Provided by Lindas Busy Kitchen

Categories     Candy

Time 3h

Yield 28 3x2

Number Of Ingredients 7

1/4 lb butter, softened
8 ounces cream cheese, softened
2 lbs confectioners' sugar
1 1/2 cups peanut butter
1 1/2 teaspoons vanilla
1/2 teaspoon salt
20 -23 ounces milk chocolate chips, for milk chocolate (almost 1 lg. bag) or 20 ounces semi-sweet chocolate chips, for dark chocolate (almost 1 lg. bag)

Steps:

  • Mix the butter and cream cheese together. (I put mine in the microwave for 40 secs. to soften), then cream together.
  • Add the confectionary sugar about 1 cup at a time, and mix well. (I use my hands to mix it all in).
  • Add the peanut butter, vanilla, and salt, and mix until well-blended. (I use my hands to mix it all in).
  • Place the mixture in the refrigerator to chill for at least 1 hours (I stick the bowl in the freezer for about 1/2 hr., to harden the dough.
  • Form the peanut butter mixture into egg shapes, then refrigerate again for at least 1 hour (Again, I put them in the freezer instead of the fridge).
  • Melt the chocolate in a microwave oven or in a double boiler. (I had better results using a double boiler, because the steaming water helps the chips to stay creamy longer).
  • Quickly place the eggs, doing one at a time, in the chocolate mixture to coat the bottom, then lift it with a thin spatulda, and with a knife I spread all along the sides and top of the egg, then with the knife I fluff the top of the chocolate to make the eggs look pretty. Just press down on the chocolate and lift up, with a butter knife. Do it all over the top of the egg.
  • You have to work quickly while the eggs are frozen, as the heat from the chocolate chips makes them soft again rather quickly. If you notice them getting too soft, stick them back in the freezer for a few minutes.
  • Arrange the chocolate coated eggs on a waxed paper lined tray, and allow the chocolate to harden. (I stick mine in the freezer for easier handling when coating with the chocolate).
  • Place each peanut butter egg in a paper candy cup.
  • You can decorate your eggs with pastel colored Easter sprinkles or pastel jimmies, found in the cake/decorating section at the grocery store.

Categories     Easter

Time 3h25m

Number Of Ingredients 6

1 cup butter
1 1/2 cups smooth peanut butter
1 pound powdered sugar
1 teaspoon vanilla extract
24 ounces melting chocolate wafers
15 sugar flowers (optional)

Steps:

  • In a medium sauce pan, melt the butter and peanut butter together over medium heat. Once the butter and peanut butter mixture is melted pour it into another large bowl. Stir in the vanilla. Stir in the powdered sugar until well combined. Place into fridge for 30 minutes. Remove from fridge and roll dough into large egg shapes I normally get about 15-16 eggs. Roll smaller eggs to get more. Lay eggs on a tray that has been lined with paper towels. The paper towels will soak up some of the oils. Place eggs on tray with paper towels and place into the fridge to 2-3 hours. Remove eggs from fridge. Melt chocolate according to package directions. Dip each egg into the chocolate and tap off excess. Place eggs onto a tray lined with parchment paper. Top each egg with a sugar flower. Let chocolate eggs dry until Chocolate hardens.

MARSHMALLOW PEANUT BUTTER EASTER EGGS

Marshmallow Peanut Butter Easter Eggs image

If you are a peanut butter and chocolate lover you will love these homemade candies! The inside is fluffy, creamy, and full of peanut butter. We did put them in the freezer for a little while, so coating them in chocolate was a breeze. A platter of these at a springtime event or Easter will impress everyone. There were rumblings...

Provided by Deneece Gursky

Categories     Chocolate

Number Of Ingredients 7

3/4 c butter, softened
3 c powdered sugar
14 oz peanut butter
1 c marshmallow fluff
1 tsp vanilla extract
1/2 c salted peanuts, chopped (optional)
milk chocolate candy coating

Steps:

  • 1. Put the butter and 1 cup of powdered sugar in a bowl. Mix them on medium speed until the mixture is light and fluffy.
  • 2. Add the peanut butter, marshmallow fluff, 1/3 cup of the peanuts (if using), and vanilla. Mix on medium speed until well-blended.
  • 3. Gradually add the remaining powdered sugar, 1/2 cup at a time, until the candy is a workable texture: not too sticky and easy to handle. If necessary, add a little more powdered sugar to get it to a workable consistency.
  • 4. Roll a small amount of mixture in your hands until it is an egg shape.
  • 5. Put it on a baking sheet lined with aluminum foil and repeat with the remaining candy until all mixture is gone (about three dozen eggs). Put the eggs in the refrigerator to firm up for about an hour.
  • 6. Once firm, put the candy coating in a microwave-safe bowl and microwave in one-minute increments until melted, stirring after every minute to prevent overheating. When the coating is melted, dip the eggs in the coating and return them to the foil-lined sheet.
  • 7. While the eggs are still wet, sprinkle the tops with the remaining chopped peanuts (if desired). Refrigerate for 30 minutes to set the coating. Store in an airtight container for up to one week in the refrigerator. When ready to eat bring to room temperature (they taste better this way).
  • 8. HINTS: eggs may be frozen for easier handling. Only remove a few eggs from the fridge at a time so they don't thaw when trying to work with them.

  • Cream butter, sugar and peanut butter until well combined. Add in vanilla. Sprinkle flour and salt on top of mixture, then stir until incorporated. Stir in Reese's Pieces.
  • Turn dough onto a piece of parchment paper (or wax paper) and fold paper over so that it covers the top of the dough. Roll dough out until about 1/2" thick. Use a small Easter Egg cookie cutter to cut eggs out of the dough, setting eggs on a parchment covered baking pan. Roll dough again as needed, until all dough has been shaped into eggs. (I have this 18-piece Wilton Spring cookie cutter set- I love it and that's where I got my 2 1/2" egg cookie cutter from.)
  • Melt the chocolate, separating 2-3 TBSP of each, white and dark melting chocolate into small bags with the corners cut, for drizzling. I love using Chocoley Dipping & Coating Chocolate because it’s super easy to use and it tastes fantastic. (not like wax!) The trick to melting chocolate in the microwave is to go slowly and stir gently- and just before you feel like it's completely melted, take it out of the microwave and let it finish melting in the warm bowl. This time I used the large tubs of Chocoley Dipping chocolate, which are so handy! I melted them for 2 minutes, then stirred gently and warmed for another 30 seconds, then they were ready. I can re-use the tubs and bonus- no having to wash dishes!

  • Step 1: In a large bowl, mix 2 jars (12.5 ounces each) creamy peanut butter, 4 cups confectioners' sugar and 1/4 pound (8 tablespoons) butter. The batter should be creamy, but thick. If not thick enough, gradually add a little more confectioners' sugar. This batter must be refrigerated for at least 2 hours before working with it, and preferably a day ahead.
  • Step 2: Once the batter is chilled, take small amounts out of the fridge, and roll into small balls and shape into eggs. Store the eggs in a plastic container in layers that are separated by waxed paper. Freeze. When eggs are completely frozen, take a few out at a time to dip into chocolate.
  • Step 3: To melt the chocolate, place 1 cup chocolate wafers into a small bowl (glass, not plastic) with 1 teaspoon vegetable oil. The oil adds a little shine to the chocolate. Melt in the microwave slowly in 45-second increments, until completely melted. Dip frozen eggs, a few at a time, into the chocolate.
  • Step 4: After dipping, drizzle the eggs with melted peanut butter wafers (melted in the same manner as the chocolate). Let cool on a waxed-paper-lined cookie sheet in a cool place. The chocolate should set almost immediately if the eggs were frozen before dipping. Store in plastic containers either in the refrigerator or in the freezer until ready to use.
