GRILLED CHEESE AND PEAR SANDWICH
Grilled Cheese and Pear Sandwich ~ together offer savory and sweet flavors that will exceed anyone's expectations. Sliced pears along with a thin slice of blue cheese, fresh arugula, and a dash of Dijon creates a grilled cheese sandwich that becomes insanely delicious!

Steps:
- Brush one side of each slice of bread with butter or olive oil.
- Form sandwiches with buttered-side out. Spread a thin layer of Dijon mustard on one side onto each sandwich, then add a few slices of pear and pile on some fresh arugula.
- Top with a thin slice of blue cheese and close the sandwiches.
- Heat a large nonstick skillet over low heat. Spray lightly with cooking spray. Grill the sandwiches, on low heat until the bread is golden brown, crispy, and the cheese is melted, about 2 to 3 minutes per side.
- Remove and cut sandwiches in half or diagonally and serve immediately.
- Serves 2

Blue cheese, pears and walnuts are traditionally an English combination used for many dishes, and especially good in tea sandwiches.

Steps:
- Toast the walnuts, then finely chop.
- Remove the core from the pear and slice thinly. Set aside.
- In a bowl, combine the crumbled cheese and nuts.
- Add the butter, tarragon, shallot, optional salt and pepper to this mixture and mix well.
- Spread the seasoned butter onto 8 slices of bread.
- Lay thinly sliced pears on four of the bread slices.
- Cover with the remaining four slices of bread.
- Wrap each sandwich securely with plastic wrap and refrigerate until cold and mixture is set.
- Unwrap the sandwiches and trim the crusts.
- Cut each sandwich into 4 triangles or squares.
- Note: To add a little color to the sandwiches, you might like to sprinkle a bit of the herbs on top of each square or trangle.

- Pop the flour, salt and cold butter (cut into cubes) in a food mixer until it resembles fine breadcrumbs. Then add 1 egg yolk and gradually add the cold water. Pulse to bring the dough together – don’t add too much water or the dough might become sticky.
- Alternatively, you can use shop-bought shortcrust pastry – which works just as well! Lightly grease the quiche dish with the extra butter.
- Roll out the dough into a rough circle on a lightly floured surface to the thickness of a £1 coin. Fold the pastry over the rolling pin, pick it up and unroll it over the dish. Carefully push the pastry into the dish. Using a knife, trim the edges so the pastry is flat. Prick the base all over with a fork, line the case with baking paper and fill it with baking beans. - Preheat the oven to 200°C/400°F. Blind bake the pastry case for 20 minutes, then remove the paper and beans and bake for 10 minutes more until the pastry begins to turn golden. Remove the dish from the oven, brush the pastry with beaten egg yolk, then put back in the oven for 5 minutes.
