PEACH AND BLUEBERRY CRUMBLES
Steps:
- Preheat the oven to 350 degrees F.
- Immerse the peaches in boiling water for 30 seconds to 1 minute, until their skins peel off easily. Place them immediately in cold water. Peel the peaches, slice them into thick wedges, and place them in a large bowl. Add the lemon zest, lemon juice, granulated sugar, and flour. Toss well. Gently mix in the blueberries. Allow the mixture to sit for 5 minutes. Spoon the mixture into ramekins or custard cups.
- For the topping, combine the flour, granulated sugar, brown sugar, salt, cinnamon, and the butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is the size of peas. Rub the mixture with your fingertips until it's in big crumbles, then sprinkle evenly over the fruit. Place the ramekins on a sheet pan lined with parchment paper and bake for 40 to 45 minutes, until the tops are browned and crisp and the juices are bubbly. Serve warm or at room temperature.
- If you want to make these early, store the unbaked crumbles in the refrigerator and bake before dinner.

This is one delicious treat to make with some fresh pears and blueberries. I had some frozen blueberries and they worked just as well. This is a wonderful combination and so yummy with the oatmeal crisp on top of the fruit. Of course, we couldn't resist heating some up tonight after dinner and pouring over top of some vanilla ice...

- 1. Stir oats, 1/2 cup brown sugar, flour, nutmeg & cinnamon into pot. Stir in 1/4 cup melted butter. Set the Ninja to STOVETOP HIGH. Cook uncovered 15 minutes or until oat mixture is golden, stirring occasionally.
- 2. Remove the oat mixture from pot and spread on a plate. As it cools the mixture will become crisp and harden as it cools.
- 3. Add remaining 2 tbsp. of butter to pot. Set OVEN to 350 degrees for 20 minutes. Add sliced pears, blueberries, lemon juice and remaining brown sugar. Stir well, cover and cook 10 minutes.
- 4. Remove lid and cook another 10 minutes until liquid is reduced and pears are tender, stirring occasionally.
- 5. Remove the pear/blueberry mixture to a bowl and serve with the crisp.

- Peel and quarter the pears, remove the core and cut into cubes. Wash the blueberries and pat dry. Mix the quark cheese with the eggs, cornflour and sugar. Fold in the pears and 2/3 of the blueberries. Spoon into 4 small dishes and bake in the oven for abut 20 minutes.
- In the meantime place the sugar, flour, oats and almonds in a bowl and rub in the butter until the mixture resembles breadcrumbs. Spoon the remaining blueberries into the dishes and sprinkle the crumble on top. Bake for a further 20 minutes.

- Lets start with preparing the fruit layer, Poach the pear, dried blueberries along with the wine for about 3-4 minutes. It should just start to tenderize. Add sugar and zest and keep aside for cooling.
- Lightly whisk together milk, eggs and vanilla.
- Sift all the dry ingredients together. Add the butter and half the egg mixture, and mix until dry ingredients are moistened. On medium speed, beat for one minute. If mixing by hand, mix for about 2 minutes.
- Add the remaining egg mixture in two batches, beating for 20 seconds between each addition.
- Pour the mixture in a baking pan (I used a 6 inch round pan)
- For the crumble topping mix all the ingredients together till they just come together.
- Spread the fruit layer on top of the cake batter and the crumble layer on top of it.
- Bake in a preheated oven at 180C for about 60 minutes or so. I covered the cake with a foil after about 25 minutes to prevent the top from burning.

- Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch springform pan. Combine 1 1/2 tablespoons brown sugar, 1 1/2 tablespoons white sugar, and 1 teaspoon cinnamon in a small bowl; reserve.

- Preheat the oven at 170℃.
- Core and chop the apples/pears into bite-sized pieces leaving the skins on. Put them in a pot with the frozen blueberries, water pot and the other stewed fruit ingredients.
- Bring the fruit mixture to the boil and then reduce to a simmer. Stirring occasionally, stew the fruit for about 20 mins or until all the fruit has properly broken down.
- If using coconut oil for the crumble, melt it first by heating up in a pan. Thoroughly mix all the ingredients for the crumble together in a bowl including the oil.
- Once the fruit is stewed down, add it to your crumble dish and spread it out evenly (we used a 30cm ceramic dish).

- For the crumble, preheat the oven to 180C/350F/Gas 4. Grease an ovenproof dish with butter.
- In a large bowl, rub the butter into the flour using your fingertips, until the mixture resembles breadcrumbs. Add the sugar, mix well, then set aside.
- To make the filling, place the whole pears in a pan, cover with water and add 50g/1¾oz of the sugar. Bring to the boil, then reduce the heat to a simmer and cook for 10-12 minutes, or until the pears are tender. Drain well and set the pears aside to cool. Remove the pear cores and chop the flesh.
- Spoon one-quarter of the pears in an even layer on the bottom of the prepared ovenproof dish. Scatter one-quarter of the blackberries over the pears and then sprinkle over 2 tablespoons of the remaining caster sugar. Repeat the layering process until all the pears, blackberries and sugar have been used.
- Sprinkle over the topping and bake for 20-25 minutes, or until golden-brown and bubbling.
- Meanwhile, make the custard. Place the egg yolks and sugar in a bowl and whisk until thick and pale.
- Place the milk and cream in a saucepan and bring to the boil. Pour onto the egg mixture, whisk well, then return to the pan. Heat gently, until the custard is thick enough to coat the back of the spoon.
- To serve, divide the crumble between serving bowls and pour the custard over.
