SOFT PEANUT BUTTER COOKIES
This is my mother-in-law's recipe.She was always baking and this is one of my favorite recipes she had.

Steps:
- Cream butter, peanut butter and both sugars together.
- Add eggs, one at a time, beating well.
- Add baking soda, powder and vanilla.
- Stir in flour.
- Roll into balls, roll in sugar. Flatten cookies, using a fork, in a criss-cross pattern.
- Bake on ungreased cookie sheet at 350 degrees for 6-7 minutes or adjust to suit your oven and size of cookies!

PEANUT BLOSSOM COOKIES
A holiday cookie exchange favorite! Peanut butter cookies topped with a chocolate candy piece are always a hit.

Steps:
- Combine 1/2 cup sugar, brown sugar, butter and peanut butter in bowl. Beat at medium speed until light and fluffy. Add egg, vanilla and salt; continue beating until well mixed. Add flour and baking soda; beat at low speed, scraping bowl often, until well mixed. Cover with plastic food wrap; refrigerate 30 minutes.
- Heat oven to 375°F.
- Shape dough into 1 1/4-inch balls. Roll balls in 1/4 cup sugar. Place 2 inches apart onto ungreased cookie sheets.
- Bake 8-10 minutes or until very lightly golden brown. Immediately press 1 chocolate candy piece in center of each cookie. Remove to cooling racks.

- Preheat oven to 375º.
- Mix first six ingredients.
- Add the rest of the ingredients.
- Mix well.
- Roll into balls and press down with a fork dipped in sugar or flour.
- Bake for 10-12 minutes on ungreased cookie sheet (I usually grease my cookie sheet anyway). Ovens vary so your baking time may be less. Just keep an eye on them.

- Preheat oven to 350 degrees. Line a baking sheet with parchment paper; set aside.

- Preheat oven to 350°
- In a stand mixer with the paddle attachment or white a hand mixer, cream the butter, peanut butter, white sugar, and brown sugar, until they are fluffy and completely combined.
- Mix in the egg and vanilla extract.
- In a separate bowl sift together the flour, salt, and baking soda.
- Add the flour mixture the the butter mixture a little at a time until it is fully combined. NOTE: do not over mix at this point, or you will have tough cookies!
- Roll the dough into balls a little smaller than the size of a golf ball, it will be 1 heaping tablespoon of dough per cookie. Roll the dough balls in the sugar.Place on a parchment or silpat lined baking sheet.
- Bake for 10 minutes. Remove from the oven and lightly press 1 star in the middle of each cookie. Place back in the oven for an additional 2 1/2 minutes. (NOTE: You may have to bake the cookies in 2 or 3 batches.)
- Cool the cookies on a cooling rack and then serve!
