EASY PEANUT CLUSTERS

Easy Peanut Clusters image

This candy is a must for gifts, parties, or special occasions, especially if your time is limited. NOTE: The butterscotch chips will NOT melt. When they are soft, they look shiney. Do not overcook, as the chocolate will burn. You may use more peanuts if desired. I usually throw in more to make sure the last pieces have some nuts in them.

Time 10m

Yield 24 candies (approx)

Number Of Ingredients 3

1 (6 ounce) package NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels (1 cup) or 1 (6 ounce) package milk chocolate chips (1 cup)
1 (12 ounce) package butterscotch chips
1 (6 ounce) can salted peanuts (1 - 1 1/2 cups)

Steps:

  • Microwave chocolate and butterscotch chips in a 2 quart glass dish for 5-6 minutes on 60% power, or until melted.
  • Watch carefully!
  • (They don't actually melt, but look very shiny).
  • Add peanuts and mix well.
  • Drop by tablespoons on waxed paper.
  • Cool in refrigerator.
  • Store in covered container in refrigerator.
  • I have used different chocolate chips other than Toll House, and they do not work well.

  • Place the lid on a slow cooker. Cook on LOW for about 1.5 hours. This timing will depend on your slow cooker. STIR OFTEN. This will burn if left too long since it's real chocolate.
  • Turn off the slow cooker after the chocolate has completely melted. Remove the insert out of the base onto pot holders.
  • Line 3 baking sheets with parchment or wax paper. Scoop the mixture onto cookie sheets on the lined baking sheets. I use a medium-sized cookie scoop, though you can use 2 tablespoons, use one to scoop and one to scrape the mixture onto the pans. Flatten the mixture into a flat cookie shape.

  • Add almond bark followed by semi-sweet chocolate chips to slow cooker. Cover the top of the slow cooker with a kitchen towel or paper towels before adding the lid. This will catch condensation that can drip onto the chocolate when you lift the lid to stir which can cause the chocolate to seize.
  • Melt chocolate on LOW for 1 1/2-2 hours, stirring every 20 minutes, until completely melted. Add German chocolate and stir until completely melted (this will temper the chocolate). Add all of the peanuts and stir until evenly coated.
  • Line your counter with a long row of parchment paper OR if gift giving, line with mini cupcake liners. Drop peanuts by the tablespoon onto parchment/liners. Sprinkle with sea salt if desired but DON'T wait until all the chocolate clusters are dropped before sprinkling with sea salt or the first few will have already hardened. Allow to set completely, approximately 45-60 minutes.
