1 tsp. baking soda
1/2 tsp. kosher salt
1/4 c. unsalted butter, melted
1 c. granulated sugar
1 large egg plus 1 egg yolk
1/2 c. creamy peanut butter
1/4 c. sour cream
1 tsp. pure vanilla extract
3 ripe bananas, mashed
1/2 c. semi-sweet chocolate chips
1/2 c. peanut butter chips
6 slices bacon, cooked and chopped
For the peanut butter glaze
1/2 c. peanut butter, melted
1 tbsp. powdered sugar
pinch of salt

Steps:

  • Preheat oven to 350º.
  • Line a loaf pan with parchment paper and grease with cooking spray. In a large bowl, whisk together flour, baking soda and salt. Set aside.
  • In another large bowl, mix together butter, sugar, egg and egg yolk, peanut butter, sour cream and vanilla. Add mashed bananas and stir until combined.
  • Gradually add dry ingredients to wet ingredients until just combined. Fold in chocolate chips, peanut butter chips, and most of the bacon (reserve some for topping) and transfer to prepared loaf pan.
  • Bake until a toothpick comes out clean, about 1 hour. Let cool 10 minutes in pan, then turn out onto a cooling rack to cool completely.
  • Make glaze: Whisk together melted peanut butter, powdered sugar and salt. Drizzle over cooled banana bread and sprinkle with remaining bacon bits.

1/2 cup butter, softened
1 package (8 ounces) cream cheese, softened
1-1/4 cups sugar
2 eggs
1 cup mashed ripe bananas
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1-1/2 cups semisweet chocolate chips

Steps:

  • In a small bowl, stir the flour, brown sugar, peanut butter and cinnamon until crumbly; set aside. , In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine the flour, baking powder, baking soda and cinnamon; stir into creamed mixture just until moistened., Divide half of the batter between two greased 8x4-in. loaf pans; sprinkle with half of the topping. Top with chocolate chips. Repeat layers of batter and topping., Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean. 3/4 cup creamy or crunchy peanut butter
2 cups granulated sugar
4 large eggs
4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1/4 teaspoon salt
6 each ripe bananas (mashed)
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Grease two (2) 9×5-inch loaf pans.
  • In a large bowl, cream butter, peanut butter, and sugar until light and fluffy.
  • Add eggs, one at a time, beating well after each addition. Sift in flour, baking powder, baking soda, and salt; stir until dry ingredients are moistened. Fold in bananas.
  • Reserve 1/4 cup chocolate chips; set aside.
  • Gently fold the remaining chocolate chips into the banana bread batter.
  • Pour the batter into the prepared bread pans filling about 3/4 full.
