PEANUT BUTTER PUFFS
These are a different twist on peanut butter cookies; easy and very good!

- 1. Beat egg whites with salt until soft peaks form. Gradually add sugar until stiff peaks form. Stir in peanut butter. Drop from teaspoonful one inch apart onto ungreased cookie sheet. Bake at 325 degrees for 15 minutes or until lightly browned. Cool before removing from cookie sheet. Makes four dozen.

Steps:
- Combine ground roasted peanuts, sesame seeds, peanut butter, salt and sugar in a mixing bowl. Stir well then refrigerate.
- Cut pastry into 2'' or 2-1/2'' circles.
- To each circle add 1 teaspoon of filling; fold into half and pinch the sides to enclose the filling.
- Repeat until all ingredients are used up.
- Deep-fry the peanut puffs in oil over medium heat until the pastry is golden.
- Dish out and place on crushed kitchen paper to drain the oil.
- When puffs are completely cool store in air-tight containers.

- Grease a square or round shallow tin (approximately 7in (17.5cm) in diameter). Put the biscuits in a deep bowl or a polythene bag and crush them not too finely with a rolling pin or wooden spoon. Melt the butter, sugar and syrup in a saucepan over a low heat, stirring well, until the butter is melted and the sugar has dissolved. Remove from the heat, and stir in the peanut butter. Mix in the biscuits, stir well. Press into the greased tin, and leave in the fridge or a cool place until set (1/2-1 hour according to temperature). Cut into squares or fingers.

- To make the cereal take 1/2 tsp size portions and roll into balls. You can go however big or small as you'd like but I like this size for the cereal as it will expand in the oven.
- Bake for 10-12 minutes or until golden on the edges. Remove from oven and let cool completely before adding to milk. I suggest waiting a few hours or overnight before adding them to a bowl of milk. You can enjoy them right away however as cookies.
