Number Of Ingredients 10

1/4 cup chopped green onions
1/4 cup peanut butter
2 tablespoons lemon juice
2 tablespoons reduced-sodium soy sauce
4-1/2 teaspoons brown sugar
1 tablespoon water
4 garlic cloves, minced
1 teaspoon ground coriander
1/8 to 1/4 teaspoon cayenne pepper
3/4 pound beef top sirloin steak, cut into 1/2-inch cubes

Steps:

  • In a bowl, combine the first nine ingredients; mix well. Pour 6 tablespoons marinade into a large resealable plastic bag; add the beef. Seal bag and turn to coat; refrigerate for at least 2 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade for basting., Drain and discard marinade from beef. Thread beef onto four metal or soaked wooden skewers. Grill, uncovered, over medium heat or broil 4 in. from the heat for 8-10 minutes or until meat reaches desired doneness, turning and basting frequently with reserved marinade.

3 cloves garlic, minced
1/4 cup plus 1 teaspoon soy sauce for dipping
1 tablespoon toasted sesame oil
1 teaspoon light-brown sugar
1/2 teaspoon ground cumin
1/8 teaspoon red-pepper flakes
1 pound boneless rib-eye roast, sliced against the grain into 32 3-by-1/4-inch strips
2 teaspoons canola oil
1/3 cup reduced-sodium canned vegetable broth, or water
1/4 cup smooth peanut butter
1/2 teaspoon ketchup
1/4 teaspoon rice vinegar
Coarse salt and ground pepper
Sesame Rice, for serving (optional)

Steps:

  • In a bowl, combine 2/3 of the garlic with 1/4 cup soy sauce, sesame oil, brown sugar, cumin, and red-pepper flakes. Thread 2 pieces of beef onto each of 16 skewers; arrange in a shallow dish. Pour marinade over beef; refrigerate covered 45 minutes or preferable overnight, turning once.
  • Meanwhile make dipping sauce: Heat canola oil in a small saucepan over medium heat. Add remaining garlic; cook, stirring, until soft, 3 minutes. Add broth and 1/4 cup water; bring to boil. Remove from heat; whisk in peanut butter, ketchup, vinegar, and remaining teaspoon soy sauce. Let cool completely.
  • Heat a grill to high. Season beef with salt and pepper. Remove skewers from marinade, letting excess drip off. Discard marinade. Grill beef 1 to 2 minutes per side for medium. Serve hot with dipping sauce on the side.

1 cup pineapple juice
1 cup red wine or beef broth
1/2 cup soy sauce
1/2 cup Worcestershire sauce
1 medium onion, chopped
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed
1/2 teaspoon pepper
3/4 pound cherry tomatoes
1/2 pound whole fresh mushrooms
3 small zucchini, cut into 1/2-inch slices
2 small yellow summer squash, cut into 1/2-inch slices
2 pounds beef sirloin tip steak, cut into 1-1/4-inch cubes
Hot cooked rice, optional

Steps:

  • In a bowl, combine the first eight ingredients and mix well. Pour 1 cup into a shallow dish; add vegetables. Pour remaining marinade into another shallow dish; add beef. Cover and refrigerate both for 4-6 hours or overnight, turning occasionally., Drain and discard marinade from beef. Drain and reserve marinade from vegetables. On metal or soaked wooden skewers, alternately thread beef, tomatoes, mushrooms, zucchini and summer squash., Grill, uncovered, over medium heat for 3 minutes on each side. Baste with reserved marinade. Continue turning and basting for 8-10 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve kabobs over rice if desired.

1 pound boneless, skinless chicken breast halves or thighs, cut into 1 1/2-inch pieces
Chopped peanuts, if desired
1/3 cup crunchy peanut butter
1/3 cup boiling water
1 tablespoon grated gingerroot or 1 teaspoon ground ginger
1 tablespoon lemon juice
1/8 teaspoon crushed red pepper

Steps:

  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Thread chicken pieces on four 10- to 12-inch metal skewers, leaving space between each piece.
  • Make Spicy Peanut Sauce; reserve 1/2 cup sauce to serve with cooked kabobs. Brush chicken with half of the remaining sauce.
  • Cover and grill kabobs 4 to 5 inches from medium heat about 15 minutes, turning and brushing occasionally with remaining sauce, until chicken is no longer pink in center. Serve kabobs with reserved sauce and the peanuts.

These skewers of flavorful beef are so easy to make and so crave worthy. Between the marinated beef and the sweet and spicy peanut sauce, you will adore the flavors in this easy to make dish.

1/4 cup peanut oil
1/4 cup soy sauce
2 tablespoons fish sauce
2 tablespoons lime juice
1/4 cup brown sugar
1 teaspoon ground coriander
1 tablespoon thinly sliced lemongrass (see note 1)
2 tablespoons minced shallots
4 cloves garlic, minced
1 tablespoon minced ginger
2 pounds flank or skirt steak, cut into 3/8 inch thin strips against the grain
2 teaspoons peanut or vegetable oil
2 cloves garlic, minced
1 teaspoon grated fresh ginger
3 tablespoons Lingham's hot sauce (see note 2)
2 tablespoons hoisin sauce
2/3 cup water
3 tablespoons peanut butter, smooth or chunky

Steps:

  • Mix the marinade ingredients in a sturdy zipper bag and add the beef strips. Press out as much air as possible and refrigerate the mixture for 30 minutes to overnight.
  • When ready to grill, if you are using bamboo skewers, soak them in water for 15 minutes. You can also use metal skewers.
  • Thread the meat onto the skewers and straighten out the meat for an even grilling.
  • Heat your grill or grill pan to high heat and oil the grates. Grill the skewers about 1 to 2 minutes per side.
  • Pile up on a plate and erve immediately with the peanut sauce.
  • In a small saucepan, heat the oil over medium-low heat. Add the garlic and ginger and cook for 30 seconds.
  • Add the hot sauce, hoisin sauce, water, and peanut butter and stir untll smooth.
  • Simmer a bit until slightly thickened and then remove from the heat to cool.
  • If it's too thick after being refrigerated, you can thin it with a bit of water.
