1/2 cup natural creamy peanut butter
1/2 cup warm water
1/4 cup fresh lime juice (from 2 limes)
1 tablespoon soy sauce
4 teaspoons sugar
1/4 cup chopped roasted peanuts

Steps:

  • In a medium bowl, whisk together peanut butter and water until smooth. Whisk in lime juice, soy sauce, and sugar. Sprinkle peanuts over sauce just before serving.

1 cup creamy peanut butter

Steps:

  • In a small bowl, beat the first five ingredients until blended. Stir in peanuts. Serve with apple slices. Refrigerate leftovers.

1/4 cup red wine vinegar
1/4 cup soy sauce
1/4 cup fresh lemon juice
4 garlic cloves, minced
10 sprigs fresh cilantro leaves, finely chopped
2 teaspoons crushed red pepper flakes
2 teaspoons minced fresh gingerroot

Steps:

  • In a food processor, thoroughly blend peanut butter, peanut oil, red wine vinegar, soy sauce, and lemon juice.
  • Mix in garlic, cilantro, red pepper flakes, and ginger.
  • Process until smooth.
  • Cover, and refrigerate until serving.

1 one-pound package of thick Chinese rice noodles
3/4 cup roasted unsalted peanuts
2 small shallots
2 cloves garlic
4 tablespoons fresh lime juice
12 tablespoons unsweetened coconut milk
2 teaspoons sugar
1 teaspoon soy sauce
1/2 teaspoon ground cumin
1/2 teaspoon Chinese chili sauce
1/4 teaspoon turmeric
1 cup hot water
1/2 cup cilantro leaves

Steps:

  • Cook noodles according to package directions until al dente, and drain.
  • While noodles are cooking, make the sauce. Crush peanuts in food processor. Squeeze juice from lime. Peel and dice the shallots and garlic.
  • Put four tablespoons of the crushed peanuts in a saucepan with two tablespoons of the lime juice, shallots, garlic, coconut milk, sugar, soy sauce, cumin, chili sauce and turmeric. Stir, cook for one minute, then pour into bowl, add remaining lime juice and hot water, and mix well.
  • Pour sauce over noodles, toss, and garnish with cilantro and remaining peanuts at the table.

Recipe states that these are tasty Southeast Asian-inspired shrimp that make an unusual hors d'oeuvre. Serve the sauce in individual pots when serving as a main course. Goes well with Basmati or jasmine rice. There is a marination of 30 minutes to 8 hours not included in the time.

2 lbs raw shrimp, medium-large, peeled
2 cups fresh cilantro stems, lightly packed
2 tablespoons fresh lime juice
2 tablespoons olive oil
1/2 teaspoon salt
1/2 cup chunky peanut butter
1 teaspoon sugar
1/2 teaspoon curry powder
2 tablespoons fresh lime juice
2 tablespoons light soy sauce
1 -2 tablespoon water
1/8 teaspoon cayenne pepper

Steps:

  • Put shrimp in a bowl.
  • In a blender puree the cilantro, lime juice, oil and salt and stir it into the shrimp.
  • Cover the bowl and let it marinate in the refrigerator for at least 30 minutes up to 8 hours.
  • In a small bowl whisk together the ingrdients for the sauce, adding enough water to reach the consistency of a thin mayonnaise.
  • Preheat the broiler, with the oven rack set on the top level.
  • Spread the shrimp in a single layer in a large jelly roll pan and broil the shrimp for about 5 minutes, turning them once, until they are cooked through.
  • Serve the shrimp with the peanut sauce.
  • Note: Alternatively the shrimp can be threaded onto skewers and grilled on a preheated oiled grill for the same amount of time.
