PEANUT CHICKEN SALAD



Peanut Chicken Salad image

Living in Alabama, where lots of peanuts are grown, I've learned to fix many different dishes using this locally raised crop. This is one of my family's favorites.

Number Of Ingredients 12

1/4 cup sugar
1/4 cup cider vinegar
1-1/2 teaspoons vegetable oil
1/2 teaspoon salt
Dash pepper
4 cups shredded lettuce
2 cups cubed cooked chicken
1 can (15 ounces) mandarin oranges, drained
1 celery rib, thinly sliced
1 green onion, thinly sliced
1 cup chow mein noodles
1/2 cup salted peanuts, toasted

Steps:

  • In a jar with a tight-fitting lid, combine the first five ingredients; shake well. In a serving bowl, combine the lettuce, chicken, oranges, celery and onion; stir in chow mein noodles and peanuts. Pour dressing over salad and toss to coat. Serve immediately.

1/4 cup rice wine vinegar
2 tablespoons smooth peanut butter
1 tablespoon chopped fresh ginger
2 teaspoons chipotle pepper puree
1 tablespoon soy sauce
1 tablespoon honey
2 teaspoons toasted sesame oil
1/2 cup canola oil
Salt and freshly ground pepper
1/2 head Napa cabbage, shredded
1/2 head romaine lettuce, shredded
2 carrots, shredded
1/4 pound snow peas, julienned
1/4 cup coarsely chopped fresh cilantro leaves
1/4 cup thinly sliced green onion
2 cups shredded rotisserie chicken
1/2 cup chopped roasted peanuts
1/4 cup chopped fresh mint leaves
Chili oil, optional
Grilled lime halves, for garnish

Steps:

  • Whisk together the vinegar, peanut butter, ginger, chipotle pepper puree, soy sauce, honey, sesame oil, and canola oil in a medium bowl. Season with salt and pepper, to taste. Combine cabbage, lettuce, carrots, snow peas, cilantro, and green onion in a large bowl. Add the dressing and toss to combine.
  • Transfer to a serving platter and top with the shredded chicken, chopped peanuts, and mint. Drizzle with chili oil, if desired. Garnish with grilled lime halves.

CHILLED PEANUT CHICKEN NOODLE SALAD



Chilled Peanut Chicken Noodle Salad image

Poaching chicken in a peanut butter broth brings nuttiness into each bite. The flavorful poaching liquid then becomes the base for the dressing in this light, easy noodle salad.

Kosher salt
1/2 cup smooth peanut butter
1 large boneless, skinless chicken breast (about 12 ounces), sliced crosswise 1/4 inch thick
1/4 cup rice vinegar
2 tablespoons soy sauce
2 tablespoons Sriracha, or more as needed
4 scallions, thinly sliced (white and green parts)
6 ounces thin rice noodles (vermicelli)
1 romaine heart, thinly sliced (about 3 cups)
2 Persian cucumbers or 1 regular cucumber, thinly sliced (about 2 cups)
1 red bell pepper, thinly sliced
1 cup loosely packed roughly chopped fresh cilantro (from about 1 medium bunch)
Lime wedges, for serving

Steps:

  • START THE WATER: Bring a large pot of salted water to a boil.
  • POACH THE CHICKEN: Bring 1 1/2 cups water to a simmer in a medium skillet. Whisk in the peanut butter, then add the chicken. Cook over medium-low heat at a bare simmer until just cooked through, 3 to 5 minutes. Use a slotted spoon to transfer the chicken to a plate; continue to simmer the sauce until thickened and reduced by about half, about 5 minutes. Take off the heat and whisk in the vinegar, soy sauce, Sriracha, and scallions. Cool slightly.
  • COOK THE NOODLES: Add the rice noodles to the boiling water and cook until almost tender, about 3 minutes. Drain and rinse under cold water to cool. Drain the noodles very well, tossing with tongs to release as much water as possible. Snip the noodles with scissors a few times to cut the long strands.
  • TOSS THE SALAD: Toss the noodles with the romaine, cucumbers, bell pepper, half of the cilantro, and just enough dressing to coat. Season with salt. Divide among 4 bowls and top with the chicken. Drizzle the remaining dressing over the top and garnish with the remaining cilantro. Serve with lime wedges.

I haven't eaten meat for the past 10 years, but when I did this was one of my favorite salads. It works great with leftover fried chicken from KFC night...just peel the skin off and use the white meat. NOTE: preparation time does not include chilling time of 24 hours.

3/4 cup soy sauce
3/4 cup water
1/4 teaspoon chili pepper flakes
1 tablespoon lemon juice
1/4 cup brown sugar
6 garlic cloves, chopped
3/4 cup creamy peanut butter
1/4 chopped peanuts
3 kg cooked boneless chicken
2 (8 ounce) cans chopped pineapple, drained
1 (8 ounce) can water chestnuts, drained well

Steps:

  • in a large pan, heat soy sauce, water, sugar, lemon juice, garlic, pepper, heat over low heat while stirring for 5 minutes.
  • Add peanut butter and peanuts, cook over low heat until mixture is smooth.
  • Brush chicken breasts with sauce generously and bake at 400°F for 30 minutes.
  • Cool the chicken, and chop into small bite size pieces.
  • Mix chicken, pineapple and water chestnuts in large bowl.
  • Pour remaining sauce over ingredients, and mix well.
  • Chill over night, and serve.
