6 cups shredded cabbage ((I used a combo of green and red, you can use the pre-cut stuff))
1 cup matchstick carrots (, roughly chopped)
1 red bell pepper (, diced into matchsticks)
1/2 cup sliced green onions
1/3 cup chopped cilantro
1/3 cup natural creamy peanut butter
2 Tbsp fresh lime juice
1 1/2 Tbsp rice vinegar
1 1/2 Tbsp soy sauce
2 Tbsp honey
1 1/2 Tbsp packed brown sugar
1 1/2 tsp sesame oil
1 tsp sriracha
2 tsp peeled and finely minced ginger
1 large clove garlic (, finely minced)

Steps:

  • Add all salad ingredients to a a medium salad bowl and toss. In a mixing bowl whisk together all dressing ingredients until well combined (if needed you can season with a little salt).
  • Pour dressing over salad and toss to coat. Sprinkle with sesame seeds if desired and serve immediately.

¼ cup honey
¼ cup vegetable oil
¼ cup unseasoned rice vinegar
1 tablespoon soy sauce
1 teaspoon Asian sesame oil
1 tablespoon peanut butter (I like Skippy Natural No Need to Stir)
Heaping ½ teaspoon salt
1 teaspoon Sriracha sauce (optional)
1 tablespoon minced fresh ginger
1 large garlic clove, minced
4 cups prepared shredded coleslaw
2 cups prepared shredded carrots
1 red bell pepper, thinly sliced into bite-sized pieces
1 cup cooked and shelled edamame
2 medium scallions, finely sliced
½ cup chopped salted peanuts (or you can leave them whole)
½ cup loosely packed chopped fresh cilantro

Steps:

  • In a medium bowl, whisk together all of the ingredients for the dressing (be sure the peanut butter is dissolved). Set aside.
  • Combine all of the slaw ingredients in a large mixing bowl. Add the dressing and and toss well. Let the slaw sit for at least ten minutes so the vegetables have a chance to soak up the dressing. Taste and adjust seasoning if necessary (I usually add a bit more salt.) Serve cold. This slaw is best served fresh but leftovers will keep in a covered container in the refrigerator for a few days.
  • Make-Ahead Instructions: The dressing can be prepared up to 2 days ahead of time; store in a covered container in the refrigerator.

2.5 cups red cabbage (shredded)
2.5 cups green cabbage (shredded)
1-2 carrots (shredded)
3 scallions (chopped)
1/2 cup fresh cilantro leaves (OPTIONAL)
1/4 cup creamy peanut butter
1.5 tbsp soy sauce
2 tbsp coconut milk (or any plant milk)
2 limes (juiced)
1.5 tbsp maple syrup
1 tbsp fresh ginger root (grated)
1.5 tbsp sesame seeds
1 pinch red pepper flakes (to taste)
hot sauce to taste (optional)

Steps:

  • In a mixing bowl whisk together the peanut butter, lime juice, coconut milk, soy sauce, maple syrup, ginger, pepper flakes and sesame seeds. Whisk together until a smooth and creamy consistency is achieved.
  • Add the shredded cabbage, carrot and scallions to large mixing bowl and set aside.
  • Pour the dressing over the top of the veggies. Toss to coat well, adjust seasonings to taste and serve promptly or store in refrigerator until ready to serve.
  • Optional: Garnish with fresh cilantro, black sesame seeds or salted chopped peanuts for some crunch.

Bagged Slaw or shredded carrots and cabbage- 16 ounces. Note that this is an alternative to the last two ingredients. If you choose to use the bagged version
Peanut butter- 1/3 cup (smooth. Organic Peanut Butter or sugar free peanut butter are okay to use.)
Rice Vinegar- 1/4 cup tablespoons. You can alternatively use white wine vinegar.
Sugar- 1 tablespoon. You can sub in an alternative such as honey in this recipe.
Soy Sauce- 1 teaspoon.
Sesame Oil- 1 tablespoon.
Ground Ginger- 1 teaspoon
Cilantro- 1/3 cup chopped.
Optional- seeds such as chia or sesame

Steps:

  • Prepare your shredded vegetables (carrots and cabbage or bagged slaw product, not cilantro) in a large salad serving bowl.
  • Next, in a small or medium mixing bowl, whisk together the peanut butter, vinegar, sugar, soy sauce, sesame oil, and ground ginger.
  • Pour half of the dressing over the cabbage and carrots. Toss the cabbage and carrots with the mixture and add the remaining as needed while tossing.
  • Sprinkle in the cilantro.
  • Refrigerate the coleslaw for at least an hour.
  • Do not leave this in the refrigerator for longer than 24 hours. Top with optional seeds before serving.

1/2 cup rice wine vinegar
1 tablespoon soy sauce
1 lime, juiced
2 tablespoons sesame oil
1/2 cup peanut butter
1 head Napa cabbage, sliced thin
1 red bell pepper, julienne fine
1 yellow bell pepper, julienne fine
2 serrano chiles, minced fine
1 large carrot, grated fine with a peeler
3 green onions, cut on the bias, all of white part and half of the green
2 tablespoons chiffonade cilantro
2 tablespoons chiffonade mint
1/2 teaspoon ground black pepper

Steps:

  • In a small bowl, or food processor combine ginger, vinegar, soy sauce, lime juice, oil, and peanut butter. In a large bowl, combine all other ingredients and then toss with dressing. You can save some of the dressing to dress noodles that can be added to this dish along with stir fried pork to make an entire meal.

2 cups white cabbage (shredded)
1 cup carrots (grated (about 2 carrots))
1 cup broccolini ((or traditional broccoli florets) chopped)
1 cup cilantro (finely chopped)

1/4 cup peanuts (chopped)
4 green onions
1/4 cup olive oil
1/4 cup apple cider vinegar
1/4 cup peanut butter
1 clove garlic (finely chopped)
1 tbsp tamari (or soy sauce, or coconut aminos)
1 tbsp agave
1 tbsp ginger (fresh, grated)
1/2 tsp sea salt

  • Using a food processor, thinly slice red and white cabbage, and grate carrots. (Alternately, thinly slice cabbage with a sharp knife and grate carrot with a box grater). Finely chop the broccoli florets, cilantro, parsley and peanuts. Thinly slice green onion. Add everything to a large mixing bowl.
  • In a separate smaller bowl combine dressing ingredients: olive oil, apple cider vinegar, peanut butter, garlic, tamari, agave, ginger, sea salt and chili flakes. Whisk to combine.
