- In a bowl, combine the first nine ingredients; mix well. Pour 6 tablespoons marinade into a large resealable plastic bag; add the beef. Seal bag and turn to coat; refrigerate for at least 2 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade for basting., Drain and discard marinade from beef. Thread beef onto four metal or soaked wooden skewers. Grill, uncovered, over medium heat or broil 4 in. from the heat for 8-10 minutes or until meat reaches desired doneness, turning and basting frequently with reserved marinade.

- In a bowl, combine 2/3 of the garlic with 1/4 cup soy sauce, sesame oil, brown sugar, cumin, and red-pepper flakes. Thread 2 pieces of beef onto each of 16 skewers; arrange in a shallow dish. Pour marinade over beef; refrigerate covered 45 minutes or preferable overnight, turning once.
- Meanwhile make dipping sauce: Heat canola oil in a small saucepan over medium heat. Add remaining garlic; cook, stirring, until soft, 3 minutes. Add broth and 1/4 cup water; bring to boil. Remove from heat; whisk in peanut butter, ketchup, vinegar, and remaining teaspoon soy sauce. Let cool completely.
- Heat a grill to high. Season beef with salt and pepper. Remove skewers from marinade, letting excess drip off. Discard marinade. Grill beef 1 to 2 minutes per side for medium. Serve hot with dipping sauce on the side.

- In a bowl, combine the first eight ingredients and mix well. Pour 1 cup into a shallow dish; add vegetables. Pour remaining marinade into another shallow dish; add beef. Cover and refrigerate both for 4-6 hours or overnight, turning occasionally., Drain and discard marinade from beef. Drain and reserve marinade from vegetables. - Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Thread chicken pieces on four 10- to 12-inch metal skewers, leaving space between each piece.
- Make Spicy Peanut Sauce; reserve 1/2 cup sauce to serve with cooked kabobs. Brush chicken with half of the remaining sauce.
- Cover and grill kabobs 4 to 5 inches from medium heat about 15 minutes, turning and brushing occasionally with remaining sauce, until chicken is no longer pink in center. Serve kabobs with reserved sauce and the peanuts.

BEEF SATAY WITH PEANUT SAUCE
These skewers of flavorful beef are so easy to make and so crave worthy. Between the marinated beef and the sweet and spicy peanut sauce, you will adore the flavors in this easy to make dish.

- Mix the marinade ingredients in a sturdy zipper bag and add the beef strips. Press out as much air as possible and refrigerate the mixture for 30 minutes to overnight.
- When ready to grill, if you are using bamboo skewers, soak them in water for 15 minutes. You can also use metal skewers.
- Thread the meat onto the skewers and straighten out the meat for an even grilling.
- Heat your grill or grill pan to high heat and oil the grates. Grill the skewers about 1 to 2 minutes per side.
- Pile up on a plate and erve immediately with the peanut sauce.
- In a small saucepan, heat the oil over medium-low heat. Add the garlic and ginger and cook for 30 seconds.
- Add the hot sauce, hoisin sauce, water, and peanut butter and stir untll smooth.
- Simmer a bit until slightly thickened and then remove from the heat to cool.
- If it's too thick after being refrigerated, you can thin it with a bit of water.
