PEANUT CHOCOLATE WHIRLS (COOKIES)
These were a must for Christmas every year when I was growing up. By the time I got to be 10 I was making them myself.

Steps:
- 1. In a mixing bowl, cream shortening, peanut butter and sugar. Add egg, milk and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture. Cover and refrigerate for 1 hour or more, until easy to handle. Turn onto a lightly floured surface; roll into a 16 by 12 inch rectangle.
- 2. Melt chocolate chips; cool slightly. Spread over dough to within 1/2 inch of edges. Tightly roll up jelly-roll style, starting with a long side. Wrap in plastic wrap. Refrigerate for 30 minutes. Unwrap and cut into 1/4 inch thick slices. Place 1 inch apart on ungreased baking sheets. Bake at 350 degrees for 8-10 minutes or until lightly browned. Remove to wire racks to cool. Do NOT over-bake. These should not be hard cookies.
- 3. Refrigerating dough well is the key to making these cookies. If they are too soft (because it is warm) the dough will not hold up. Work quickly once dough is removed from the refrigerator.

Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. , Cover and refrigerate for 1 hour or until easy to handle. Turn onto a lightly floured surface; roll into a 16x12-in. rectangle., In a microwave, melt chocolate chips; stir until smooth. Cool slightly. Spread over dough to within 1/2 in. of edges. Tightly roll up jelly-roll style, starting with a short side. Wrap in plastic. Refrigerate for up to 30 minutes., Unwrap and cut into 1/4-in. slices with a serrated knife. Place 1 in. apart on ungreased baking sheets. Bake at 350° for 8-10 minutes or until lightly browned. Remove to wire racks to cool.

- Place in the fridge for 15-20 mins until the chocolate is firm but is still soft enough to roll. Check every 5 mins. If you let it firm up too much put somewhere warm for 5 mins.
- Mix together the peanut butter and sweetener. Add the right amount of sweetener that suits you, I usually add 4 tbsp of maple syrup but you may need less depending on the type of sweetener and butter you are using.

- Cream the butter and sugars together with a hand or stand mixer fitted with a paddle attachment on medium speed until light and fluffy. Scrape down the sides and bottom as needed. Beat in the egg and vanilla until combined, scraping down the sides as needed. In a separate bowl, combine the flour, cocoa powder, baking soda, and salt. Slowly mix it into the wet ingredients. The dough will be very thick. With a spoon or rubber spatula, mix in the milk and then fold in the chocolate chips.
- Cream the butter and sugars together with a hand or stand mixer on medium speed until light and fluffy. Scrape down the sides and bottom as needed. Mix in the peanut butter, egg, and vanilla (in that order). Scrape down the sides as needed. Slowly mix in the baking soda, flour, and salt. Do not overmix. Fold in the chocolate chips.
- Preheat oven to 350°F (177°C). Line cookie sheet with silicone baking mat or parchment paper. Measure 2 Tablespoons of peanut butter cookie dough. Roll into a ball. Take 2 Tablespoons of chocolate cookie dough. Roll into a ball. Smoosh the two balls together and roll them into 1 large ball. Repeat for each cookie. The chocolate cookie dough will get onto your hands, so wash/wipe them after you roll each cookie. It is important the chocolate cookie dough is chilled or else it will be even more messy.

- With a hand mixer, beat the butter and sugar until light and fluffy. Add in the flour and cornstarch and mix in until completely combined.
- Fit a piping bag with a large star nozzle (something along these lines), then fill it with the dough. Pipe out the cookies into whatever shapes and designs you would like, then bake for 12-15 minutes, or until the edges of the cookies are barely beginning to turn golden brown. Remove the cookies from the oven, place on a cooling rack and cool completely.
- Once the cookies have cooled, melt the dark chocolate over a double boiler or in the microwave at 10-15 second intervals, stirring between each to prevent them from burning. Once it is all melted and smooth, dip the cookies in it at a diagonal and allow any excess chocolate to drip off. Handle the cookies carefully, as they are somewhat delicate. Place them on a lined baking sheet, then put them in the fridge to allow the chocolate to harden.
