1 c butter, soft
1/2 c sugar
2 c all purpose flour
1/4 tsp baking powder
1/2 tsp salt
1/2 tsp pure vanilla extract
1-2 Tbsp milk
topping ingredients below
3 c shredded coconut
12 oz chewy caramels
1/4 tsp salt
3 Tbsp milk
8 oz dark or semi-sweet chocolate (chocolate chips are ok)

Steps:

  • 1. Preheat Oven to 350 degrees
  • 2. In a large mixing bowl, cream together butter and sugar.
  • 3. Mix in flour, baking powder and salt at a low speed, followed by the vanilla and milk, adding in the milk as needed to make the dough come together without being sticky (it's possible you might not need to add milk at all). The dough should come together into a soft, not-too-sticky ball. Add in a bit of extra flour if your dough is very sticky.
  • 4. Roll the dough (working in two or three batches) out between pieces of wax paper to about 1/4-inch thickness (or slightly less) and use a 1 1/2-inch cookie cutter to make rounds. Place on a parchment lined baking sheet and use a knife, or the end of a wide straw, to cut a smaller center hole. Repeat with remaining dough.
  • 5. Alternatively, use scant tablespoons of dough and press into an even layer in a mini donut pan to form the rounds. Bake cookies for 10-12 minutes, until bottoms are lightly browned and cookies are set. If using a mini donut pan, bake for only about 10 minutes, until edges are light gold.
  • 6. Cool for a few minutes on the baking sheet then transfer to a wire rack to cool completely.
  • 7. DIRECTIONS FOR TOPPING
  • 8. Preheat oven to 300. Spread coconut evenly on a parchment-lined baking sheet (preferably one with sides) and toast 20 minutes, stirring every 5 minutes, until coconut is golden. Cool on baking sheet, stirring occasionally. Set aside.
  • 9. Unwrap the caramels and place in a large microwave-safe bowl with milk and salt. Cook on high for 3-4 minutes, stopping to stir a few times to help the caramel melt. When smooth, fold in toasted coconut with a spatula. Using the spatula or a small offset spatula, spread topping on cooled cookies, using about 2-3 tsp per cookie. Reheat caramel for a few seconds in the microwave if it gets too firm to work with.
  • 10. While topping sets up, melt chocolate in a small bowl. Heat on high in the microwave in 45 second intervals, stirring thoroughly to prevent scorching. Dip the base of each cookie into the chocolate and place on a clean piece of parchment paper. Transfer all remaining chocolate (or melt a bit of additional chocolate, if necessary) into a piping bag or a ziplock bag with the corner snipped off and drizzle finished cookies with chocolate. Let chocolate set completely before storing in an airtight container.

2 cups salted peanuts
2 cups crisp rice cereal
2 cups miniature marshmallows
1 pound white candy coating, coarsely chopped
3 tablespoons creamy peanut butter

Steps:

  • In a large bowl, combine the popcorn, peanuts, cereal and marshmallows. In a microwave-safe dish, melt candy coating and peanut butter; stir until smooth. Pour over popcorn mixture; toss to coat. , Spread mixture onto waxed paper-lined baking sheets; refrigerate for 15 minutes or until set. Break into pieces. Store in an airtight container in the refrigerator.

1 package chocolate cake mix (regular size)
1/2 cup butter, melted
1/4 cup milk
1 egg
1 cup chopped peanuts, divided
1 package (8 ounces) cream cheese, softened
1 cup peanut butter
1 cup confectioners' sugar
1 can (14 ounces) sweetened condensed milk
1-1/2 teaspoons vanilla extract
1 carton (16 ounces) frozen whipped topping, thawed, divided
1/2 cup semisweet chocolate chips
4-1/2 teaspoons butter
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the cake mix, butter, milk and egg until well blended. Stir in 3/4 cup of peanuts. Spread into a greased 13-in. x 9-in. baking pan. , Bake at 350° for 30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , In a large bowl, beat the cream cheese, peanut butter, confectioners' sugar, condensed milk and vanilla until smooth. Fold in 3 cups whipped topping. Spread over the crust; top with the remaining whipped topping and peanuts., In a microwave melt chocolate chips and butter; stir until smooth. Stir in vanilla until smooth; drizzle over the dessert. Refrigerate for 2-3 hours before serving.

  • Start by making the caramel sauce so it has enough time to cool. Gather all your ingredients and keep them nearby for immediate use.
  • Bring sugar and water to a boil in medium heavy-bottomed saucepan over medium-high heat. Cover the saucepan for about 1 minute; the condensation will wash down any sugar crystals that might've gathered on the sides, which will reduce the chance of crystallization. Cook, without stirring, swirling saucepan and brushing the sides of the pan occasionally with water, until mixture is amber-colored.
  • Remove the saucepan from the heat and immediately whisk in the butter until melted. Carefully pour in the cream and salt; it will bubble vigorously, then whisk well to combine. Return the saucepan to the heat and continue to whisk until the mixture is completely smooth and hard caramel clumps have dissolved. Transfer caramel to a bowl and allow to cool completely, at room temperature or in the fridge, before using.
  • In a medium (preferably chilled) bowl, combine the heavy whipping and 1/4 cup (29g) of the powdered sugar. Using an electric mixer fitted with the whisk attachment, beat together on medium-high speed until stiff peaks form. Set the whipped cream aside.

  • In a small sauce pan, add all of the ingredients and turn the heat to medium. Whisk well as it warms up and the ingredients become smooth. Once it comes to a boil, whisk continuously for about a minute or so until it starts to thicken up. That's it! It happens quickly. If using almond butter, it takes a tad longer to thicken up. Keep in mind, the longer you cook it, the thicker it will get. It will thicken up a ton as it cools as well. Remove from the heat and let it slightly cool before serving. If using on pancakes or you want to thin it out, add a little water to desired thickness.
  • Note: this caramel will thicken even more as it sits, so just gently reheat it or add some water to thin it out some, if desired. I added water to mine the next day.
  • To make Caramel Popcorn: Just stir the hot caramel all over popped popcorn and stir around and let cool a couple of minutes.
