumb consistency is achieved.
  • Pour the crumbs over the fruit evenly and flatten the mixture.
  • Sprinkle with oats.
  • Bake in the oven for 35 minutes or until the top is golden and the apples are soft.
  • Leave to cool for 10 minutes before serving with cream, custard or ice cream.

800 g canned pear halves
4 tablespoons juice
50 g sultanas
50 g butter
100 g plain flour
50 g caster sugar

Steps:

  • Drain and thickly slice pear halves in pear juice, reserving 4 tbsp of the juice.
  • Put the pears in an ovenproof dish with the sultanas and the reserved juice.
  • Cut the butter in to small cubes and rub into plain flour.
  • Mix in caster sugar and sprinkle over the pears.
  • Bake at 190C for 25 mins.
  • Serve with cream or natural yogurt.

600 gr (1.3 lbs) Fresh Apricots ((about 18-20 small apricots))
40 gr (3 tablesp.) Brown Sugar
1/2 Lemon, Juiced ((about 30ml / 2tbsp))
7 gr (1 tablesp.) Cornstarch
1/2 teasp. Ground Cinnamon
1/2 teasp. Ground Ginger
150 gr (1 1/2 cup) Rolled Oats ((certified Gluten-Free if required))
50 gr (1/4 cup) Brown Sugar
1 teasp. Ground Cinnamon
1 teasp. Ground Ginger
120 gr (1/2 cup) Unsalted Butter (soft)

Steps:

  • Preheat your oven on 180'C/350'F.
  • Wash and cut the Fresh Apricots into thin slices (I cut each apricots in 8, but you can also cube them).
  • Place them in a large mixing bowl with the Brown Sugar, Lemon Juice, Cornstarch, Ground Cinnamon and Ginger. Toss together until evenly coated.
  • Transfer into a baking dish (see note 1) and set aside.
  • Place the Rolled Oats, Brown Sugar, Ground Cinnamon and Ground Ginger in a large mixing bowl.
  • Cut the soft Butter into small cubes and add them to the Oats. Use your fingers to rub the butter into the Oats to create chunks of dough (see note 2). Cover the Apricots with the crumble.
  • Bake for 25 to 35 minutes, or until the topping is golden brown and the filling under is bubbling. Leave to cool down for about 10 minutes, and serve warm (see note 3).
