ROASTED PEARS WITH BLUE CHEESE

Roasted Pears with Blue Cheese image

Provided by Ina Garten

Categories     appetizer

Time 50m

Yield 6 servings

Number Of Ingredients 11

3 ripe but firm Anjou pears
Freshly squeezed lemon juice (3 lemons)
3 ounces coarsely crumbled sharp blue cheese such as Stilton
1/4 cup dried cranberries
1/4 cup walnut halves, toasted and chopped
1/2 cup apple cider
3 tablespoons port
1/3 cup light brown sugar, lightly packed
1/4 cup good olive oil
6 ounces baby arugula
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon baller, remove the core and seeds from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly.
  • Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
  • In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
  • Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.

  • Caramelize the onions: Peel the onions and cut into thin slices. Heat clarified butter in a big frying pan or pot. Add the onions. You can start cooking them over medium-high / medium heat, and then gradually lower the heat as they start to get color to medium-low / low heat. Don't cook the onions over too high heat or they will burn and be bitter. Stir from time to time (at the beginning rarely, later more often, and at the end very often). The onions should be partially caramelized and it should take about 30 minutes. We don't need to fully caramelize the onions (this would take about 50-60 mins) because they will be baked in the oven. Unfortunately, this process can not be speeded up. Take the onions off the pan and leave to cool.
  • Take the dough out of the fridge. Score the dough: with the tip of a sharp knife, score through the top layers of the puff pastry by running the knife along all four sides of the dough (leave about 1/2 inch / 1.5 cm border). Do not cut all the way through the dough. Transfer the pastry, along with the parchment paper that comes with it to a baking sheet. Prick the dough (not the borders) with a fork.

  • Preheat oven to 400°F. Line 2 large baking sheets with parchment. In a saucepan, combine milk, butter, salt, pepper, onion powder and thyme and bring to a boil. Remove from heat, add flour and stir vigorously with a wooden spoon until combined. Return to heat and cook, stirring vigorously, until a dough forms and pulls away from side of pan
  • Remove pan from heat and let cool for 5 minutes. Add 4 eggs, 1 at a time, beating well after each addition. Dough will come apart with each egg and then come back together as you stir; add next egg after dough comes back together. You should end up with a sticky dough. Beat in cheese.
  • Drop dough by teaspoonfuls onto baking sheets. Beat remaining egg with 1 Tbsp. water and brush mixture on dough to glaze. Bake for 10 minutes, then lower temperature to 350°F and bake 20 to 25 minutes longer, until golden brown. Serve hot or at room temperature.

  • In a 12-inch frying pan over medium heat, melt the butter with the olive oil. Add the sliced onion and reduce heat slightly (between medium and medium-low). Cook, stirring occasionally, until the onions soften and turn brown, 30 to 40 minutes. Meanwhile, trim the pear quarters to remove seeds, then cut into thin slices; set aside. When onions are done, sprinkle with salt and pepper to taste and set aside to cool to room temperature.
  • Preheat oven to 375° (convection oven not recommended). Line two 14- by 17-inch sheet pans with parchment paper and transfer one sheet of pastry dough to each. Roll out pastry lightly with a floured rolling pin to flatten any creases.
  • Using a pizza cutter or sharp knife, cut the pastry sheets into triangle, wedge, or diamond-shaped pieces about 2 inches wide (don't worry if you cut through parchment). Slightly separate pieces so that they are not touching.
  • Lay a pear slice in the center of each wedge (trim the slice so that it doesn't cover the entire pastry). Top with a small pile of caramelized onions and about 1/2 teaspoon of the gorgonzola or blue cheese.

  • Meanwhile, heat a large skillet over medium-high heat. Once hot, drop in sliced onions, and cook, stirring occasionally, until dark brown and somewhat soft (about 5 minutes). Reduce heat to medium, and add the butter and a big pinch of kosher salt, stirring to coat the onions.
